19岁的时候当上空姐，第一次去台北。住在寰亚饭店，自然而然的就会跑到楼下的食阁解决三餐，第一次吃老张卤肉饭，第一次吃肉松面包，第一次吃铁板烧，第一次感受台湾的人土风情。结交了很多当地的朋友，都是大哥哥和姐姐们，还认识了一位老奶奶一直想撮合我和他的孙子。一切都是那么的有趣新奇，年轻真好。现在只能回味往事，寄情于佳肴。
注：如果觉得五花肉太油腻，可以选择用肉碎来替代，自己煮的，自己吃，喜欢就好。
卤肉饭
1. 10克炸葱油，2min/100°C/SP
2. 无需开盖，接着按20min/120°C/SP1，拿掉量杯，慢慢倒进已切好的500克五花肉
3. 根据个人的喜好，倒掉多余的油。
4. 50克炸葱， 酱油: - 50克生抽，15克老抽，20克米酒，5克五香粉，20克黑糖，20克冰糖，1min/100°C/SP
5. 150水，20min/100°C /SP1
6. 如果想要酱料更浓稠，5min/Varoma/RVSP1
I missed Taiwan, the food, the friends, the shopping and my memories. To comfort myself, I have decided to cook my version of Taiwanese Braised Pork. If this is too fattening for you, you can consider substituting it with minced pork, either half/half or all, your choice.
Braised Pork Belly
1. 10g Fried Shallot Oil, 2min/100°C/SP
2. Without taking out the cover, continue to press 20min/120°C/SP1, while cooking, take away measuring cup and add 500g pork belly through the hole.
3. Pour away excessive oil according to your preference.
4. Add 50g fried shallots, sauce: - 50g soy sauce, 15g dark sauce, 20g rice wine, 5g 5 spice powder, 20g molasses, 20g rock sugar, 1min/100°C/SP
5. 150g water, 20min/100°C/SP1
Optional
If you like your gravy to be thicker, another 5min/Varoma/RVSP1
