材料
粥底:
1.豬骨湯慢火煲3小時
2.米200克
[米洗淨.加油14克. 1個皮蛋清. 撈勻. 醃 1 小時].
3. 豬骨湯 5280 ml
4. 腐皮 140 克
骨湯煮滾落米.腐皮慢火煲1.5小時
5.粥配料:
(全部切成小條)
魷魚乾(浸泡)
幹豬皮(浸泡)
魚餅(煎)
魚片新鮮
叉燒
豬肚(預煮)
6.放粥面:
炒香花生
炸餛飩皮
蔥花
香菜切碎
生菜絲
Ingredients: Sampan Congee
Basic congee :
1.pork bone broth Simmer 3 hours
2.Rice 200 g
[Cleaned Rice. Add oil 14 g. 1 preserved egg white. Mix well. Marinate 1 hour].
3. Pork bone Broth 5280 ml
4. Bean curd skin 140 g
Broth boiling adds Rice & bean curd skin simmer 1.5 hours.
5. Congee ingredients:
(All cut in small Strips)
Dried Squid(soak)
Dried Pork skin(soak)
Fish cake(pan-fried)
Fish fillet fresh
Char siu
Pork Stomach(precooked)
6.Topping ingredients:
Roasted peanut
Fried wonton skin
Scallion chopped
Cilantro chopped
Iceberg letter Shredded

師傅近期推出懷舊菜式,一直是師傅忠實粉絲,原因是可以學習好多懷舊傳統飲食菜式,現在酒樓已經越來越供應,就算有材料也減少很多,只得虛名.師傅一向教導菜式,材料跟足傳統方式.現在煑食文化,要快同簡單.但是口福是自己的,我一定支持傳統飲食菜式.謝謝🙏師傅.

Annie !土尤(尤鱼干浸泡而成,每家中超都有卖,通常摆在咸鱼虾米一齐的

ck !多谢您!煮粥期间不要搞动(如果搞动一次便要不断搞动.不然会粘底)亦会不绵滑的。
