Taking it easy and taking it slow is my way to cheer me up when a day is going tough.
My video today highlights the importance of finding quiet moments and rejuvenation in the small moments of my daily life. When we are immersed in solitude or experiencing loneliness, it is in the simplicity and beauty of everyday experiences that we can rediscover hope, replenish love in our spirits, and find inner for our hearts. Here is the Banana Muffin Recipe in case one of you would be interested.
170g / 1 Cup Whole wheat flour ( I used here Emser Flour)
60g / 1/3 Coconut Sugar or Palm sugar (if you like it sweeter you can add 1/2 cup instead)
1 Teaspoon Baking powder
1/4 Teaspoon Baking soda
1/4 Teaspoon Salt (I have added pink Himalayan salt)
350g / 1+1/4 cup Mashed Banana
4 Tablespoon Olive oil
1 Tablespoon Ground Flaxseed
3 Tablespoon Water
1 Tablespoon White Vinegar
1 Tablespoon Vanilla extract
[Note for Non-Vegans: 1 Tbsp Ground Flaxseed + 3 Tbsp Water = 1 egg replacement]
Optional Toppings:
Walnuts - chopped or nuts/seeds of choiceChocolate Chips

Thank you for the beautiful video my friend, I think that the difficult part of love is that it walks hand in hand with sadness. It’s good that you spent such a beautiful time with your son that sadness has now had to visit you but you are taking care to not let the sadness overwhelm you. I would love to see more of your plant based meals, I actually have the River Cottage Veg book but do not look at it often enough. You have inspired me again today! ❤ Thank you also for introducing me to Khalil Gibran, his words are very wise and comforting. With love from the U.K. 🇬🇧💕

I love his perspectives of life and how he expresses those in words of wisdom. "Sadness is but a wall between two gardens" he says🙂 Yes, I've been browsing my Veggie cookbooks including both books from the River Cottage. I sometimes swap one or two ingredients from his recipes and it's good. I like the combination and the modern touch to it. Don't worry, I'm in this journey of cleansing my gut in the hope of extending a healthy good life LOL! 😀. I'm very happy to know that I've inspired you today🥰. ❤ I feel "nostalgia" here and there (from the Greek: "pain of returning"), this feeling of melancholy and sadness caused by the desire to return to a distant place where one has lived, or by the lack of an absent or lost person, or of a finished situation that one would like to relive, a feeling that I know very well.. one is surprised at how much our mind lives on memories rather than novelties. After all, without memories we wouldn't have a past and it would be like not having lived. We are the memories. I think it's also good to give us a moment of pure nostalgia... as SHAKESPEARE said after all, "Nostalgia is the memory of things past."..❤

Hello Paola, its beautiful to read those lines you wrote. I felt a pinch. A good one though. I can feel those pictures running in my head right now. I agree how you described our minds that lives on memories. But I try to linger in the good ones. Nostalgia dances with our heartstrings, tugging gently yet persistently. Your description felt like an embrace of distant melodies or whispers of forgotten conversations with my son. I felt both the beauty and the ache of remembrance. oh..yes memories... In our delicate dance of nostalgia, i find a lesson-a reminder that life is an ever-flowing river, forever moving forward. It urges me to hold memories gently, for they are fragile treasures, delicate as butterfly wings. Wishing you a lovely and peaceful Sunday across the miles🙋🏻‍♀️❤️ Much Love

Hello Tammy, nice to hear from you.. Specifically on my video, I was looking and planning from the Veggie series of the River Cottage Books and several from Jamie Oliver’s too. I was trying to find recipes for the summer months 😊. I’ll try to create some healthy ones in my next videos❤. I’ve been going through the healthy routes. Lots of Love 💕 😊

@@meetarlesa I've only been looking on Pinterest. The foods that you've made look good. My husband has to have meat. I've been cooking more chicken, shrimp and turkey. We eat a lot of fruit. We love vegetables too.

@@tammywhatley910 somehow men are really carnivore. I too tend to have the same preference like you on protein and choices of getting fiber. I’m on Instagram so I hardly get to my Pinterest account. I follow a few to get inspiration and adjust the recipes myself. It’s actually good to limit meat in our food intake because I read it’s better choice so we won’t get an iron overload in our system. A must watch for our gut and liver. I keep an eye on Glucose too having a vinegar before each meal. I keep those in mind and lastly I think, the key is moderation. 🥰
