Quick tip- don't reduce food in just 1 pot when doing bulk canning. It is worth the extra dishes to divide up the sauce into multiple pots and cook. It greatly reduces time needed to thicken sauce because the the heat distribution works better in small batches.

You have enough energy for 10 people! I love being in the kitchen but at 77 I’m finding it harder and harder. I’m grateful for the no knead bread recipe you posted the other day, I’ve made it twice already. It’s the easiest bread I’ve ever made! Just one little hint for you.. as you cook down tomato sauce or the ketchup for example, you should continually scrape the inner sides of the pot because the tomato concentrates there and adds a great deal of flavor to your product.

I agree with you 100%! Becky is one amazing young lady - hard working, sweet, loves people and loves her garden - my kind of people! I'm 70 and I also love her bread recipe....God bless that sweet family!

YESSSS, I love when you put in little timeskips to the future. It always gets me when someone mentions something to be done later and then forgets to put footage from the process and only shows the final products. I ALWAYS want to see the freeze-dried stuff turn to powder, it makes my brain happy. I think your channel is the only channel where I will sit and watch the entire time, no matter what my schedule looks like. It's my favorite show, better than watching the food network on tv.

Precious Becky, here in Scandinavia we often use apples or applesauce to thicken up the ketchup. It also adds both acidity and sweetness to the ketchup. You may try that trick, the next time you make ketchup. LOVE, LOVE, LOVE your videos, and I cannot wait to see the next one. I frequently use apple sauce instead of oil. sounds like adding to ketchup will work great. thanks for the info.

I simmered my ketchup this year for a full 24 hours to thicken! It is so beautifully rich and thick and I honestly loved spreading the work over two days. My house smelled amazing.

I also made ketchup this year, use frozen tomatoes and drained most of the water off before cooking the tomatoes, and still cooked it in my 18 quart toaster for 24 hours. 😅

I simmered my ketchup for 24 hours as well. Made it for the first time and had to let it simmer over a day. I leave it on low overnight and it worked just fine.

Becky, i think using the food mill is the reason the ketchup is so thin. It not only removes the seeds and peels but also removes the pulp so you were left with basically tomato juice. I just blanch and peel and core my tomatoes and cook them in the roaster for nice thick ketchup.

This was a GAME CHANGER for my ketchup this year. I first cooked (until soft) the tomatoes, ran them through the tomato press and then through a fine mesh strainer. It was so thick I had to add a bit of liquid back! Took me a few years but I finally made the best ketchup ever 😊

Wow Becky, you do it all! I was thinking about the reduction problem you were having with your ketchup. Perhaps if you reduce the amount you are trying the process ( you tripled the recipe and used a single pot) so a tripled batch use 3 different pots and you could increase the surface area for evaporation (reduction.) Just a thought. ☺️ So excited to see what other things you have in store for us!

Thought the same about 3 pots or an electric roaster or some slow cookers, but I've not made ketchup in a slow cooker.

Butternut squash was one of my baby's first foods that he absolutely loved. Not sure if anyone else has noticed but it is so completely adorable when one of your Aussies is either guarding you from the door into your kitchen or regularly coming in to check on you. Congratulations on the sale of your previous home. I'm sure leaving your garden for the last time was bittersweet. Take care and God bless.

I love how the dogs show up immediately when Becky opens the tomato paste jars. They certainly know the sound of a can opening.

I use an electric roaster to reduce my large tomato projects and let it simmer all night on low being careful that it doesn't burn. Also, I made a delicious butternut "pumpkin" pie from my canned squash, but you have to let it drain in a colander over a bowl to remove a lot of the liquid. You should probably do that for any dish you make with your canned squash.

One tip for when you can pumpkin or squash, after you have cubed it, blanch it in boiling water for 2 mins. This removes air from the veg, and allows more squash per jar, plus you dont get that thing where the veg all float to the top and liquid sits at the bottom. You can use the blanching liquid to fill your jars.

@@bluesoldierette I realize that everything she was working on in the video is done. In the video she said she would buy paste to thicken next time she made it. I also have a freeze dryer and am suggesting that next time she could use the powder instead of buying tomato paste.

Becky!!! I'M SO EXCITED to share this with you, but freeze dried tomatoes are AMAZE-BALLS in Tomato pie! I had trouble with too much moisture in my tomato pie. It always tasted awesome but was somewhat watery with fresh garden tomatoes. Half and half fresh tomatoes and freeze dried tomatoes is perfect. Or go really light on the rehydration and use all freeze dried tomatoes. You will be able to eat Garden Fresh tasting tomato pie all winter long. #LifeChanging Enjoy!!

Becky, The Kitchen Aid has a juicer attachment. It’s essentially a food mill. It even has a sauce setting and it works well!

Hey Becky! You could brown ground beef and then freeze dry it. Sloppy Joe mix + freeze dried ground beef + a bit of water to rinse out the jar = the ultimate ready to eat meal.

A good thing to try with the pepper corns is put them in a pan and toast them. It give them a good mild smoky flavor

I have a few tricks to getting Ketchup thicker. I also thought that reducing it was a waste. But I love thick ketchup. I freeze my tomatoes for ketchup, because when they thaw a lot of the juice separates from them. And I run them through the food mill before cooking. And I did add tomato paste to mine too! When my wooden spoon stands up alone in my ketchup it is ready for canning!

Hey Becky! Try opening both ends of the tomato paste cans. Then you can push everything out one end with a spoon (or just shake the can till the paste falls out!) Every last bit of tomato paste comes out and no need to scrape! 😁

I dehydrated my tomato peels and then blended them up and added them back to the sauce to thicken it. Worked like a charm

Girl, you have inspired me to just go for it in terms of expanding my garden and starting to can. I bought a cheap dehydrator off eBay and now I have my own dehydrated herbs. I’ve had some gardening successes and some gardening fails and even a groundhog situation to figure out, but the lesson learned in all your videos is to just go for it so I do!

To keep mole, voles, groundhogs out of your garden is to get the pinwheels that kids love and place them a few steps apart. It vibrates the ground and they hate it.

Fy Nyth - a tiny house channel where she & husband have moved to new bare land. She had a problem with a ground burrowing pest in her old garden and did the same in her new in case they were also there. She put a mesh wire hardware cloth down beneath the raised bed. The plant roots could go thru, but it was fine enough that the animal couldn't get up beyond it to the actual carrots and other plant parts. It was easy to see how it worked in the videos where she tore up the old garden and moved the mesh and cement blocks to the new location and set up again there. For this, you do have to use some sort of raised bed above the mesh and surrounded by something the animal can't burrow through. She used cement blocks around the bed area and it was deep enough for carrots and other things. Good luck!

Fantastic job! I’ve been there before… Where you are with the liquidy tomato base for the ketchup. What I’ve learned is that if I plan to use the food mill rather than removing the skins ahead of time, I really cannot cook the tomatoes down too much at all or what ends up happening is when it goes through the food mill, the tomato meat is too soft, and the food mill works more like a juicer than something that leaves you with a thicker tomato product.

Becky if you use the freeze dried tomato pulp along with some typ of spicy pepper, added while you’re cooking rice it make some really really great Spanish rice without having to use tomato sauce.

I’m a recent subscriber and I’m enjoying your channel a lot. I do not grow fresh veggies, since I’m retired and moved into 8th floor condo, but I do have a small hack that might be useful to you. To peel a whole garlic bulb quickly, cut whole bulb in half crosswise, so each clove gets cut at same time. Flip both halves over on board, cut side down, lay blade of chef knife flat on bulb half and give it a whack with your palm. Pick up bulb half and clove halves should fall right out. If that don’t work for you-you are holding your head in wrong position. 😂.

tomato power is my favorite thing ever! putting it in sauces to thicken things up is awesome and putting it on grilled cheese instead of slices of tomatoes has to be my favorite way to use it. tastes like fresh tomatoes, and doesn't get soggy!

I don't know if anybody has commented about this, but you can get an attachment for your kitchen aid to strain your tomatoes. The same attachment can be used to grind meat with a few alterations. I use it to make sandwich spread.

You can use dried tomato powder (skins) to make paste - just add water to powder to get consistence knowing the powder may take a bit to rehydrate well. It works really well!

Was excited to try your catchup recipe. I didn’t Iike the ball recipe. I had to half the recipe as I only had 12 pounds of tomatoes out of the garden. I cut the tomatoes in half and squeezed out as much seeds and juice before weighing them. Thought I could save time cooking them down. After sieving and seasoning, cooked them till evening and then poured them into my crockpot and put them on warm overnight. Turn the crockpot on high the next morning and boy did it do the job. I have to say nutmeg and cloves did the trick. After it was cooked down, I tasted it thought it needed another half a cup of vinegar. Ended up with 12 half pints. I don’t know what Portland ketchup tastes like but this recipe is now my favorite. Will be doing another batch when more tomatoes ripen. Thank you for writing out your recipe and showing me you could taste along the way and adjust the seasonings. Been canning forever, can’t believe I never thought of this. Oh I used tomato powder that I freeze dried last year instead of tomato paste, work great.

Becky, you can put your tomatoe juice mill at your kitchen sink. Put your pan in the sink to catch your juice. Another bowl in the sink to catch your pulp. Just set your juicer at an angle.

You can freeze tomatoes for use in recipes like ketchup. Then you drain off the liquid and make a huge shortcut to simmering down the pulp. Also, I re-watched the video, and I think that you may have added 2 extra cups of the vinegar. (?) Also, you could probably have boiled a smaller amount of the ketchup base at a time, which would have made the process of reduction perhaps go a bit more quickly. Everything looks delish. And that Sloppy Joe mixture is the bomb!

Becky, I think the problem with the ketchup reducing was because you doubled the recipe. When you boil any liquid the reduction comes from the surface of the kettle where the steam bubbles form. In order to reduce by half in 45 minutes, you needed to use 2 large pots. By adding paste you actually were changing ratio of liquid to acid and adding cost to the ketchup. It might’ve thickened faster by adding more sugar.

Love the videos. The reason you needed to add tomato paste to your ketchup, when you juiced your tomatoes you removed the pulp that would allow your sauce to thicken. I agree with a previous poster …cook the tomatoes and dip juice off. It will reduce cooking time and you can preserve the juice for drinking or soups. Also I get why the juicer…mainly to remove skin and seeds. You may just want to use the immersion blender or the one you used with the black pepper to smooth all that out.

Yet another very productive day preserving! I’m wondering, if a person has dried tomato powder, could it be used for thickening ketchup like you would a soup? I only have a dehydrator and I’m still figuring it out. I had a different one many years ago but it got dropped and broke so the hubby got rid of it.

Hi Becky, I’m a neighbor to the south (Eugene area). With paste tomatoes you are supposed to use the pulp because it doesn’t have many seeds. I would second the recommendation of freezing and partially thawing. I use a turkey baster to pull off the extra water and the skins slide off easily. A blender will take care of any seeds you have left.

It is ground burger with sauce eaten on a bun. Becky if you have precooked frozen or canned burger you have a meal in less then 30 minutes ☺️

There is a brand called Manwitch that is Sloppy Joe’s in a can that you add cooked ground beef to. It’s pretty good but I’m sure it doesn’t come close to as good as homemade, especially the way Becky made it!

@@paigedevine5586 It's an American "ragu" that, instead of being added to pasta or rice or potatoes, is cooked until thickened and served over a hearty bun as a very messy sandwich. Like many sauces--you can buy it canned or jarred and have a m'eh experience--or you can make it from scratch for a really wonderful meal. I personally like to make it from scratch, load it up with fresh veg like Becky, and cook it for hours just like I do my Bolognese...just very different flavor profile. :) And it freezes just great.

I made beautiful ketchup this year! Cheater tip: When the tomatoes are stewing down push a sieve down into the tomatoes and use a ladel to remove the juice that comes up, save that juice to drink, it's awesome! Then when it's all cooked and ready to can I used my emersion blender to whip it smooth. It turned out EXACTLY the consistency of hienz. PS, don't omit the cloves and I added a couple tablespoons of fish sauce to increase the umami!

Hi Becky, have you ever tried or considered just storing your butternut pumpkins in a cool dark dry space. You have to leave some of the stalk on. Ours keep for about 12 months. It would save all of that preserving. 😊💜

Hi Becky! I made ketchup this year too! My recipe used thermflo. It is a canning thickener, you can also use clear gel. They are the only canning safe thickeners (except tomato paste of course). My ketchup came came out so great😊 and you don’t have to boil it down as much. I only cooked mine down for an hour.

Becky, the Butternut squash will make excellent Baby food! It’s one of the first foods baby’s eat. If you freeze dry it ( even if you already canned it) you can take about 1/4 cup of the powder & rehydrate it to make a meal, when your baby starts eating vegetables. I think freeze dried vegetables would be an excellent idea as you can take a 1/4 cup in a plastic container with you anywhere you go & not worry about breaking a jar…or having strange ingredients from grocery store baby food….even if they do say organic blah blah…

With roma’s squeeze out excess juice with your hand first only adding flesh to the pot, really saves times on the cooking down time but does mean more time during the tomatoe processing time

Hey Becky! I make a Smoked Butternut Squash Bisque every winter that I use canned Butternut Squash in. It has the drained canned squash, roasted garlic, cayenne pepper, smoked Gouda cheese, chicken or veggie stock salt, pepper, marjoram and heavy cream. I don't have a recipe...I just make it from flavor memory. Rich and delicious...great with grilled cheese or a salad.

If you dehydrate or freeze dry the skin and seeds from those tomatoes you can add that to thicken all your recipes. It saves 12-24 hours of reducing and thickening your sauces. Oops- I spoke too soon.

We pc’d about half of our butternut squash from the summer garden and have the other half on the shelf. We also baked several in the oven and freeze dried that to have for future dishes/ideas. We planted more butternut squash in the fall garden and they’re as big as the summer crop already and not even close to being ripe yet! I guess they really like the cooler weather. 😄 I can’t wait to see how the ketchup turns out! We’re very picky about our ketchup and like the Heinz 57 brand … but I’d be willing to try a homemade canned version to test out! You work so hard all the time it tires me out to think about it and my 3 kids are grown and gone! You have inspired me to do a lot more than I ever have before and I’m looking forward to your new adventures! 😊

The liquid evaporates better with a large open area than a deep pan. I would use the your Nesco roaster to evaporate the liquid. Look like you made some great items for your pantry.

Pro-tip. You can do a quick vegetarian sloppy Joe by just opening a can or two of lentils and mixing with the sauce, heat it up and you’re done. :)

I use my roaster pan anytime I want to thicken sauces also. I put mine on 250 degrees and let it go. I haven’t had any problem with burning and it requires minimal interaction.

I have not made ketchup yet, I was hoping to this year but haven't been able to yet. However, for my tomato sauce, I take the the extra time to peel and core the tomatoes before cooking them. As they cook, I ladle off the juice and can it. Then I don't have to wait an unearthly amount of time for it to cook down, and we have tomato juice to either drink or use in recipes. Win/win for me! I don't have a food mill, so I leave the seeds, which is fine for our tomato sauce. I do put the tomatoes through a blender, though. 🙂 I am glad you are listening to your body and resting when you need to. I am looking forward to the conclusion of this canning project. 💚

Just a hint. I have seen a video of how Italian guys do Roma tomatoes for tomato paste. They squeeze all the seeds out of them that way it’s not so watery. Maybe try that next time 🤷‍♀️. I’ve been waiting for my pears to ripen so I can make pear elderberry jam. I think that’s what I’ll be doing tomorrow. 👍

If you open up both ends of your tomato paste, you can just push one of the end lids all the way through and the paste comes out with no waste.

Hi Becky! Regarding the electric tomato press you were talking about, you should look up the Kitchenaid strainer accessory. I used to use a manual tomato press, until I realized I had bought that attachment as part of a three attachments set. It works like a charm!

Hi Becky. Have you considered purchasing a large commercial stainless steel kitchen trolley for moving and/or using your heavy or bulky things? Putting a large bucket on it for running the food mill into for example, and shifting large pots of boiling stuff. Or taking into pantry and loading up with all the items/ingredients at once. Bonus use.. after baby is born allows you to stop what you're doing quickly to attend to them. I also use it for moving things in from car/garage, take it from room to room when house cleaning with assortment of baskets or containers of cleaning items and room to remove dirty or misplaced items. Bonus bonus use.. your child can sit on the bottom "shelf" while you are drifting around the house too 😃 Easy to wipe down and roll away for storing somewhere out of the way

I don't know if you will actually read this, Becky, but those Pur jars are honestly terrible and have a high fail rate. I am in a couple of canning groups on Facebook and a lot of the people who have tried them said they were so disappointed that the lids failed by not sealing at all or losing their seal within a couple of weeks after canning. So be sure and check your jars periodically to make sure they are still sealed!

Becky! I've recently discovered a trick to thicken up tomato sauce easily! Use a fine mesh strainer, run a few ladles through the strainer until the tomato water runs clear, the tomatoes will knit together to form its own filter. Literally takes like less than half the time it would to boil it away and you get a fresher tasting tomato product. You can keep the tomato water as a separate product instead of boiling it away. You can use it for rice, soups etc, it tastes so good! Hope that helps!

Sometimes its faster to cook it down in electric roasters because more surface area is exposed. Sugar does thicken it and makes it cook down faster, i cant remember why off hand. It also contributes to bulk so the tomato paste will help increase how much you will get in the final product. You do such a fantastic job Becky but as someone who used to work with an OB please have Josh start helping you with the heavy pots.

I have discovered a few years ago. I used to use one of those skin and seed removal contraptions. But it takes out all the pulp too. Then you are just left with juice. And yes it takes forever to thicken. So now I just put the tomatoes after coring into my vitamix. And it grinds it all. There is no seeds or remnants of skins left after the vitamix gets done with them. To me it doesn't make sense to take out all the natural thickener, just to have to put Bought tomato paste back in and take so long to thicken it. I know your not wasting the left over pulp. But it's just more work than needs doing. I have made the sloppy Joe's sauce last year. I made so much I didn't need anymore this year. I also have been making the ketchup recipe from living traditions homestead makes. And we love it. I have alot on the shelf too. This is just info from a old lady that has been canning for 44 years so far. Take it or don't.
