I agree that’s why I brought it up because not all of these are successes. It may look like in the first video, but they were reality is after you put away all the dishes and the next day you check things and they’re not as they looked.

linda if you go to smart and final you can buy the red wine vinegar in a gallon and its cheap

I buy my red wine vinegar 5% at the chef store in Warrenton by the gallon. I know there are 3 stores in Portland and 1 in Gresham. They also have white wine, cider, and distilled all by the gallon all under $10. The stores carry a lot of other vinegers. I have no affiliation with any of the stores. Just thought you would want to know.

Also, I never tap the lids to check for a seal until the jars have completely cooled. Pushing the button (or center) down will cause this, for sure.

Linda, I love your honesty and that you do reviews after a canning session. You help us all keep learning. It's been so many years since I canned that recipe and gave them all to my mom, she loved them. I did make her wait two weeks to eat it so the vinegar tang would mellow.

Thank you for sharing that failures happen even to seasoned canners. I was wondering if the flavor/texture it similar to kimchi?

The texture is very similar to Kim Chi, but the flavor is got a sweet and sour note

I've thought so many times that the Ball book should have info bubbles in the margins to explain the why for their specific instructions. That would spread the knowledge.

Wide mouth and small mouth jars make a different tone when you tap. There’s a chance it would have been ok. But I’m glad you taste tested. I like the idea of ready made cabbage for sides or finishing touches. Thanks for sharing!

I agree. The regular mouth and wide mouth do make different sounds.

I was thinking the same thing, also the tone will be different with the actual size of the jars.

Not that different, because there were other widemouth jars in Gnat Canningg session that was not the only one

I am now very concerned about all my canned food sitting on my shelves. I was never taught to tap the lids. I was always told that if the middle of the lid is sunken in and the lid doesn't come off when you wash the jars after canning, it sealed. I've always wondered about this, especially with sticky or really sweet recipes were the sugary brine could cause a lid to adhere to the jar. I just pulled out everything I canned last year and this year and all the many of the lids make all different sounds when tapping. I even tapped the same lid 5 different times in the same spot and got 3 different sounds. I really don't want to toss out 143 jars of food.

Another reason not to store them with the rings on, when I learned you should not keep rings on it was because I took jam of the shelf and when I took the ring off the lid came right off, good catch Linda, a new canner would not know the difference. Which one did you taste test the one with the cider vinegar, because I think I would prefer that over the wine vinegar, let us know if their is a big difference.

I made this yesterday and only used half the sugar and forgot that I had previously used up all of my mustard seed. I like spice and added 1/8 tsp korean red pepper flakes to each jar and they turned out wonderfully. I had one jar that didn't seal, so I had some for lunch today. Am making tacos this evening and will be using this as one of my toppings.

it looks good and like others have said i think its great that you do reviews after canning and that your honest in those reviews because things dont always tase as good as they sound and than there are times it taste better then we thought and times things just arent right

I agree, especially with something you’ve never tried before. I’m always a little leery, but I knew even if I didn’t care for it, I could doctorate to make it work and not waste it.

Well, I'm glad you got a wrong'un, because you showed everyone exactly what you should do with it. Open it first, and serve it ASAP. I tried to make a quick pickle with red onions a while back, and I hoped it would be sweet and sour. It was all sour. I used a red onion and it was pretty, just like your red cabbage. I was just wondering if you had a recipe for pickled onions. Off to check out your gizzard videos. I don't have an air fryer, but it's great inspiration. Thanks, Linda!

it is weird that there is no water in the recipe, I use white vinegar when I can that way there is no weird flavors but it always get cut with water

Applesauce tends to “grow” during canning for me. The headspace changes to become about 1/4”.

I have issues a lot with the amount of liquid called for in that book. I often have to do double batches of liquid.

Don’t be afraid to use it, but there is some new stuff coming out that I will share on my channel as well as some of us others that are using steam counters I personally love it

I wonder if letting the cabbage to dry for the full six hours would shrink the volume and make your yield closer to what the recipe states?

I canned some Green Chile Pepper gravy in pint jars using up the lady of ball lids.. All the lids sealed but one of the jars had the button still up until I pressed it. The button stayed down after pressing down. I tested the seal by lifting the jar by the lid-it had a good seal. The jar sounded different when I tapped it. I placed it in refrigerator. Is it safe to eat?

Green Chile Pepper gravy sounds amazing! However, if you pressed the button down yourself, that is a false seal. And yes, you can already tell by that sound difference, just like Linda showed us on the video. I have done that myself, pushed the button down to see what happens. The jar sealed, but it's definitely a short-term seal, NOT safe for storage. If you put your jar in the refrigerator right away, it should be okay to eat. Happy canning!

Well, it’s a little hard to look at the camera lens when you’re filming I suggest you try that and please do send me some pictures of that because that’s not reality. You should be watching what you’re doing.
