Continuing our time in Seville, Andalucia we decided to grab wedge or two of Spain's famous Tortilla, made vegan!
Spanish Omelette or Tortilla (as it is known in Espana!) is a much loved global export consisting traditionally of boiled potato chunks mixed with eggs before being oven baked. Obviously, the eggs make this usually vegetarian dish unsuitable for vegans... But have no fear!
