Tomato Bruschetta Recipe
#### Ingredients:
- 4-5 ripe tomatoes (Roma or plum tomatoes work well)
- 1 baguette or Italian bread
- 2-3 cloves garlic
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar (optional)
- Salt and freshly ground black pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
#### Instructions:
1. *Prepare the Tomatoes:*
- Wash the tomatoes and cut them in half. Remove the seeds and dice the tomatoes into small pieces.
- Place the diced tomatoes in a bowl.
2. *Season the Tomato Mixture:*
- Add the chopped basil leaves to the tomatoes.
- Mince 1 clove of garlic and add it to the mixture.
- Drizzle the tomatoes with extra virgin olive oil and balsamic vinegar (if using).
- Season with salt and freshly ground black pepper to taste.
- Mix well to combine all the ingredients and set aside to marinate.
3. *Prepare the Bread:*
- Preheat your oven to 400°F (200°C).
- Slice the baguette or Italian bread into 1/2-inch thick slices.
- Place the bread slices on a baking sheet.
- Toast the bread slices in the preheated oven for about 5-7 minutes, or until they are golden brown and crispy.
4. *Rub the Bread with Garlic:*
- Peel the remaining garlic cloves.
- Once the bread slices are toasted, rub the cut side of a garlic clove on each slice. This will give the bread a subtle garlic flavor.
5. *Assemble the Bruschetta:*
- Spoon the marinated tomato mixture onto each toasted bread slice.
- If desired, sprinkle grated Parmesan cheese over the top.
6. *Serve:*
- Arrange the tomato bruschetta on a serving platter.
- Serve immediately as an appetizer or snack.
#### Tips:
- For extra flavor, you can add a drizzle of balsamic glaze over the top before serving.
- To save time, you can prepare the tomato mixture in advance and refrigerate it. Just bring it to room temperature before assembling the bruschetta.
