I love how this process is messy. It's fine for water to spill all over, it's fine for tea to actually spill. It's a bit more relaxed that way. Like was said early on this is not a ceremony so it can be wet.

"sohan" is also the name of a sweet Persian candy, a bit like toffee, with rose, saffron, and pistachio

Great video, thanks! Is that gaiwan shape common? I’ve never seen it before and to be honest it looks a bit... wobbly?

This gaiwan shape is not as common - it was made by a local potter, and though it looks tall and unsteady it's actually quite sturdy and easy to wield! Hasn't broken yet, and that episode was filmed years ago! =)

Are there certain types of teas that you rinse and others that you don't?

For me, yes. I will drink the first steeping of high trichome teas like some whites and greens as well as Phoenix and Wuyi oolongs. Most others I will rinse first. Some people always rinse. Some people never do. I fall kinda in the middle, but you can do whatever suits your tastes. 😄

@@TeaHouseGhost THANKS for answering so quickly! For the teas that you do rinse, do you do a plain water warming beforehand or do you just add the leaves during the waking and then actually serving with the second pass?

@@OysterPir8 I do them as two separate steps. Ghost tea to warm everything up, then a rinse, then the first serving round.
