We are making delicious homemade Sanuki Udon noodles, which is known for its unique chewing texture. Enjoy the chewy but pleasant and refreshing texture.
How to make Udon Noodles
cookingwithdog...
(3~4 people) Cook Time: 50 minutes
* Time for resting dough is not included in cook time.
300g Udonko - Wheat Flour with protein content 9.0~9.5% (10.6 oz)
15g Salt (0.529 oz)
130ml Water (4.40 fl oz)
50g Corn Starch or Potato Starch (1.76 oz)
Mentsuyu - Noodle Soup
- Seasonings -
Spring Onions
Grated Ginger
Grated White Sesame Seeds
- Cooking Items -
Ziploc (27x27cm / 10x10 inch)
Pastry Board (46x53cm / 18x21 inch)
Rolling Pin (46cm Ø 3cm / 18 inch Ø 1.18 inch)
Note: It was 75°F (24°C) on the day of shooting and the fermentation time depends on the temperature. To get the rough idea for fermentation time, rest the dough in a plastic bag for 2 hours in spring and fall, 30 to 60 minutes in summer and over 3 or 4 hours in winter.
* 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml

Add 3 tbsp soy sauce, 2 tbsp mirin, 1 tbsp sake, 5g flaked bonito, and 4g dried kelp (konbu) to 180ml water and slowly bring to a boil. Once the broth starts to boil, remove from heat until cool and pass through a strainer. This makes enough for about 3 people. Finely cut the leftovers and you have a great filling for onigiri rice balls. :) You can also check your local Asian grocery store for bottled Mentsuyu broth. Good luck in the kitchen! ;)

Made udon today using Italian 00 flour. It's 9.5% protein and they came out perfect! Tuff and chewy as they should be! Thanks for this video.

If udonko is hard to get, substitute cake flour. It's a finer flour with around 9% protein. Probably the closest to udonko of the western wheat flours.

No you can’t make it with cake flour the gluten structure is too weak never reach the udon texture.

Made this yesterday and they turned out great! Shiny and slippery noodles with the trademark chewiness. My dough did feel dry even with the addition of all the water. Barely needed any corn starch, even during cutting, so I might up the water next time. Rolling out the dough was a real pain and it was very hard. I may have even bruised the heels of my palms. If you have a pasta roller, bust it out. Divided into four and rolled to #4 thickness was perfect.

If your cake/pastry flour has 9% protein content, you can probably use it for udon noodles. In Japan, udon flour usually has about 9% protein content :)

+Nahar Shimu A common way to keep udon noodles for long periods is by cooking and then freezing them. It's also one of the ways it's sold in the market (in the freezer section). You can try that! : )

Min T If you wanted to you could, but that would kind of ruin the texture of the noodles. They're more likely to become brittle that way and lose their chewiness.

Can these udon noodles be frozen after cooking to reserve them for later? Our oriental market rarely has frozen fresh udon noodles and I wondered if it would be possible with this recipe.

I would assume you could. Just make sure they are coated in flour well as they might stick. Also probably best to cook them from frozen.

You can try all purpose flour or churikiko (中力粉). Choose the product with 9.0~9.5% protein content. :) There is a special type of wheat flour called Udonko (うどん粉) and it is best for making udon noodles! Example: www.nisshin.com/products/detail/4902110341881.html

This looks delicious! My favorite little noodle place in Chinatown has handmade noodles like these so now maybe I can replicate their food! This is such a good recipe for an international audience too; the ingredients are available almost anywhere!!

this is really great to watch, i love udon noodles. i'm glad i found out how to make them. the only part that will be hard is the rolling and waiting part.

She has good skill of making noodle. It takes patience and time. Worth making homemade udon. Big thumbs up!

Udon is definitely not something that is commonly made in Japan. It's probably akin to people making fresh pasta at home in the Western world (maybe even a little less popular because traditionally, there is no machine). But! This video makes it seem a lot more approachable! Thanks, Francis & Lady.
