It was amazing to watch them break the ostrich down- I used to butcher whole chickens, cut them up into portions, on a regular basis, and watching someone do the same to such a big bird with such skill is a treat. It's been a very long time since I ate ostrich, too, but it is a very tasty as well as healthy meat, so the diners are in for something special.

For anyone that has not tried ostrich egg and you like chicken egg i recomend it....it makes the most fluffy rich scramble and the most amazing omelets ect , its slightly more rich in flaviour but thats the only real diffrence
