May I use pressure cooker and cut down the cooking time? If yes, how long should I cook with pressure cooker? I have a non electronic pressure cooker that requires fire stove.

I spent a month in Thailand and decided to do some last minute shopping in Bangkok while I was waiting for my departure flight at DMK. I took a taxi to Pratunum Market and happened to try this dish for lunch. It ended up being my top 5 favorite dishes during my trip. It just goes to show that amazing food is hiding around every corner in Thailand.

I just made this dish, I used the pork stock from another of Pai's recipes as the base for the stew and it turned out wonderful. Just as good as in Thailand, and it is not often I get that good of a result. Discovered afterwards, reducing the sauce to about half the volume improved the taste a lot more - I had perhaps used a little to much water when I boiled the pork knuckle.

Just returned to the states from a 3 week vacation in Thailand and this dish is 1 of 2 that I truly miss! It's everywhere in Thailand from traditional sit down restaurants, mall food courts, and street vendors. Definitely going to try making some myself since it's not readily sold here. Thanks for making this video!

My former Cantonese restaurateur employer made a version of this for her daughter-in-law after she had her baby. She basically used pig feet, I don't remember any pickled veg , but definitely she used eggs, vinegar, molasses, sugar, spices, soy sauce and lots of ginger. She made so much she had to share it with the employees. My Aunts said that my Cantonese grandfather would make it for them and my grandmother when it was menstruation time for them.

Im just drooling.. This is the very first dish I've eaten when I arrived in Thailand, and it's soooo delicious. I can definitely eat this everyday!! All your yummy videos bring out fond memories of Thailand - which is really funny coz I get homesick thinking of Thailand.😂😂

Great, video. Was just in Bangkok and my favorite dish was this one. Less than $2 per plate and so good, especially with ample chili-vinegar sauce on it.

Love this recipe - thanks!! On my third time making it I didn’t add the palm sugar and took the lid of the pan for the final hour to thicken the juice a tad. Turned out good as well.

I love kao ka moo in Thailand. It was my favorite dish. I think you need to add the sauce because it is the sour/spicy/acid that helps brings everything to the YUM quadfecta!

Oh man, this is one of my favorite dishes. Whenever my mom and her friends would get together, they would make a huge pot of this. The meat was always so tender and the eggs were always one of the best parts. Thanks for making this, I'm super excited to make it myself.

The strainer you use to fish out the spices is actually also a great tool for skimming off the scum and the fat.

Laos people have a similar dish called " Thom Khem" My favorite! But cooked alittle different!

I'm Thai and I have a shortcut to shorten it within 1 hour, that is, you use a high pressure cooker. Usually, this kind of food in Thailand takes 4-5 hours before it becomes soft. I'm a person who doesn't like to wait long. And the high pressure cooker is the answer.

Small tip, if you spike the leg with garlic, e.g. between the skin and the meat but on the meat side, you poke with your knife and insert whole cloves of garlic in the fat an inch and a 1/2 or two deep... so delicious.

ask your mom what zhu jiao fan 豬腳飯 is and to make it for you! There is a Hokkien/Taiwanese version and a Teochew version (90% of what this is)

Yes, luo rou fan (pu tong hwa) or lo bah png( meinang hwa) is braised pork rice!!

Puerto Ricans love pork skin. whenever we have pernil/pork roast everybody fight over the skin lol. but instead of the skin being soft we like it crispy and crunchy. love your videos I plan on making this soon

How long in a pressure cooker do you think you could pull this off? Also, while living in Bangkok and seeing this on the streets or at some mall food courts I see they boil the sauce down really thick. My favorite dish in Thailand by far. Probably ate a unhealthy amount of it. Love the fresh chilis and raw garlic on the side they give you to eat with it.

Wow this looks amazing. I have so many good memories of the (too short) period that I lived in Thailand. I would like to try this, but it is probably going to be too much to finish in one go. What are your suggestions with respect to storing the leftovers? How long will it last in the fridge? I need to work on those handy plastic bag wrapping techniques that all street vendors use in Thailand haha.

That pork leg that you took out looks yummy. It sould be included with the main dish after the leg is cooked a bit more to make it more tender and succlent.

Wow! Palin, you are so good! This recipe is excellent, enough to feed a party of ~10 hungry & happy people. You're right, I like to cook the eggs up to ~1 hour & 10 minutes for my preferred hard texture & deep flavor. Thank you so much! (Now some gourmet Americans put a piece of pig foot in their soup or beef stew too for the gelatinous texture, as Thomas Keller of "French Laundry" suggests. Pig foot is high in collagen, which is great for orthopaedic health & recommended by MD's.)

I've always been afraid to use cleaver to chop cooked meat into smaller pieces (roasted chicken, or the pork like how you serve it). I don't know how to secure it with my hand so it stays put on the chopping board, and I won't chop of my fingers :x Can you show a video about this? I always love how you break down the steps in your video, I find it easy to understand when you are the one teaching it. Thanks!!!

to make this even easier.. go to hk style bbq shops and ask them for roast pork legs.. they are soooo much cheaper.. already roasted and flavoured...

One of my favorite dishes when in Thailand and I'm planning to make this sometime soon. But before I do, I have some questions. 1) Can I use a slow cooker instead of the gas stove (or is not hot enough)? My gas stove is terrible when a low flame is needed - it gets extinguished very easily 2) Normally when I try to make hard boiled eggs, a grey ring where the white meets the yolk usually appear if I boil it a bit too long. How come that didn't happen to yours?

1) Yes you can. 2) When I put the eggs in the sauce, the sauce is not "boiling" but gently simmering, this keeps the temp low and that prevents the ring from appearing as quickly.

Yes, fresh chilies and garlic are common toppings you can eat with this. I usually skip them so I hadn't thought to mention it in the video :)

This is VERY similar to a Taiwanese dish called 滷肉飯, or "Minced Pork Rice". It's essentially the same thing - pork, soy sauce, spices, herbs, sugar. All poured over rice served with a pickled daikon radish, a stewed egg, and some steamed veggies on the side (optional).

@@kanjanachata Yes it is. Food does not respect borders well. In the same way, the yellow "massemun" curry is Indian tasting. Very similar to the Kerela flavors. Who did it first? No idea but I would bet on the Indians.

I live in Phnom Penh, Cambodia which is next door to Thailand. I go to Bangkok every 2 months and as soon as I arrive I make a beeline for my favourite KKM place and for my fix. I just made my first KKM in my kitchen in PP and it was PERFECT. I followed the recipe precisely, which is important on your first attempt. It is probably as good as my favourite place in BKK, but I enjoyed it in a air conditioned room! QUESTION: I have a lot of the fantastic broth left over and I have saved half of it but had to throw away the rest. What can I use the spare broth for? A simple soup? Would it be a bit strong as a soup? I hate throwing away great broth 😭 Any suggestions?
