Jess, using oil makes your recipe more of an unfinished pesto. Add roasted piñon nuts and finely chopped parsley to the blender and you have a Southwestern restaurant quality sauce for grilled meats. To your recipe, replace the oil with a small amount of water and add two ounces of roasted white onion, blend, and then mix in finely chopped cilantro for chips and salsa.

Just for you to try on your own, smoke or char the limes before you squeeze them. It’s another layer of flavor. You can do the same with the garlic.

OK, made both versions. The original is similar to that green sauce you can buy at our local unnamed supermarket. The roasted is much more robust, maybe due to the onion not being as soft. Both are fantastic and very easy to make. No need to buy it anymore. Question: which do you prefer?

Definitely use olive oil rather than chemically processed seed oils.

@@OCJ0001 unfortunately we have all been sold a line of BS regarding seed oils. Stick to EVOO, butter or animal fat.

@@wcneathery3100 thanks. Yes I like and have avocado, olive and coconut oils in my home for different uses. People also need to know that certain temperatures each one also starts to be bad for you. Gotta use them the way they are supposed to be used !

No way should anyone use vegetable oil or canola oil. Please do research. That belongs in the engine of a car not the human body. Please do actual research. You should be using options like avocado oil, olive oil, coconut oil, animal fats.
