2:21 I am a bit confused because the diagram looks like cold air from the snowy mountains is coming down off the hill and moving over warmer water, rather than the video says warm, moist air moving over cooler ground or water

The sun heats the Earth's surface during the day, making it warmer than water. At night you can expect the opposite (the water will be warmer than the ground).
