Hi Janet, just fyi you've said to use especially baking *"soda"* but in the video there is 1/4 tsp baking *"powder"* written 😊 - that might be a little confusing! Coconut flour definitely does not crunch. My coconut flour Oreos crisp up if they sit over night but do not have the snap crunch that these ones do

Absolutely delicious. I have to use roasted carob powder, as i cant eat chocolate, even so, still delicious. I must confess, that as this becomes a dough, I just put all the ingredients, into my food processor, with the metal blade and wizzed it up, into a dough, in seconds.

This is crazy to me. I tried lupin flour as a breading for frying and it was soft. Im surprised it makes crispy cookies! I cant wait to try.

Yeah I tried lupin flour as a breading also. The only way it even slightly crisped up was when I mixed it with parmesan cheese but it makes yummy crunchy cookies.

Generally you can't substitute lupin flour for almond flour. Lupin flour is more absorbent. In this recipe you possibly may be able to or combine the lupin and almond flour. You will most likely need to adjust the moisture/liquid ratio.

Sorry about that it is baking SODA. That's what helps make the cookies crunchy. Baking powder makes baked goods "cakey"

Thanks so much! Do you have any other filling recipes that would be okay on the countertop. I’m trying to make the filling less sweet. For me it’s too much sweetener and has the cooling effect. Family loved them though as is. Thanks again.

@@galpal2 Usually if I want filling for my cookies I this filling recipe and just use different extract flavors. I've also used my keto marshmallow cream or keto jelly. Here's a recipe for my peanut butter cookie filling. I’m dubious about the lupin flour. I made muffins with all lupin flour, and they tasted so bitter I threw them out. So I’m assuming the amount of sweetener you use counteracts the bitter aftertaste of the flour? Oh, and FYI, I absolutely cannot get bamboo flour anywhere in Canada to use in your recipes. The American retailers do not ship here. I could only find shipping from Mexico or India. At exorbitant rates. Boo Hoo

The brand of lupin flour makes a huge difference. I use Modern Mountain (link in description)and I haven't noticed a strong bitter taste. Also the cocoa powder and sweetener will pretty much take over the taste. As far as bamboo fiber, if you're able to get a hold of oat fiber you can use oat fiber instead in any recipe that calls for bamboo fiber and it turns out just as good.

@@JanetsDeliciousLowCarbKitchen Unfortunately Modern Mountain doesn’t deliver to Canada. I enquired about their bamboo flour as well. I’ve only had access I have to lupin flour is my local bulk store. Have no idea what company the lupin flour came from.

@@Clarky1951 Try this recipe with the flour that you can find. The cocoa powder and sweetener will most likely cover up any bitter taste. You can also add a little bit more vanilla extract just to make sure. I hope this helps.
