The bassist for this week, David Lee, requested a #chicken dish for his next appearance on the show and then even gave Wil a recipe for the #bbqsauce that we're using this week! David's doctor will be SO happy that he came on the show and had chicken instead of beef! We're glad we could help out.
This BBQ Chicken was OFF THE CHAIN! We fired up the @GrillwithWeber and then prepped the chicken! Wil used some duck fat as a binder on these leg quarters and then sprinkled them with his all-purpose BBQ Jams Rub. Once the grill was ripping, Wil put the chicken on the indirect heat and closed the lid.
Meanwhile, he made up the BBQ sauce that David suggested. Here's the recipe:
1 stick - Unsalted butter
1 cup - Ketchup
1 cup - Apple cider vinegar
1 cup - Water
1/2 cup - Yellow mustard
4 tablespoons - Light brown sugar
1 teaspoon - Cayenne pepper (more or less to taste)
1/4 cup - Worcestershire sauce
2 teaspoons - Diamond Crystal Kosher Salt a.co/d/cjL2hmy
Mix all ingredients and simmer until combined. Baste chicken or pork with the sauce during the last 15 minutes of cooking.
The jams were as SPICY as the chicken with Steve Wheeler and Brett Norton (@houseofshred3725) tearing it up as usual while David Lee and Wil held down the beat on the #bassguitar and #drums respectively.
