I've tried many different carrot cake recipes and this is truly the best, most consistent recipe I've found. It's simple, incredibly flavorful and very moist without being too dense. I used this cake and cream cheese frosting recipe to make a wedding cake a couple of weeks ago and it was loved by all. We made it yesterday and every single man on this farm said it was "THE BEST CARROT CAKE I'VE EVER EATEN!". I made this yesterday for Easter (today) dinner with my family and it was a HUGE hit! I used 8” pans and a double batch of frosting so that I could decorate the top with a carrot. I’m not AT ALL a baker, but I will try from time to time, and my entire family absolutely raved about this cake! Thank you!!

Your recipes are the BEST. I bought a binder and put ALL your recipes in it. (Lot of paper used 😂) I labeled the binder “Sugar Spun Runs Best Ever Award Winning Recipes” so anytime anyone wants to make something they can find it in the binder.

Thank you for sharing this GREAT recipe! I made mine in a (1) un-fluted Bundt cake pan (greased & floured) and omitted the icing. I also grated the carrots the old-fashioned way with a hand box grater (finest side). I used the GRAM measurements instead of cups for precise measurements of the flour, sugars and grated carrots, and added 1/8 tsp of ground cloves to the flour mixture. I modified and used 3/4 cup canola oil and 3/4 cup melted unsalted butter. Once I made it with 1 cup chopped walnuts and added 1/2 cup unsweetened finely shredded & dehydrated coconut -- and another time I omitted the walnuts and added 1 cup of the unsweetened finely shredded & dehydrated coconut. When using the Bundt pan, I baked at 350 degrees for 1-1/2 hours, loosely covering with foil for the last 20 minutes. And the individual slices freeze perfectly in foil. This recipe is a KEEPER - Thanks again! 😊

I just baked this, along with your red velvet, omg!!!!!! It's sooooo gooood! But I cut down on the sugars and the taste spices came out so well. Guys, it's sugary, just reduce the sugar in the baking, and you will still use frosting anyway,so reduce the sugar and it's the perfecto, a keeper recipe for me Tnks alot sis for the hardwork.

I make almost this exact recipe except I use 1 1/2 brown sugar to 1/2 sugar, and I add 1/4 tsp ground cloves & 1/4 tsp ginger -- I also think the pecans are a MUST -- spread them on a baking sheet and bake them for about 8 to 10 minutes and they will break up super easy and add the best flavor -- they're also beautiful to decorate the outside with (around edges and/or crumbled)! This is a wonderful recipe ❤ Oh almost forgot! Add 3/4 cup unsweetened apple sauce in place of butter (also gives a great flavor and makes it a tiny bit healthier) 🤗

I've made this cake twice and both times the texture was perfection. The flavor is good as is but too conservative for my Caribbean palette. The second time I upped the cinnamon, nutmeg, added cake spice, ground ginger for warmth and almond essence. It was much better but I will play around with the spice until I find my perfect blend with that punch. I added walnuts and crushed pineapple both times. Very good base recipe!

I tried it today and it turned out perfect. I have adjusted one thing which is reducing the butter to 80g also, I mixed the wet ingredients separately and then added the dry. And for the cream I added only 1/2 cup of sugar. 3 cups was way too much. In general this was fantastic
