In this video, I share some salad preparation tips on a vegan, nutritarian diet.
Salad dressing recipe:
- 1/4 cup tahini
- 1/4 cup hemp seeds
- 2 lemons juiced
- 2 pitted dates
- 2 tbsp garlic
- 1 tbsp garlic powder
- 1 tbsp dill
- 1 tsp dijon
- plant milk

This video is so inspiring. I've watched it probably 100 times over the course of 2-3 years every time I look at my diet and realize I should be eating way healthier than I am. I always come back to this one to reinspire myself :')

I put a folded paper towel on top of my prepared salad and then I burp the lid to get the air out. My salad is crispy and fresh for four days.

Adding a paper towel has helped us so much to keep greens fresh longer so I don’t have to go to the store as often.

I don't know where you went, but I hope you are still reading comments! I found this video and started making this a month ago. I eat it every day for lunch. I make up a big one every Sunday and it lasts me 5-6 days. It has been the best thing I have found that I stick to and look forward to every day. I've even tried other dressings and none of them can match this one. I love it! Thank you so much for sharing!

I’ve gotten the habit of saving the kale stalks for my smoothies. The Vitamix blends them so smooth you’d never know. I never throw them out.

Great idea about the kale stalks!!! I usually slice mine up, tiny and saute them, adding legumes with bits of kale leaves, onion, garlic, etc.

Good tip. Vegan can be so healthy.......or not. I think this will be helpful to many. A big pot of soup every week also works. Freeze half. Soup and salad!

Right 😊👍, because 'vegan' is not a diet. It's a belief. Like catholicism or Buddhism. Nobody eats a catholic diet. Oreos, sugar, oil and french fries are not made of animal products, but unhealthy. Whole Food Plant Based is the way to go 😁💜🌈☮

Tip for extra veggies in your meals....I thinly chiffonade (chiffon-ade) kale or spinach or broccoli, beet greens, arugula, parsley, cilantro, red cabbage,etc and mix it into everything! Vegan bbq sandwiches, pasta sauces, lentil loaf, potatoes... literally everything! I avoid Vegan "junk food" that processed. I always do "whole food" cooking. My hubby came up with an idea for us at dinnertime....1/2 of our plates are greens/veg. This works great for us. Dr. Gregor's Cronometer is a perfect way to track a daily macro & micro protein, carb, fats intake, to make sure your meals provide what you need and you can see that fat ratio for omega 3 & 6 fats, to make sure your getting a proper healthy ratio of Omega 3's! I supplement my green drinks with Spirulina and Chlorella, Chia or ground flax too!

It's true that a salad without legumes doesn't taste complete. I also like to add Craisins to my salad and my kids like chopped pieces of apples. Good stuff

That looks so good!! I'm not a vegetarian, but I eat tons of vegetables. I think that chopping up all of those colorful veggies is good for your mental health as well as your physical health. Eating this way is an act of love for yourself and the planet! Thanks for sharing 🙂

Made that salad dressing with a couple of changes: I used medjool dates that I soaked in warm water for about 30 minutes, I skipped the garlic powder, and I used the water from soaking the dates instead of of plant milk. SO DELICIOUS!!! Going to try making one big salad instead of five little ones. Your giant bowl of salad looks amazing! Glad I found your channel!

I think Michael Arnstein in a video was preparing a huge salad and because apparently any bowl was too small for a fruitarian ultra marathon runner like him he used a bucket😂. I'm under the impression it was all for him at once.

Made this last Friday - all gone by Sunday. Even my 13 and 15 year old daughters grabbed some. The colours are a big drawcard, and having it ready made also helps. Thanks

AWESOME combo! Love the colors! i added salt and pepper to the dressing, plus lightly seasoned the chopped veg with salt and pepper as I layered them in my bowl. I kept the kale separate so I could massage dressing in beforehand to tenderize it, then mixed with veg and served topped with avocado and some roasted yam cubes I had leftover. Might do a chipotle lime version of the dressing next. Thanks for the salad inspo!

I just found your channel, lucky me! Vegan here for 2 years and scrambling to get organized. I’ve been following the plant based doctors which has helped, but striving to be a meal prepper because vegan processed food is way too easy and convenient, and was not my intention going in. I was initially going for more nutritarian but at times it’s just overwhelming. And then I feel like yuck lol. Putting it into practice is what I need to commit to. Thank you for your very practical how-to videos, and sharing what you’ve learned, it’s definitely got me inspired!

I followed a veggie/vegan diet for about a year when I was a teenager but didn't find it to be sustainable for my lifestyle. I did however watch many documentaries and educate myself. Even my mother read Eat to Live and we watched the Forks Over Knives documentary together and to this day, some of my fave recipes are from the FOK cookbook. Now married with my own kitchen, I am really inspired to eat plant based meals for myself. This video just brought up all these memories and so much inspiration! This salad looks SO DELICIOUS I am going to buy all of the ingredients for it tomorrow and make this as my lunch for the next week. Thank you for sharing!

I took your advice with this video. This has been really great and made it convenient for me to eat healthy. I don’t use microwaves so when I’m hungry and I don’t feel like cooking I tend to eat a lot more nuts than I should- or other things I shouldn’t eat too much of. This way- when I’m hungry I can have this salad as a quick meal or use it as a side. Game changer. Had to come back and tell you how much I appreciate it!

I first read Eat To Live back in 2004 just after it was first published, and it changed everything. I read the China Study about the same time. Your salad approach is pretty much just like mine. Huge salads with myriad ingredients.

I have been eating a big salad similar to yours for several years now every day for lunch. I like raw beats, broccoli, onions, mixed nuts, flax seeds, and sometimes olives. So good!

Google User I buy Lighthouse dressing. The two flavors I use are Sesame Ginger or Pomegranate Blueberry. I like them because they have very little oil. 25 or 40 calories per serving (2 tablespoons). Easy!

I'm on the second week of doing your salad prep, with that incredible dressing recipe! today I wanted to let you know I changed it up by adding some strips of crispy tofu and about 2 teaspoons of toasted sesame oil. It was really delicious ! The best salad dressing recipe ever !

This video saved my life, I got his book and Its been a lil over a week and I see I have lost some weight and learnin so much from YOU Dr.F and the whole food plant based community. Bravo! This Vegan veteran adds the cucumbers and tomatoes just before serving as they make the salad too watery and it spoils fast. I also line the bottom with paper towels to soak up the moisture which facilitates rotting. I keep the leafy greens separate and put all the chopped veggies in separate paper lined containers. Everything last longer this way. Then, if I want to make a wrap or Vietnamese salad rolls all I have to do is lay out my ingredients "Subway style" and create the perfect roll, wrap or salad. Edamame is an awesome source of protein too. Affordable sunflower seeds make great replacements for nuts in dressings. Love hemp seeds. Sprinkle on top. And pepitas make a wicked pesto base. Make pesto from any leafy green and edamame, green peas, etc.

Thank you for your video!! Just wanted to add a little tip when cleaning Kale. Grab the stem and then pull the leaf part fo the plant from the bottom to the top off of the stem. It will come off in one quick swipe! SO easy and so much faster!

Thank you so much for this video. I have been plant based for nearly 5 years but have been relying on frozen veg burgers for meals. This video gave me a kick in the backside to get eating salads. 3 weeks in and I have definitely lost a few pounds but more importantly my brain fog is gone! Concentrating during work is much easier. I too love a busy salad! My sister, who isn't a fan of salads started enjoying them once I prepared large batches.Nutritional yeast wasa genius touch, but I ad tomatoes as i plate the salad 'cause the refrigerator ruins the flavor of a fresh 🍅

I’m new to your channel and enjoyed watching a couple of your videos so far. I’m a busy mom with very little time for myself to cook quick and healthy vegan meals, so I like the meal prepping ideas (though I definitely get lazy and don’t meal prep like I should). I look forward to more ideas and recipes that hopefully will save me time and keep me eating healthy like I should be. I’m definitely going to be doing the huge container of salad/veggies. That should help save me some time and save me from reaching for quick junk food when I’m tired and don’t feel like making anything. Thanks for sharing!

A book you should buy is Dr Greger’s cook book How Not To Die. He’ll tell you that oils, deep fried foods, salt and sugar are bad, and for the reasons vegan can die from a heart attack. My favorite off his book is the ranch dressing and the no baked dates walnut treats. Mmmm. Dr Klaper is another man I trust. Make sure you eat the whole banana as long as the peel have black spots, and wash them. Make sure you eat the whole strawberry and kiwi. The whole Lemon, lime and oranges. Even their seeds. You can. Its up to you.

Very wise advice! I remember when I used to eat a huge salad every day, I felt my very BEST PHYSICALLY AND MENTALLY. The mental clarity I had at that time was indescribable!! Thank you for this reminder! I need to get back into this!: )

@@MzHannah36 I've made this salad three times so far. It's so versatile! ❤️ I can use it as a base for a Mexican fiesta salad with added avocado, salsa and taco seasonings, or as an Asian salad with homemade peanut sauce. I've even used some of the salad as a topping for black bean burgers w/ketchup and mustard. It's crazy how delicious this salad is! 👍🏾👍🏾

This is fantastic!!! You are so on the right track!! If you have 5 colors in your salad you have all the nutrients you need and you have plenty and then some! Add seeds and beans and there is your protein! Keep it up you will live for a long time. Thank you for sharing!! God bless you!

Love a great salad. I only use orange squeezins on my salad, and occasionally some good vinegar. I never got used to eating anything milky on a salad, but the orange works. Lately, I just incorporate it all in a one dish meal. Thanks for showing us how you do it. Inspiring.

You can substitute some fresh-squeezed orange juice for the plant milk in this dressing. Years ago, the Lemon-Tahini dressing served by the Golden Temple juice bars contained some lemon, but the majority of the liquid was actually orange juice!🤓

As a new vegan I noticed I was hungry about 3 hours after eating. I found myself snacking late at night. After about 3 weeks of this I was fed up. I purchased large eating bowls and and started making huge salads with most of my dinners during the week. I will say, this was perfect. Add what you need to your salads to help make them feeling. Yes, mine are vegan. No more late night snacking.

I'm so grateful that I found your channel. I've been in a bit of an eating rut lately. I have been a vegan for 8 years and early into my journey, I went raw for about 6 months and felt amazing but I was always stressed out about finding nice, good quality, organic produce. These past couple of years, I've kind of fallen off the clean eating lifestyle and allowed myself to eat a lot of vegan junk food and fake meats and all that stuff and be less restrictive with my eating and thinking around food. I have always continued to incorporate fruits and veggies but I haven't been making big salads anymore which were such a staple in my life for so many years. In all honesty, I got so tired of the prep work. I was also in a situation where I didn't have a lot of space to store a lot of food in advance. Now that I'm in my own space, this has given me the motivation to start meal prepping again and get my act together. I know I felt so much better when I ate really clean. Thanks once again for the motivation!

nutrabullet works the best for smoothies, salad dressings, etc. easiest to clean. I also have a vita prep blender but now use my nutra bullet.
