I inherited many of my grandmother's recipes. Some were written on the back of newspapers (President Roosevelt on whistle stop at Harrisburg). All in cursive I might add. One recipe for Jellied Chicken calls for an old hen. Everyone has an old hen in their yard right? Another for a cake, a favorite coconut cake, calls for butter the size of a small apple and bake in a medium hot oven. Back in the day of coal stoves, you would check the oven with your hand and count. Old family recipes are diamonds.

I'm 35 and love the idea of cursive, even though I don't write in it very often. But seeing old letters or recipes written in it makes my heart happy :)

I’ll give it a shot and add it to my Christmas cookie line up. Looks so yummy. I just may add a little vanilla and a pitch of salt, just because it’s included in all my cookies. Especially my original creations. Thanks for the extra cookie merry Christmas

Hi! I found this recipe in Gourmet magazine a long time ago! It was called Batey’s Cinnamon bars… It is exactly the same as your recipe.. It was of the most requested recipes of one of the editors… I made it on parchment paper, with an off-set spatula to spread it thin.. I added sprinkling cinnamon sugar on top the egg whites and pecans to give a a crust type texture… We must have similar taste because the pecan snowballs and this cookie are my favorite holiday cookies! … along with Sticky toffee pudding! Thank you so much!

I stopped the vid to read the "chicken scratch" recipe on the file card. As a grandma who was taught cursive by the nuns, I recognized that your grandma has lovely handwriting! I had no difficulty reading it at all, but got such a kick out of "1 large bag pecans". How not-helpful was that? I can't make these for my family as we have nut allergies, but I still learned from your excellent video skills. I love your work!

The cookies look delicious. I'm German and they remind me of some cookies we make around here. Now neither Pecan nuts nor that Wondra thing were available in Germany long ago so I wonder what the original ingredients were. Walnuts or hazelnuts probably and instead of the Wondra it was probably simple wheat starch.

Melt butter, mix all dry ingredients, add egg yolk... I can read the recipe card just fine 😊

@@NOTANOTHERCOOKINGSHOW Yes you're right, as per your demonstration there's a lot more to it than what's written on the card, I was just answering your question about who could read the cursive writing, but I'm guessing your question is a rhetorical question 🤔. Thank goodness for videos and filming because if I had to write down the exact steps of the techniques used in this recipe then I would give up in the 1st sentence 🤣

Hey Steve.. Love these cookies. It'll be Christmas soon enough. Hope to bake some this year. I save the candy and cookie tins so I always have some. My birthday is 5 days before Christmas...such a hectic time to have one. I hear you. I love writing in cursive..it's artistic like you are and brings you bacvk to a time when people wrote beautiful letters to each other.

I’m 2 days before Christmas And I’m not catholic or Christian Jesus wasn’t born near a Christmas tree anyway but I celebrate Christmas and it really is the use of celebrating the end of the year all the way to New Years Eve with a beautiful Christmas tree idc

My mom has that same exact handwriting. Impossible for my kids (and husband) to read. Ha ha. Love this recipe. We always had these or something like this (never knew what it was called) on the Christmas cookie trays growing up (all Italian on both sides, so not sure where they would have gotten it or if it was slightly different). It's going in my handwritten recipe book. :)

Steven, the thickness of the center of your dough was probably due to the deflection of the sheet pan as the support is the weakest there. Just put another sheet pan under it and that should help. I am glad you mentioned the Tipo 00 flour as a substitute for Wondra. According to The Kitchn, (www.thekitchn.com/what-is-wondra-flour-248213) Wondra is "Instant flour is low-protein, finely ground wheat flour that has been pre-cooked and dried. While other flours can seize up and clump when heated or stirred into liquid and must be cooked to get rid of its raw taste, Wondra instantly dissolves in liquids and won’t form lumps."

In US, worry how much should you pack a cup with flour. In Europe, use grams and scale to have precise measurements every single time.

3 things. Weird that pecans would be in a German cookie since they are from the American south. If you spray some non stick spray under the parchment paper(on to the upside down pan not the top part touching the cookie) it will help the paper not slide around while rolling out the cookie. Wondra is a pre-cooked flour, that is why it kind of gelatinizes in gravies and kind of makes it look gritty even though it doesn't have a gritty mouth feel. Just some random things I was thinking about as I watched.

If you use normal flour, the quantities are not correct, had to use significantly more flour for the same texture. talking about measuring: why americans measure in cups, is beyond me - thats vague

Who's idea was it to stop teaching kids how to write in cursive? That makes about as much sense to me as it would if you came up with some reason to stop teaching them to read. Fortunately, I believe that they have realized it was a bad idea, and are teaching it again.

Im 21 and I was taught to write cursive until fifth grade. We literally had an english class dedicated to just practicing cursive every year. They taught us to write in cursive because they wanted us to appreciate good penmanship skills. We were also taught calligraphy skills in middle school. Theres character and beauty to cursive and calligraphy.

It’s regular flour but it’s cooked so that you can add it to a sauce without boiling it or making a roux and it will thicken it. I guess it can be used in baking too

He's not charging for any of the recipes he's shared or will share on You Tube; those recipes are on his web site FOR FREE. If you want his "Holiday Plan of Attack" with extra recipes and tips, then you can purchase that, I think it's only $15. Seriously, I cannot imagine someone being so immature they unsub from such a *great* channel just because of that. 🙄

NOT ANOTHER COOKING SHOW people like me that subscribe, like, and watch the commercials before your show starts to help your monetization? This was my opinion about paying for a recipe that’s being shared on a medium that’s cost neutral. It’s the same as other amateur cooks on KZfaq giving away their recipes for free as they educate their audience and then suddenly turn the channel into a show where recipes are deliberately not precise so that the recipe can be sold. I don’t know of another channel that has done that. You’d be a trend setter.
