Learn how to make this delicious classic Italian creamy risotto recipe that makes for the perfect side dish or main entrée for any weeknight or entertaining meal.
Ingredients for this recipe:
• 1-2 tablespoons olive oil
• 1 peeled small diced yellow onion
• 3 finely minced garlic cloves
• 4 cups arborio rice
• 1 cup chardonnay
• 10 cups chicken stock, heated
• ½ cup heavy cream
• 1 cup grated parmesan cheese
• sea salt and pepper to taste
Serves 16
Prep Time: 10 minutes
Cook Time: 35 minutes
Procedures:
1. Add the olive oil to a large pot or rondeau over medium-low heat.
2. Pour in the onions and cook for 8-10 minutes or until lightly browned and translucent.
3. Add in the garlic and cook for 1 to 2minutes.
4. Next pour in the rice and toast for 3 to 4 minutes while stirring every :30 seconds.
5. Deglaze with the wine and stir constantly until all of it has been absorbed into the rice.
6. Add 4-8 ounces of warm chicken stock at a time to the rice while constantly stirring until it has been absorbed and then repeat the process until the arborio rice is cooked and al dente, or slightly crunch.
7. Stir in the cream, parmesan cheese, salt and pepper and cook for 2 to 3 more minutes.
8. Serve with more parmesan cheese, pepper and optional parsley garnish.
CHEF NOTES:
• You can also add cooked vegetables or proteins to risotto once it is done cooking.
• If you want to alter the flavor of the risotto do a full caramelization to the onions, about 20-25 minutes.
• The rice will go from bright white to translucent and may have a little brown on them from toasting.
• I’ve found that it takes about 5 cups of chicken stock to every 2 cups of arborio rice.

Wow!! But first I have to preface this comment. My ex was Italian and got me hooked on risotto, it is literally my favorite thing to eat but as many times as he cooked it for me I never paid attention. I've tried box risotto during desperate times but realized I needed to learn how to cook this myself. You really came through for me with this recipe. It was easy to follow and my finished product was absolute heaven. Thank you Billy 💜

I really like adding stock as much as it takes until al dante. You also mentioned the same thing thing in the recipe clip. I didn’t know we could reheat it. Thank you for the tip.

for a healthier, vegan option I soak 1 cup raw cashews in water, strain then blend with your risotto stock, add nutritional yeast and salt/pepper. Super creamy. That's my "heavy cream"

@@250Pants it’s good with a “cauliflower cream” too! I like to cook down some riced cauliflower until it’s tender, and then blend with a little unsweetened almond milk. Sooo good! I use this thick cream base for Alfredo, and cheese sauce bases all the time. It’s delicious without any added dairy.

if you use orzo you're not making a risotto, because orzo has not enough starch to get it creamy. Italians cook orzo the same way as risotto but the result is different. They call it "orzotto"

looks delicious! i've always been too intimidated to make risoto, but you're making it look easy! I will definitely need to give this a try now. at what point would you add vegetables to this? i'm thinking asparagus or mushrooms... yum.

I would caramelize the mushrooms with the onions and get a really nice brown on them and then add asparagus in with the last ladle of chicken stock so that it stays firm. You got this!!

Obviously one may add just about anything to risotto as their personal preference but my go-to is: onions, peas and pancetta, or I'll substitute toasted pine nuts occasionally, over pancetta, depending what I have in the house.

One of my favorite things to cook & so many different variations & options . The first few times i made it wasn’t exactly wonderful but practice makes perfect with risotto. Is it traditional to add butter at the end or is that an American addition?

Yes Risotto definitely takes a little bit of practice but once you get it it’s delicious. Finishing with butter is definitely American.

all good until you added whipping cream. no need for it. just use cold butter and parmigiano off the heat and it will become creamy and tasty. also arborio rice is like the "weakest" for risotto. try carnaroli or vialone nano, they have more starch and firmer texture.

I’m not a nouveau cook, but I’m still haunted by making risotto LoL. I have the Arborio rice and the chicken stock, all the ingredients, but, I am still hesitant. I ALWAYS love trying to cook new things, but this is one I can’t mess up. On a personal note, I cook for my mother who has stage IV cancer so if it doesn’t come out right, I need to scrap it all and make something completely new and different and by then, she’s lost her appetite. Ohh I love risotto but it’s daunting as hell!!!

Arborio rice to make Risotto. This guy gives some good hints but just makes the basic rice without mushrooms, chicken, or other things you can put in it. Andrew really likes it but like I said, I’ve never made it. Sounds good. There is a recipe on the rice container.

Random but the best risotto I ever made was from frozen stock. It literally melted into the pan with the rice at just the right pace.

Me neither. When it’s al dante, turn off stove. Add butter and parmesan. Close the lid without stirring. Wait about 2-3 min. Then open the lid and stir it. Done

I know you commented a while ago but just in case anyone else was actually looking for an answer... all of the alcohol in the wine will cook out during this low and slow cooking process. The wine is added for flavor. Totally safe for kids too!

What's up my friend, thanks for the sub. Yes, essentially butter is whipped cream so I wanted to try and make it super white with the cream! You can absolutely sub out the cream for butter.

@@lorannegrech2614 Loranne..... Se sei italiana la ricetta la sai già. Se sei inglese la ricetta te la studi sui libri di cucina. Scherzi a parte: Non si usa l'aglio, i tipi di riso per risotti sono Carnaroli o Visione Nano. MAI usare la panna, ripeto: MAI. Ora la corretta esecuzione: Mettere un po' di burro in padella, farlo sciogliere a bassissima temperatura (il burro non va MAI bruciato), aggiungere una modica quantità di cipolla tagliata finissima e farla appassire senza mai farla bruciare. Successivamente aggiungere gli ingredienti che si intendono usare per la preparazione del risotto (verdure, carni stagionate, pesce, crostacei....ecc... Il risotto si può preparare con tantissimi ingredienti). A questo punto si aggiunge il riso e si lascia tostare in padella assieme agli ingredienti scelti (pertanto gli ingredienti devono asciugare a sufficienza prima di versare il riso). Il riso deve tostare ma assolutamente non bruciare!!! A questo punto si versa mezzo bicchiere di vino bianco secco e si lascia evaporare l'alcool, dopo di che si versa col mestolo il brodo (VEGETALE) che servirà per cuocere il nostro risotto. Il riso deve essere sempre coperto dal brodo, mai lasciato all'aria. Si continua fino a cottura del riso ultimata aggiungendo A QUESTO punto il sale che si ritiene necessario. Tenere bene a mente che il riso continua a cuocere anche a fuoco spento e pertanto va levato dal fuoco quando ancora é abbastanza sodo e poco cotto (continuerà a cuocere da solo. Ora la mantecatura: si tratta del procedimento che consente di ottenere il risotto cremoso e gustoso che tutti desiderano. Si leva la pentola dal fuoco e si versa al suo interno un po' di burro e di parmigiano ( in quantità proporzionale al risotto), si mette il coperchio alla pentola e si lascia riposare senza toccarlo per circa 5 minuti. A questo punto il risotto é pronto. Soddisfatta???? Non è difficile, basta seguire delle semplici regole senza inventarsi cavolate come ha fatto il tipo nel video.

actually real italian risotto is made of vegetable broth so you can just put some onion, carrots and celery
