Old School Spaghetti
2 pounds 80/20 ground beef (you can use ground turkey)
1 package spaghetti noodles
4 tablespoon kosher salt
1/4 cup green bell peppers, chopped
1/2 cup yellow onion, chopped
1 6 ounce can tomato paste plus one can reserved spaghetti water
1 16 ounce jar tomato sauce
1/2 cup reserved water from cooking spaghetti
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon ground black pepper
salt to taste

Looks delicious 😋! I also break the pasta in half to make more spaghetti 😂 The only 2 ingredients I don't add. But will start adding is tomato paste and bell pepper 😃

My mom never made meatballs; always meat sauce like you. The other thing she did was she would combine hamburger and sausage instead of just all hamburger. She also did that with her meatloaf mixture. Added some extra flavor and spice! Yummy!

Pam, I have a tip for you and your viewers. It is much easier to get the tomato paste out of the can if you open both ends. Then just remove the top and push on the bottom to push the paste right out. You can't use the can to measure the water, but it's so much easier.

My Mom made the best Sicilian sauce that nobody in the family can duplicate. So I developed my own with traditional Sicilian ingredients. I have several levels of sauce that go from simple no meat "salsa putanesca" to standard beef and tomato with peppers, onion, garlic and spices, to my favorite 4 meat 8 veggie super spiced sauce that costs me almost $20 per quarter to make. It's great to know a lot of recipes.

I took my Nana's recipe and perfected it. I don't use canned sauce, I use lots of fresh garlic, fresh basil, fresh oregano, black olives, sliced mushrooms, fresh tomatoes peeled or a large can of stewed tomatoes- pureed, a little brown sugar and I use hamburger and ground sausage. After you add your pasta and bring it back to a boil, turn it off and cover with a lid for ten minutes, perfectly al dente everytime. Can't stand my pasta mixed in with my spaghetti, so I put the pasta on the plate, then the sauce on top and garnished with shredded cheese, raw onions (I love onions 🤣) a dollop of sour cream and Red pepper flakes. YUMMY 😋, I'm going to have to make spaghetti for dinner tonight now! 🤣

Thank you Pam for this memory loaded spaghetti dinner. My mom broke the spaghetti too and the dinner was delicious!!! We siblings would sit at the table 'slurping and laughing' enjoying that meal. And an added plus, if there was any spaghetti and meat sauce left over, it was super delicious the next day!!! Girrrrl stop, you're taking me back!!! I am there!!! 💯 PJ

I always fix my spaghetti similar to this. I usually use extra lean ground beef (96/4 or 97/3) so no draining necessary. I also typically use tomato sauce and season it appropriately to make my own sauce. I also don't use as much salt due to dietary reasons. But this looks great. And mixing it in advance with the pasta reminds me of my mom's spaghetti that I used to eat with sliced bread. Reminds me of my childhood in the 70s (yes, I'm old lol). 🍝

My mother cooked the spaghetti the same way with Ragu sauce, she never mixed the cooked spaghetti into the meat sauce. The meat sauce would be served on the plate on top of the spaghetti. When I got older , I just mixed the spaghetti into the sauce and started using Bertolli onion, garlic and basil pasta sauce. I also added Italian sausage out the casing to the ground Turkey (instead of ground beef, healthier option) . I also include red peppers with green peppers & sweet vidalia onions . Also include diced tomatoes (unsalted) and use pink salt in boiling pasta water too, since I have high blood pressure & my husband. Ground Back in the day , I enjoyed mom’s version. But today I revised the recipe for more flavor and my family enjoys it. Sometimes when I have time on a weekend I will make homemade sauce with large can Crushed tomatoes, small can unsalted tomato sauce , red cooking wine, onion & garlic powder, basil, diced unsalted tomatoes , oregano, Italian seasoning, a little pink salt, pepper, raw sugar (tablespoon) , tomato paste , red / green peppers, vidalia onions , minced garlic , drained browned ground turkey/ Italian sausage added in slow cooker for few hours. It turns out delicious & after slow cooked I add the cooked spaghetti in crockpot and stir together. Comes out delicious, especially next day leftovers! 😊❤️

I'm 82 and remember my mom making spaghetti exactly the same way and we were a family of 9. I never liked green peppers or onions per se, but I cook with them.

My mother never made a meat sauce, she cook the ground beef and spaghetti noodles, then she mix them up and poured the spaghetti sauce in mixed everything up then put it in the oven to bake. We've always ate cheese on our spaghetti too. My grandmother cooked her spaghetti like Miss Pam, I'm sure her mom and my grandmother are of the same generation.

I reserve the pasta water and I never rinse my pasta after cooking, unless Im making a cold pasta salad. Package cooking directions can result in mushy pasta--so it's best to start checking for al dente texture at 6 minutes for angel hair /thin pasta, and 8 minutes for spaghetti and others. Bow tie pasta can take even longer. Your dish looks amazing!

Thank you. I rinse my pasta only when it will be a while before I can incorporate it because rinsing in cold water stops the cooking process so they’ll stay Al dente

@@CookingAtPamsPlace When I worked in the kitchen in high school ('82) for my extra credit..the cooks would throw a whole lot of butter into the noodles right after they were cooked to keep them from being sticky...and, lets be honest, it made them taste delicious. Cooking for that many people in those giant pots took pounds of butter and it smelled good as it melted into those noodles.

Man, did we grow up in the same family!!This is exactly the way I learned to make spaghetti! There is one difference though. I always sautéed the veggies first. However thanks to your video, I won't be doing that anymore...one less step! Thank you.

For some reason, I find it interesting watching a lefty cooking. There's something fascinating watching them chop and prep because it's done on the opposite side that a right-handed person. I often wonder if cutting utensils and other cooking stuff are hard to find for left-handed cooks.😊 This looks delicious.

Your video brings back childhood memories. My beloved Mother used to cook spaghetti with ground beef, too. Only difference is, my Mom used to season the beef before she cooked it in the pot. Old school, but of course, my Mother's spaghetti and ground beef was the best! She used break the spaghetti in half, too! I miss her so much! ❤️😘👵🍝😞

My mother-in-law taught me how to make spaghetti and chili from scratch. I did make changes to spaghetti adding carrots, zuccini and mushrooms. Both were cooked in crock pot for 4-6 hrs on low. Delicious 😊

Back in the day we didn't have Ragu and Prego. We had to make gravy with canned tomato paste and canned tomato sauce and it was always meatballs. Your way is so much easier.

That's how my mother made it and sometimes she cooked Italian sausage with the meatballs. She started it early in the morning. One of us kids had the job of grating the parmesan. They also called it gravy and we didn't call it pasta, it was always macaroni.

LOL - I had a good laugh when you said that this spaghetti was served with fish we had macaroni and cheese. Looks like there were a lot of mamas and papas (and grammas and grandpas) thinking ...we have to stretch this meal. Funny, when ever I have fish, I really want some macaroni and cheese. Great recipe! Thank you Pam for teaching us your mothers old fashioned spaghetti. One tip my mom taught me that I still use - when draining fat, use an empty can to avoid clogging your pipes or worse contributing to fat burgs in the sewer system. Helps not clogging your arteries too. I keep the can under my sink until it’s full to throw in the garbage

Pam you and I are kin. We had spaghetti and fish every Fri. Our recipe is almost the same, except we add fresh garlic and chilli powder to the sauce. The other thing is we use 98% fat meat, So you never have to strain it. IT has very little to no grease. Awesome Job Sis💕

That’s my grandma’s spaghetti! From the broken noodles to the green pepper and the can of paste “to thicken that watery jar sauce” only difference she didn’t drain the grease off “we can’t be wasting that” she passed in 1990 and this warms my heart. Leftovers would be fried in the skillet with butter - was the best! Thank you for the memories

My mom made it a lot like that. She put in garlic and oregano and onion powder. One can of diced or crushed stewed tomato and the tomato paste. A teaspoon sugar, salt pepper, a bit of oil in the drained spaghetti to keep it from sticking together, and a bit of soy sauce or Worcestershire sauce. It was so good.

hey Ms. Pam, you can also brush olive oil around the top rim of the pot before inputting your water and it will not boil over. I also use the spoon sometimes. Both work great.

We didn't have "lunch ladies" when I was in elementary school, we had ladies that really cooked and made everything from scratch. This was one of my favorite things they made.

So glad I found your channel.thank you for sharing your recipes. I tried making my pasta the way you shown us on your short video. I now boiled my pasta for 3 minutes and letting it stand for 10 minutes. Perfect pasta like you said.

Hi Pam. Nice to learn from all your wonderful videos. I especially love your tips. Your method of wrapping lettuce has saved me a lot of money. It’s also wonderful to save seeds from your grocery store vegetables. I watched a video of saving green pepper seeds vs. any colored (ripe) pepper seeds. He demonstrated by planting them in soil that only the colored pepper seeds came up because they are ripe. A green bell pepper won’t germinate because it’s still green. It’s not mature enough. It’s normal ripe color is red and these will germinate but not the green because they are not mature enough to grow. At least that’s what he said and demonstrated on his KZfaq video. So I quit saving the green ones and only save red, yellow, orange or Aloha ones.

My mama always taught me that one of the main reasons to add salt to pasta water was to add it at the very beginning, because it would help it boil faster! And then oil to keep it from sticking together. She taught me (grandma's recipe) to saute the vegetables first. It's funny how family recipes differ so much. And yet this looks just like what we had. We always rinsed out the cans if water was added, to get every last bit. I'm a vegetarian now, so I just make it with either a bunch of different chopped up veggies, or if I want it like I grew up with, I use veggie burger crumbles. Super nostalgic comfort food. We always had ours on Saturday nights, with breadsticks from Stroehman bakery outlet in town. Once in a while for a treat, we'd hav either chunks of sweet or hot italian sausage in place of the ground beef (or alongside it). Then we'd watch TV together. Thanks for this, and for bringing the memories! Edit to add: I have British friends, and I've since found out that they have the same thing, but they call it "Spaghetti Bolognase", or "Spag Bol". It's a common food for some for "tea" at 4pm. Just a sauce with a lot of ground meat, just like this.

Following Grandmas recipe, you can’t go wrong. And the cast iron skillet is the only thing you need to cook anything. Grandma always said, if it smells good, let it be and the only sound you hear is…..oh my goodness, this is delicious then, it gets quiet 😁😁😁 Auntie Pam, I can hear my Mom and Grandma saying “pay attention” when I watch your videos

Mmm. That looks just like my mama used to make it. It looks absolutely amazing. The only thing a little bit different is that we would sauté the onion and bell pepper first and yes we always use the green bell pepper. We made sure the pasta was al dente we drained the fat just like you did from the meat, my mama added that can of tomato paste and the jar sauce and we added a little bit of Parmesan and basil, Italian seasoning, garlic powder, and onion powder, very delicious

I am a women but not really much of a cook. I mainly only know how to cook really basic stuff. I'm talking things like ramen or french toast types of basics. I like your style. The first time we had it we had spaghetti and meatballs. The next time we saw it was on Friday with fish as dry spaghetti the way you made it. My mom would break up the meatballs and mix everything together like you did. So that one meal became two. Meat sauce over spaghetti and dry spaghetti with bacon on top. Yum!

Hi Chef Pam, your spaghetti is pretty much the same as the way my mom taught me. You're right. A person should drain their meat and pasta. The meat juice has grease. The pasta has all that salt, and that is not good for people with high blood pressure. My mom has to stop putting salt in the water. No matter what, she did her blood pressure was still high. Eliminating the salt at this step helped a lot. Thank you for sharing. Hope you have a great day.😊

My Mom and everyone else’s Mom must have been neighbors-she broke the pasta as well, it helped stretched it out, enjoy your video’s, I love the tip on the spoon on or across the top of the pot!! Blessing all who visit you!!

I too because this recipe the same when I was growing up as a child and I also remember in the school that I went to the cafeteria ladies cooked this recipe I had completely forgot about this spaghetti. Thank you for bringing it back. And congratulations on both your channels!

That's exactly how my Momma taught me too i also add freah garlic to mine and sometimes put in cut up country style ribs too or Italian sausages 🤤😋
