pro tip: for crisping up pork crackling - just put in a microwave at top power, small 20 second bursts. not only will it reliably save rubbery crackling, but it also nicely renders the under-fat. great video man

This looks fantastic! I'll keep an eye out for calamansi because it sounds super interesting. For your corn, I'd suggest frozen over canned if that is available there. It will have a much better texture/flavor for a salsa than canned will.

I had some Sisig in Cebu they blew my mind. They serve it with a garlic chili vinegar sauce that really cuts the fatty pork and makes it more delicious. You can make this with pork shoulder too but in PH they use pork jowls.
