The BEST Green Tomato SALSA!! - Salsa Verde Style!

We have an overload of green tomatoes so we put them to use by creating salsa verde which was preserved. This will allow us to enjoy it throughout the year.
Thank you for taking the time to watch.
* RECIPE to make 3 Pints*
Ingredients
7 Cups chopped cored and peeled green tomatoes
5-10 - Jalapenos, seeded and finely chopped
2 Cups finely chopped red onion
2 cloves of garlic, finely chopped
1/2 cup of lime juice
1/2 cup loosely packed finely chopped cilantro
2 tsp ground cumin
1 tsp dried oregano
1 tsp salt
1 tsp fresh ground black pepper
- Directions -
1. Prepare canner, jars and lids
2. In large saucepan, combine tomatoes, peppers, onion, garlic and lime. Bring to a boil over medium high heat, stirring constantly. Once at a boil, stir in cilantro, cumin, oregano, salt and pepper. Reduce heat and boil gently, stirring frequently for approximately 5 minutes.
3. Ladle hot salsa into prepared hot jars, leaving 1/2 inch headspace. Remove air bubbles, adjust head space if necessary by adding additional hot salsa. Wipe rim, center lid, screw on band to finger tip tight.
4. Place jars in canner, ensuring they are completely covered with water. Bring to a boil and process jars for 20 minutes. Remove canner lid, wait 5 minutes, then remove jars, cool and store.
5. Once cool, grab some chips, dig on in and enjoy!!!!

I’ve been contemplating what all to do with my green tomatoes that didn’t ripen. I just made a huge batch of this and damn it’s good! Added just a bit more salt and a couple Serrano peppers to kick the heat up. Most excellent!! TY for the recipe Rocky Creek!!

Congratulations! This is the first video that actually followed the Ball recipe because you peeled the green tomatoes as recommended. I can't tell you how many people that don't peel them. It is necessary to remove the bacterial load that comes on the skins.

Great, hope you like it. Another easy way to peel is to roast them in the oven, skins slide off easy then. I’d add more jalapeño in the future but other than that we’ve really enjoyed it.

Your channel just came up on my feed. I looked through your videos. Can't wait to watch them. I will be making pickled green tomatoes slices and green tomato salsa this week. For the salsa I plan to roast my green tomatoes, onion and garlic for about 15 minutes @450°F. Your kids are so cute.

I don’t know how I came to have it, but one of those tomato core gadgets was in my utensil drawer. I works just great! I had a great tomatoes this year, and the season is winding down, and there will be a passel of green tomatoes in a few days.

I made 12 batches splitting it up with different amounts of heat (jalapeños ) due to different members of our family Liking different heats and I have to say they are all yummy. The peeling of tomatoes is the time consuming part. After that it went fairly quick. I’m very pleased with it so hope you like it as well if you give it a try one day.

It’s really a preference thing. I don’t care much for how the skins turn out once the tomatoes are cooked. The skins seem to fall off from the tomatoes and curl. The texture of the skin pieces seem chewy. This is at least my experience when doing sauces. I’ve never tried the salsa without pealing though. The salsa isn’t cooked near as long as a sauce so it may not be as much of an issue.

@@RockyCreekHomestead oh okey. That seems like what I thought. The tomatoes skins after cooking are not nice, I agree with you. :-)) But sometimes with the recipes it’s hard to know if it’s part of the trick and because of preserving it though. But thanks for your quick answering 😊😊

Yum! I need to make some. I usually just roast the tomatillos, onion, garlic, and a mix of peppers - jalapeños, poblanos, serranos. Once they’re roasted, I put everything in the blender and add the seasonings, fresh cilantro, and the juice of a couple of limes.😋 I don’t core or peel the tomatoes. I don’t know if it affects the flavor, but my family really gobble it up. I need to make this, after all the tomatoes that I picked yesterday, due to us having our first frost. I’ve never canned. That part makes me nervous 😬.

I actually tried roasting tomato’s for the first time a month or so after making this video. I thought that was an easier process for pealing the tomato’s and I liked the flavor a little more. Your way sounds pretty cool and probably quicker. If I ever want a smoother style, I’ll have to try it.

I prefer green tomatoes rather than tomatillos. We also grow green ripening tomatoes so we have a combination of ripe and unripe that goes into our green salsa and it really rounds out the flavor nicely.

Hopefully this recipe will come out well for you. If you like more spice, I would add more peppers than I did. This came out very delicious but very mild. I would have like a little more kick. Good luck with it and thanks for spending time with us.

Here in T or C New Mexico the tomatoes are still green in October..... The heat in June July and August just nearly killed them.... Picking a lot now and will try your recipe.... A side note. I planted in April.

Once peeled I eventually did use a food processor. I just more pulsated it so that I could keep it fairly chunky. It was very good, they only change I’ve made since is I have added a bit more jalapeño to give it more of a kick. It’s all to personal taste though. Thanks for watching.

As a Yankee, it took me until minute 10 to get used to “tuh-MAY-tuh.” Definitely going to try green salsa with tomatoes instead of tomatillos now.

🤣I have family in New York and they have all kinds of fun with my accent. We ate all we made in this batch. I personally wish I added a little more jalapeño as it was very mild. Taste was great, so I can adjust heat fairly easy in the future. Thanks for watching

I find jalapeño peppers to be unreliable for heat, some are very hot, some mild. You either need to taste test each one, or alternatively, use a couple of Serrano or Thai Hot, they are reliably scorching hot. I do like the flavor the jalapeño brings, so if I have them I use them. What I did was make most of my salsa mild, for everyone, and held back 3 pints that I put the Thai Hot into.

The corer is such a simple and awesome tool. I don’t know why I didn’t get one sooner 😂. You are very correct about jalapeños. I love their flavor but it is like Russian roulette sometimes. Maybe I’ll use jalapeño for the flavor and add some of what you recommended to it more to increase heat. Thank you.

You said it was a double recipe of 14 cups of tomatoes but some of the ingredients doesn’t seem like they are doubled. Just wanted to make sure that all the recipe is for the double recipe. Was wanting to make it. Thank you.

I made a double batch in the video and doubled all of the listed ingredients with the exception of the onion. I believe I was a little less than double on that. The recipe listed should be accurate for a single batch. Many people commented saying it came out great so it should work for you. I hope if goes well if you try it and you like it.

Looks amazing. What is the purpose of removing the skins? I’ve seen recipes where some do, some don’t. I can understand removing them for tomato sauce regarding texture but in salsa is it really necessary?

It’s not necessary. Some people don’t like skin texture so it’s definitely just a preference. Definitely would be a big time savor.

I just picked 55# today, Nov 1. We had a hail storm memorial day and a hot dry summer, so everything is running way behind. Five tomato plants I Texas Hill Country...

I haven’t froze them before, but my grandmother recommended for me to freeze them in the future. She says once they thaw, the skins are easy to remove at that point as well. I used up most of mine between salsa, pasta sauce and chili sauce.

My notes say 2# tomatoes = 1 Qt. 2# = 1 Qt = 4 Cups Hope this helps

Are you referencing the one I was chopping stuff up in? If so that is a 2-4 cup capacity small food processor. It’s Black and Decker brand and I’ve had it for years. I hope that answers your question. Thanks for watching and appreciate your time spent with us.

@@RockyCreekHomesteadNo, I meant that little spoon-like thing that you used in the beginning at around 0:30. It resembled a tiny spoon but with sharp/jagged edges. :)

Oh I’m sorry, that is a tomato corer. It was only a couple dollars at my local Walmart. It worked really well. Not sure if this is the exact same one but it’s just like this www.walmart.com/ip/Tomato-Corer/50289367

That is correct, I doubled the recipe when I made this video. The great thing about salsas is you can adjust any of the ingredients to your personal liking or what you have on hand at the time. Thanks for watching and hope it comes out well for you. Take care.

I would assume it would just have a diluted more tomato flavor. I’ve never tried it though.

@@RockyCreekHomestead you showed original recipe with 7 cups of tomatoes and you decided to use 14 cups that is why I said what I said so did you find a difference in taste without changing the other portions in jalapenos and onions etc and spices

Oh 😂 sorry the video is a bit old and I can’t remember everything about it off top of my head. I enjoyed it just fine the way I did it in the video. I’ve made it again this summer but added a bit more jalapeño and a little more lime just to give it a greater kick of heat. I love the flavor of it though.
