the chinese separate the skin by using a bike pump of all things and it makes for the best peking duck and crispy skin

I clicked on the video because of the word "Crispy" in the thumbnail. Then I looked for "crispy" in the video and found squishy instead.

This is definitely not Peiking Duck. I means, it looks good itself, but like the guys said, Peiking Duck is special. And this is nowhere near the real thing, the method and the texture are miles away from the Peiking Duck. Don't even know why they call it that.

Hey Roel! Don’t we need pancakes and julienned leeks for the Peking Duck with plum sauce as well? I like the soft pancakes and the fresh leek taste with the crispy skin and juicy flesh of the duck!

I’m working through this recipe. Including the air drying (mine got done a couples hour early too so it’s in the fridge at the moment. Will keep you posted.

A tip to make the skin crispy: Take an air pump and put it under the skin, then blow it up so the skin loosens from the meat. Once you boil it it'll tighten back up but this will help it get extra crisp

When i did my picking duck i used Worcestershire sauce . Soy sauce . garlic salt . pepper some of my Dry rub and water. I poured. bowling marinated over top of that duck man it came out beautiful

I know it’s mighty tasty but it isn’t Peking Duck...not that anyone will actually care after its all gone (in about 3 minutes)! Peking duck is also sliced to provide all the skin when served - less meat is more. Peking duck is ALL ABOUT eating the super crispy skin. Never the less all gone in 3 minutes!

I think babish has one if the best peking duck tutorial/video on youtube. He included some procedures that restaurants are said to perform; but honesty that's not to be tried by everyone at home.

i wonder before it is all most all the way done cooking could you fry it like how you did with the water do it with the hot grease at like maybe 400 degrees and that would give it a crispy skin

You're missing the seasoning that suppose to go inside while it's cooking, forgot to blow air under the skin to separate it from the body to help crisp, the basting hot water is suppose to have seasonings in it for flavor and glazing.

I hunt & harvest wild ducks every hunting season. NOVEMBER to JANUARY. I usually pot roast them. They are delicious but I'm wanting to try different things as well. Making sausage ect. I'd like to see your take on Duck Confit. Wild duck if possible. I have some I harvested a few weeks ago for early September Teal season. Teal are small ducks, roughly the size of a pigeon. I was thinking I could spatchcock the small ducks & lay them flat submerged in duck fat & confit the whole birds. Possibly cook on the bbq pit or smoke them first then submerge & cook.

Looks absolutely delicious. But I must say that is closer to Hong Kong roast duck than Peking Duck. Peking Duck is cooked using particular wood for aroma and they blow into the duck to puff up the skin, which makes it crispy as it cooks in a wood fire oven. (I've had both, in HK and Beijing, just saying) :D

@@rogierdikkes Ja een wilde eend is nog niet eens de helft hiervan, ook in deze tijd van het jaar amper vet. In de winter wel meer, maar niet zoveel als deze eend, denk ook niet geschikt voor Peking eend, maar wel heerlijk als rose gebakken borstjes !

there a few key points that seperate roast duck(which what u did), and peking duck. peking duck always have their skin seperated with the flesh. only use maltose syrup and water mixture to cooking the skin of the duck, not water, as maltose brings the unique color and flavour of peking ducks. always use woodfire not charcoal fire and gas fire, cooking with really slow heat, peking duck should have a totally balanced out color and no part are darker than others. slice the meat angled and thin, the way u harvest the meat are actually similar to roast duck as well

You need to use a air compressor to separate the skin from meat. That is basic principle in making Peking Duck. Or use a straw .... old fashioned. Blow it up like a balloon. Before placing boiling water over duck. Even more crispy skin. However, that being said, your duck looked great !

This looks perfect, propper steps, right bird. But... Where's his head? You cut off his head!! LOL I keep thinking back to "A Christmas Story" where they went to a Chinese restaurant for Christmas dinner and they freaked out over the duck "looking back at them" (which is how they do it), I say give your guests the "royal treatment" and offer up the whole bird... lol. Minus the wings, of course. And I cant wait for the plumb sauce.

As a Beijinger, I would say it is a decent roast duck but far from a traditional Peking duck. 1.Instead of using charcoal, we use wood from fruit trees. 2. You need to pump air into the duck before cooking.
