Hi Tatyana! 👋 Welcome back, I missed your smiling face along with your wonderful recipes. This LEMON MERINGUE CAKE is just amazing! I LOVE lemon....lemon cakes, lemon cupcakes, lemon cookies, lemon pies etc.....😍 When you cut into this cake the lemon curd looks soooo creamy and luscious. I will be making this dessert soon, have to keep hubby happy! A quick question ~ could I use your recipe for WHIPPED CREAM FROSTING on this cake? I figured I could make this yummy lemon curd cake again with a different frosting. More lemon for another day, you just can't go wrong with lemons.....YAY ME!! 🤗 Thanks Tatyana...have a nice day! 🌷

I wish she had told us that the hot sugar syrup would deflate the egg whites. I poured out a batch because it deflated. I didn't know that it deflates and then whips back up. I ended up making a Swiss meringue instead.

@@TatyanasEverydayFood i have a genuine question, if you make a mousse cake with a Meringue outer layer, how would you torch it or will it be difficult to torch it?

@@hazimesahe Hi! I would let the mousse cake set first, then apply the meringue later. It should be just fine to torch using a kitchen torch. Keep the cake refrigerated.

Hi! Yes, this cake will be just fine in the refrigerator. If you keep it for a few days, the meringue will flatten slightly.

Hi tatyana.....I want to make this cake for my husband s office.... I need to know more abt meringues...can I frost the cake before and place it in the refrigerator.... Or shd it be done just before serving..???? In what temp this needs to be kept....n for how long.....I have read that refrigerated meringues deflate....pls clear my doubt's....so that I can give it a try....

Hi! I'm sure everyone at your husband's office will love this cake! You will need to torch it as soon as you are done frosting the cake. Since this is a Swiss meringue, it will hold its shape and won't deflate in the fridge. Once it's torched, it's more stabilized and kind of 'sealed' and will be easier to transport. You can make this cake even a few days ahead of time, just keep it refrigerated.

Hi! Thank you so much! :) Yes, a double boiler will also work but it will take longer. As long as you are stirring the entire time with a rubber spatula, it should be fine

I personally haven't tried this in the oven but you would need to use the broiler setting :)

Hi! I always, always use the parchment paper and occasionally grease the sides, but never for sponge cakes.

@TatyanasEverydayFood Tatyana, the vanicall cake recipe you used is not a sponge cake, right? Would it be okay to lightly grease the pans for extra insurance or would you recommend just sticking with the parchment paper at the bottom for the recipe? Going to attempt to make this tomorrow for a friend who loves all things lemon meringue!

@@patriciav.4274 Yes, that's right! This vanilla cake is not the same as my sponge cake. You can absolutely grease the sides a bit. I like use a starched baking spray. :) Hope you enjoy the recipe! :)

Hi, I just noticed something. In this video you say half a cup of butter (for the lemon curd) but in your book you say 1 cup :S it's a lot more butter. What is the correct amount of butter?

No, the will not melt in the refrigerator. If it stands for a few days, it will deflate a little bit. Enjoy!

This technique would work if it was a pie and you wanted to just 'torch' the top under the broiler. Not sure it would work too well for this recipe though :/

First of all, let me say that the cake TASTES delicious. That being said, it would have saved me a great deal of embarrassment if she had thought to mention that the cake is mechanically unstable. The lemon curd acts as a lubricant between the layers. The meringue has no stiffness. I baked the cake to take to church... Even driving as slowly as I could, the cake fell completely apart during transport. It looked like it had been run over by a steamroller. This cake is great eaten at home. You might be able to assemble it on location if you must take it out of the home. But DO NOT attempt to transport this cake completely assembled. It won't make the trip.

I'm so, so sorry that that happened to you!! :( did you refrigerate the cake overnight prior to transporting? Was it still that soft? I will include this note on my recipe blog post for future! I'm glad you still enjoyed the flavor!
