Recipe Card:
Ingredients:
White Paste:
Shallots - 3 small size
Garlic - 2 cloves
Ginger - 1/2 inches
Water - 1/2 Cup
Red Paste:
Malaysian Curry Powder - 5 TBSP
Red Chilli Powder - 1 & 1/2 TBSP
Water - 1/2 Cup
Curry:
Chicken - 1/2 KG
Potatoes - 3 medium size
White Paste
Red Paste
Cardomom - 3
Star Anise - 3
Cinnamon Stick - 1
Chopped Garlic - 2 cloves
Chopped Ginger - 2 inches
Shallots - 3 small size
Curry Leaves - 1 stalk
Salt - To Taste
Sugar - 1 TSP
Coconut Milk - 200ML
Tamarind Water - 1 TSP
METHOD:
1) First, we gonna make white paste, take your shallots, garlic and ginger and put it in a blender with water and blend it into a paste and set it aside.
2) Next, add Malaysian curry powder and red chilli powder in a bowl, add water and make a red paste. set it aside too.
3) Now, Take a pot, add oil. Then add cinnamon, cardamom and star anise, give it a stir.
4) Next, add chopped garlic, ginger, shallots and 1 stalk of curry leaves and cook it for few minutes. Keep stirring.
5) Next, add your white paste, stir it, then add red paste and add the remaining red paste with water and give it a stir and let it cook for 2-3 mins.
6) Now add your chicken, stir it, add potatoes mix it and add water and mix it again and put the lid on until chicken is half-cooked.
7) Take the lid off, add coconut milk, salt, sugar and tamarind water, mix it and let it cook for another 20 mins with lid on until your chicken is done.

Hello from Melbourne, such a timely, delicious reminder as I was reminiscing about a haunt in the heart of the city called Kum Den - like most places they had a string of $10 lunch specials with rice..but their Malaysian curry chicken was the stuff of dreams, this very video reminds me of so many fond lunches!

We don't add tamarind juice or sugar to chicken curry. Might be a variation

We add coconut milk at the end because we dont boil the coconut milk ,no tamarind or sugar .

Hello. Thanks so much for sharing this recipe! I made it today. I did not have Malaysian curry powder, so I substituted it with chicken stew curry powder. The dish was heavenly but it was really too spicy for me. I will definitely make it again but next time, I will perhaps use only half tbsp of red chilli powder. I suppose the red chilli powder is not the same everywhere, and maybe mine was much hotter. Thank you again. Definitely recommend this recipe 10/10

Love that this recipe does not try to simplify too much or skip steps, ie the use of "red" and "white paste" or tamarind. Nice !
