Sticky Korean Beef Short Ribs (serves 4)
2kg or approx. 4 meaty beef short ribs on the bone
2 cloves garlic crushed
1 small piece ginger peeled and grated
3 tbsp. Gochujang Korean Red chilli paste
4 tbsp. soy sauce
4 tbsp. rice vinegar
2 tbsp. soft brown sugar
100ml water
Spring onions finely sliced for serving
1 tbsp. sesame seeds
Method:
1: Seal the short ribs in a large casserole until golden, you may have to do this in batches then set aside. Discard any fat within the pan.
2: combine all of the ingredients in the pan, stirring well then return the ribs into the sauce and glaze. Cover with a tight fitting lid then cook in an oven set to 150c / gas mark 2 for 4 hours. Before serving sprinkle over the spring onion and sesame seeds.
