Goes to show that certain vegetables are best cooked in their own unique way to assure best healthier results. Some even best eaten raw for a better nutritious value.

I love sweet potatoes. The violet ones are my favourite. I normally boil my sweet potatoes whole in order to maximize the nutrient content. Just remember to pierce about 10 times into the sweet potato before boiling. :-D

I can't wait to try those. If I ever go to Japan where they're cheap and everywhere I'll definitely have some. Here in the UK I consider myself quite lucky to have regular bright orange ones =P Is there a different taste to them or are they just more fluffy when baked or something?

I microwave them - 4 minutes on reduced power. Crunchy w/ a nice bite. Delicious in salads.

Microwaves irradiate food, so you'll be losing a hefty amount of nutrients. I do not recommend it.

Here in Hawaii we usually eat the purple ones. I haven't had an orange one in years and I don't think I've ever had yellow. Also if you're from Hawaii and you are craving laulau and you don't mind having salt from time to time, I've found that they are delicious when used in place of the meat.

The purple potatoes were brought to the island by immigrants from Okinawa, Japan. You’re very lucky to have them so abundantly, they’re pretty expensive and rare in the rest of the US

I chop into wedges, massage with a little coconut oil and herbs n spices and bake until crisp at 200'C 25 mins done. Its the tastiest way atleast for me. Its probably healthier at lower temps but takes 2-3x as long. I also like steam them mash :) Pressure cooker is said to retain nutrients better than other cooking methods. Although i think raw is best because you can eat sweet potatoes raw. I blend them up in smoothies to replace carrots sometimes never had a problem.

Microwave for 6 minutes(1-2 large), works good. Unless large amount is cooked, bake it or boil it.

From a nutritional standpoint, yes, boiling sweet potatoes is good for vitamin A retention, but I bake mine specifically because I can reach vitamin A maximum fairly easily. For me, baking sweet potatoes is the way I can eat a lot of them.

I always refrained from boiling for fear of the nutrients leaching into and being tossed out with the water. Is this really something to be concerned about or does the increased bioavailability of these nutrients out-weigh it? Thanks!

Maddie Davison simply cook the sweet potato and throw the water out. and if the water is still red then bleach the sweet potato so it can be white.... or just eat a white potato and you don't have to worry about that. carotene is a good thing. what study told you otherwise?

john harvey valencia boil it until it's cooked to your liking. otherwise eat it raw if you don't mind :). this is how it goes with everything in life. what length of boiling will you enjoy it the most?

Orange ones I prefer sliced 1/2” thick and chargrilled, purple ones are best in Dr Greger’s baked recipe with balsamic date sauce and peas.. less nutrients? Just eat more of the stuff 😜

I have been eating them all winter and spring and noticed I got a lot more tanned that usual when out in the sun this summer, without even sunbathing at all, could that have anything to do with it? Like, favouring the pigmentation or something?

The thing with boiling is the sweet potato loses most of its sweetness and it becomes too soft if you're not careful with the timing. Considering that I'm eating lots of them (like 500gr/day), I think I will continue with steaming.

Just wash/scrub and eat the skin. Synthetic pesticides are much less toxic than 'natural' pesticides. Unless you're growing that shit in your backyard, conventional is the way to go. Much more sustainable too.

I microwave mine. Pierce with a fork. Microwave on high for 4 minutes, turn them over and microwave on high 4 more minutes. Done & delicious!

I'm scratching my head. He mentioned baking and microwaving separately once. Is microwaving not the same as baking? Does that mean it doesn't drain the Vit A like baking? I want to get one a day in by microwaving it (only daily option) and would like further elaboration.

David McClelland microwaving is not the same as boiling however if you put water in the microwave and put the sweet potato in the water then the water would boil and cook the sweet potato thus you have a boiled sweet potato. DUCY?

A A That's not a good comparison because microwaving is still microwaving whether you put water around it or not. It's still exciting the hydrogen molecules inside the potato so it's still microwaving.

If you watch the video carefully the graphs have microwaving results - and they are very similar to the boiling results for antioxidants, just slightly worse. Not sure on the cell membrane stuff but microwaving is generally more like boiling than baking no? I believe microwaving is actually on average the best way to cook for antioxidant retention according to a Nutritionfacts video on cooking veges that is more recent.

WOW, this is news to me! I have always thought boiling leeches out the nutrients so this is a revelation to me. How yummy to make mashed sweet potatoes with some cinnamon. (I'll monitor my consumption of the purple ones 'cause a purple nose would be even more noticeable than an orange nose!!)

Boiling does reduce nutrients, but baking can break down *some* nutrientes (some fats and antioxidants). This video is only about antioxidants, but boiling makes them lose a lot of potassium.

I put the sweet potatoes in the😇😇 oven covered with aluminum foil.when l see that the potatoe is not very hard or very soft list l put a little olive oil or coconut l put spi y and cinnamon is delicious

Yes, the Raw food diet is fine indeed! I am a Raw Vegan myself :) and a Family Nurse Practitioner.... Raw vegan lifestyle is growing of course there arent as many as there are Vegans in the USA which is over 21 million! But, saying that yams or sweet potatoes have 'never' been eaten raw is very untrue. Eating raw sweet potatoes is quite common among raw foodies. But my question was' how does raw (sweet potatoes) compare to cooked' (in health benefits, the topic of the video). But someone has already pointed out that Raw Sweet Potatoes show the highest in health benefits on the chart in the video, I missed it :) You should try raw Garnet Sweet Potatoes, they are as sweet as candy and my favorite :).

Marcella Smith 21 million? I wish that was true. According to a 2011 poll conducted by Harris Interactive, about 2.5 percent of Americans are vegan, witch is around 7,5 million. And I don't think that's the real figure ether, its probably less than that, but its rising, so we will get there.
