Would be interesting to see how you do the microbevel. I mean how to sharpen the back convex and blend it in to the not convex tip. Anyway thanks for showing that technique

Nice clear instructions for this intro to "distal bevel" if you will. I've talked with Naoto about this before, and it has made a noticeable difference in the cutting ability of several of my VG10 knives. I haven't tested this with higher rockwell knives yet, but so far my knives in the 60-61 range have benefited tremendously from this technique.

Very similar to what you see see on a Hado or Tanaka x Kyuzo. Certainly makes for a tip that glides though onion and the like.

Nice info. I agree with the thinning of the first 1/4-1/3 rd of that knife. Especially for vegetable use. Definitely hit rods the cutting ability. Those diamond Naniwa stones are costly. Thanks

Interesting. The concept certainly makes sense for push cutting. I've done a fair bit of thinning on modest knives that needed a performance boost but never even thought about this idea. I'm working on other skills so for now I'll file it away.

I’m pretty sure this is the knife that arrived for me today. Third knife from knife wear, but this one was a laser out of the box, no need to polish the edge.

Is there water on the wheel or its just slow enough you don't worry about overheating, or i would just be curious what you have to say about that in general.

It has water! There's a reservoir under the wheel and the spinning action pulls it up onto the stone.

i have a teruyasu fujiwara 240 gyoto to thin out, but i will not risk too deep scratches...

Instead of sharping i would say you are changing the geometry of the knife more.

That's a good point! In Japan this is still considered sharpening, so we call it that as well!
