You got it! That's exactly what you do. Just bring a precut center dowel with you and it goes easily into the hole left by the center rod.

Thanks for the question! You'll insert your perimeter dowels as normal, but leave out your center dowel. You can insert a precut center dowel into the small hole left by the center rod once you remove the cake from the CakeSafe at the venue. Some bakers were trained to build their cakes on a center dowel, if you don't want to change your method, you can simply put your cake a bit off center in the CakeSafe so the center rod does not hit your perimeter or center dowels.
