Wendy you have chosen, A recipe that's authentic Goan, No cuisine is complete, Without the mouthwatering Ambotik. Curry powder is turned into a paste, Now I can relate to the taste. Tamarind juice and vinegar, Combined together. Curry paste is cooked on a simmer, Till the prawns are added for flavor. Oh, my goodness, This is gonna be delicious. Genica, I use red wine vinegar in Goan cooking cause I find it’s the closest in taste to Goan vinegar, but if you do not have it, you could always substitute with any vinegar that you have on hand.

Hi Wendy. I don't eat shrimp or any shell fish, I wonder if it's just as tasty w/beef or chicken or just vegetables? Red is your color and I bet hunter green is too and white. Curry looks so delish.

Jill you could use any fish that you can eat. In fact, Ambot Tik is popularly made with baby shark fish. I’m sure if you make it with beef, chicken or veggies it will still taste as delicious 😋. Thanks Jill, you are so right 😂red, green, white and royal blue are my favourite colours😜 ♥️

The closest substitute is the Sri Lankan cambodge - sometimes called Malabar tamarind. Or, you could use tamarind, dried mango pieces/powder (amchoor) or vinegar. You could even use fresh raw mango or bilimbis if you have access to them.
