To celebrate the Mid-Autumn Festival, I am going to show you how to make the classic Cantonese style salted egg yolk and lotus paste moon cake (蛋黄莲蓉月饼). It is my all-time favorite, no matter how many new styles of mooncake filling comes up every year on the market. This is the star. It has the perfect balance between the savory taste and sweetness. The skin is nice and soft. Very satisfying when you bite into it. As a Chinese, this is not just a dessert for me. It is also a symbol of reunion. Making mooncake does sound very challenging.
INGREDIENTS FOR THE WRAPPER
250g (2 cups + 3 tbsp) of cake four
135g (6.5 tbsp) of inverted syrup or liquid honey
50g (3 tbsp +2 tsp) of vegetable oil
3g (1/2 tsp) of salt
13g (2.5 tsp) of Lye Water
INGREDIENTS FOR THE FILLING
155g (5.5 oz)of dried lotus seeds, soak them one day in advance
0.5kg or more water depends on what cookware you are using
80g (2.8 oz) of vegetable oil
130g (4.6 oz) of sugar
3 g (1/2tsp) of salt
2tbsp of cornstarch +2 tbsp of water
24 pieces of salted egg yolk
OTHERS
1 fresh egg yolk + 1 tbsp of water
A spray bottle
A brush
INSTRUCTIONS
In a big mixing bowl, combine 135 grams of invert syrup, 50 grams of vegetable oil, 13 grams of lay water, and 1/2 tsp of salt. Mix thoroughly.
Add 250 grams of cake flour then knead into a soft, playable, and nonstick dough. Wrap the dough with a plastic film and rest at room temperature for 3 hours.
Soak 155 g of dried lotus seed 1 day ahead. Drain it and check the seeds to remove the green sprout in the center, which is extremely bitter.
Add the lotus seeds and 500 g of water to an instant pot. Set it at porridge mold and time it for 30 minutes. You can also use a regular pot to simmer them but it will take hours until the seeds to get soft. Once it is done, the seeds should be very soft and creamy.
Blend the lotus seed into a puree. Pour the puree into a non-stick frying pan. Add 80g of vegetable oil in 3 batches. Stir until the oil is absorbed.
Mix 2 tbsp of cornstarch with 2 tbsp of water. Add it to the puree in 3 batches.
Add 130g of sugar and 1/2 tsp of salt. Stir over low heat for 20-30 minutes until it turns into a paste.
Transfer the lotus paste into a bowl. Let it cool and divide it into 12 even pieces (Each one should be about 42-43g)
Bake 24 pieces of salted egg yolk in a 300 F oven for 6 minutes. Set it aside.
The wrapper dough is rested for 3 hours. Divide it into 12 even pieces (each one should be 35g).
Now, we have everything ready, let’s wrap the mooncake.
Take 1 portion of the lotus seed paste. Flatten it in your hand. Put 2 pieces of the salted egg yolk in the middle. Carefully wrap them.
Next, take 1 portion of the wrapper dough. Flatten it in your hand as well. Don’t use a rolling pin because it will stick to it. Once the wrapper is about 4-5 inches in diameter, place the filling in the middle and wrap it carefully. Roll it into a smooth ball.
Lightly cover the ball with some cake flour. Carefully put it into the mooncake mold. Press it down until you feel that you can not go any lower. Stay there for 15 seconds to establish the shape. Then release it.
Preheat your oven to 335 F. Spray some water onto the mooncake before you put it in the oven. Let it bake for 8 minutes.
While waiting, quickly mix 1 egg yolk with 1 tbsp of water. Take the mooncakes out of the oven. Brush the egg yolk mixture onto the surface.
Stick it back into the oven. The same temperature, bake for another 8 minutes. Take it out again. We gonna brush the second layer of egg yolk.
Put it back into the oven for another 6-10 minutes. Every oven is different. You should stay next to the oven and keep an eye on it. The filling is already cooked so you just go by the color. Mine took about 7 minutes.
Put the mooncakes in a sealed container at room temperature and wait for at least 2 days. During this time, the skin will become soft, moist, and shiny. The lye water will change the color, make it darker, and much prettier. The aroma will become stronger and smell better.

I completely agree! Never in my life have I been inclined to make moon cakes, since they're not super expensive and plentiful, but after this video my mold press has been ordered and I'm ready to give them a shot. Definitely love seeing these highly detailed videos, especially when they cover why and why not certain methods or products were chosen!

I love your recipes because you put the ingredients list and measurements in METRIC. So many recipes out there are made by Americans or only give imperial measurements and I can never know what that translates since it has so many different conversions online. If you have a local Chinese Grocers they always sell them there right before the Chinese holidays : Chinese New Year and Moon Festival ... that is usually in September but I don't know if they do another one in March . They're really good I love them but always did wonder about the recipe and so I am so grateful for her to painstakingly explain everything in detail . Those little cakes are very dense and heavy and therefore very filling

probably store bought mooncakes tastes different from homemade. I used to love pirozki and pelmeni made by my mom and aunts in childhood. But now that I live separately, I hate the taste of supermarket/store bought pirozki and pelmeni they taste completely different, nothing like from my childhood.

My sister works for a Chinese financial institution, and every now and then the employees are given free souvenirs and snacks from China by their employer. Whenever she brought mooncakes home, it is always me who have taken a large portion of it because it's so good. I especially liked the lotus mooncake and the one with red bean filling (I don't really what they're called...) So good!!!

I followed this recipe to make my first mooncakes ever. I couldn't find salted egg yolks so I made my own and they ended up a bit flat. The irregular shape of them being stacked up made it hard to wrap and press. The odd shape left me with a couple air gaps after baking. I used honey and bought lotus seed paste since it was available and the seeds weren't at the Asian supermarket. The dough turned out excellent! The lye water did even out the colour making it golden and glossy. The kids enjoyed the pastry but were a bit unsure about the lotus seed paste. They asked me to make it again with the pineapple filling from your other video. Thank you for your expert guidance! I think this will become a family tradition.

I made this recipe (with different fillings) -- it was my first time making mooncakes and they came out perfect. I 100% recommend this recipe. Follow all the measurements to a T and you'll have no difficulties.

Thank you for the detailed step by step guide. Being in Malaysia. I am spoilt by the hundreds of choices of mooncakes on sale... but none is better than baking them yourselves. I baked the mini ones. the egg yolk is THE star.
