Hi Mary. Its day 7 of my starter. Its risen and bubbled beautifully from day 3. I've used it twice. Both failures. 1st one was a recipe from a girl on you tube. Soft bread. I've never been happy with my strong bread flours. On her recipe she used powdered milk. I already use milk honey and butter or sometimes olive oil. It was a very sticky dough (AP flour). I couldn't even use half of the recommended milk. I kept adding flour. It came out very dense. So from the same 5th day starter I made my normal dough with strong bread flour. I've taken few photos of my day 7 starter. It looks perfect to me. Smells slightly pungent as its supposed to. Also taken photo of the 2 failed breads. There was no rise in both of them like you get with yeast. Please tell me. What I did wrong. I have not discarded my day 7 starter & put it aside. I am not giving up. Maybe I put too much? I been using 1/2 measuring cup. This time I needed both with my hands instead of throwing everything in the bread machine. Was 1/2 cup starter too much? Another question I have please is about storage from tonight. I'm planning to use it once a week. I have taken the rubber ring out of the jar so that the starter has breathing room. Should I keep that out or put that back on and tight close when storing in the fridge? I want to share my failed breads photos with you please. Where can I do that? ***** Saw your video ( a bit late) how to make a no knead sourdough bread, I fed the starter last night & now going to make it the proper way. Sorry, all new to me. I should have watched the video how to use a started in your bread. All I did was added 1/2 cup starter. I should have rised it first. Oh well. Hopefully, I will eventually succeed.

I heard that you have to use unbleached flour for it to work. Is this right? I also watched an Italian man who used honey in water to start and in two days he was able to use it. Don't need to wait a week.

I have a little pointer for you. Instead of throwing away the half you keep separating just do the same to it as well and make 2 or 3 batches at the same time. They will all finish at the same time and you can put them all together at the end of the process.

Okay. This worked so well. However, this is all I’ve been doing and eating. Sooo I have decided to start homemade yogurt for the next venture. I have gained 7lbs just from the bread. 🤣🤣🤣 wish me luck in my diet. Lol. I’ll have to start this over when I am able to control myself. My bread and I have a love hate relationship.🤣🤣🤣

Hi Mary, thank you for the clear directions. I've started my sourdough and I'm into day 3 - discarding twice a day. Last night and this morning I saved the discarded dough and made something like a crepe. It was so easy I wanted to share it with you and your viewers! One cup of discarded sourdough (1/2 cup last night and 1/2 cup this morning) with one egg and a tablespoon of sugar. I whisked it and cooked it thin like a crepe in a buttered non-stick pan until it was dry through and through. It folded and acted like a crepe - nice and elastic. I spread nutella in one of them and sprinkled sugar in the other. They were delicious!

Same with me, I was mentally ready for over a year, maybe two, but as soon as I saw this video, I paused it, went to the kitchen, did it. Day five, the strter was all bubbly, perfect smell, I couldn't throw it away, so I baked with it, but I didn't know, it has to be a month or more mature to use it, oh well, we learn.

She is too sweet for that & will not reply negatively so drop it, I could picture you in school, you were the bold bully who liked to pick on weak kids, am I right? If she is making you drowsy, theres better things to watch and fall asleep to, not indepth videos full of information like this for you.

Today I made an even easier, more delicious, savory flat bread out of my discard. I poured the sourdough batter right onto the frying pan (over a teaspoon of oil) and cooked it like a pancake. While the top was still wet I sprinkled chopped chives and salt flakes all over. When it was dry, I flipped it over. I kept it on low heat until both sides were crisp and golden. What a delicious savory snack!

Mary's Nest Question, why do we have to discard sourdoughs everyday. Just to acelérate the fermentation?

@@KatiaContigoEnLaSalud You need to continue feeding it so it doesn't die. And if you don't discard some of it, it will be too big. The yeast is alive and needs to eat.

Day 52 of isolation and sourdough has become my obsession. I’ve watched so many videos on how to start and all have failed 😞 You are the first to discuss water! I’ll start again today and I’m not leaving isolation until I produce a loaf of bread. Thanks Mary, you’ve given me hope 🥖

Been isolating and making my own bread sine the beginning of March...I too have become somewhat obsessed though I've always wanted to make my own starter,just never had the time but now that I'm not working it's the perfect time to do the things I never had the time for😃so I guess there is an up side to isolation but I am going a little stir crazy

@Taiwo Omotosho no lol Bread must be 50% wheat, whether refined (white) flour or whole wheat flour. Otherwise you won’t get gluten development which is why the bread rises.

I remember “Herman” our starter. When we fed Herman we took 1/3 to give to a friend to begin their starter, we used 1/3 in our recipe, & used the last 1/3 to feed our starter.

Oh my, Hermann was a long time ago. In Germany he was "THE thing" in the late 70s/early 80s. It was fun until you ran out of friends to share Hermann with :-)

Thank you for sharing your Pioneer old school way of measuring for sourdough starter. IMO, that's all that's really needed for the common, once a week home baker of bread. All those other instructions are geared more for mass-production bakeries that have controlled environments unlike our homes which vary both in temperature and humidity. I have found both those variations to have some affect over the outcome of my bread making. I oftentimes think back onto the prairie days and gold mining days and heck all the way back to biblical days, the bakers of old never relied on a kitchen scale but rather relied on reading the consistency of the starter and the bulk fermentation and adjusted accordingly. They also had the benefits of the knowledge passed on by their mothers and their mother's mother and so on and so forth. Unfortunately, that generational knowledge has almost become obsolete. Thankful for no-nonsense people like you that kind of knowledge IS being passed on. So thank you for sharing it with us!

That was such a great story about the miners! I have actually spilled little blobs onto the cabinet and missed cleaning off. It dried and I had to scrape it off. Starter, after it has been going for awhile, is really gloopy and sticky. It is amazing stuff! Thanks for another great video!

Hi, I like the tip you gave for storing long term some of the sour dough starter, ie, drying a thin layer out for dry storage. I had not heard anyone else suggest this. Also, your knowlegde of the biology of the bacteria vs the yeast is very helpful. Thanks so much. So far I have a decent starter after 6 days. I fed it again and hope tomorrow I can find some flour and get baking. I have been using the discarded portions for pancakes and if not very bubbly at the early stages, I just added a bit of baking soday. I use buckwheat for the pancakes. Thanks for the big effort of producing this video.

I made the 1 2 3 sour dough the other day and if I had used parchment paper instead of wax paper, it would've been perfect. This particular video is the best one on the internet to help someone wanting to start baking sourdough. You are, without a doubt, the most thorough and easy to understand tutorial I have seen on KZfaq for sourdough starter. And honestly, I have probably watched close to 100 videos on this. I even bought all the little gadgets and even a book. This was a couple yrs ago. It's hot where I live in the summer and that was when I was trying to make it (using a jar w/ a coffee filter for a lid) and after a couple (what I felt) were failed attempts, I ditched it. One reason I was tossing them was I kept getting that nail polish remover smell and thought they were ruined. Had I known that it would have made my bread even more sour tasting I would have been so happy! I am so bummed out sitting here realizing 2 yrs later that I tossed the perfect dough (for my taste). I'm a San Francisco Bay Area native and grew up eating the sourdough made fresh in the city here. We would go almost every weekend to SF to get our bread for that week. So I am very fond of a strong sourdough flavor. You've inspired me to pick this up again and give it another try. Thanks so much for covering this in such great detail. Including the problems. I use an electric heat pad ( used for starting seeds), and I started using Potato or Pasta water because both are very high in starch - remember the yeast are feeding off of the starch in the flour. It don't matter too much where the starch comes from, so that's why I use that. As a note, because of that water I am using by Day 2 my starter is taking off tremendously (using whole wheat flour). You should try it and you'll see what I mean. You might even have other starchy ideas too.

A relative of mine is a chef. He told me to use potato (skin and all) soaked water for my sourdough starter instead of milk or water. He says it’s a next level sour dough and far less known or used. Still waiting for my starter with potato starch water. Verdict is out.

Great video. You present it so well. I have been making my own bread since lockdown here in UK. I have a bread machine but don't like the hole the paddle leaves so I take it to the final kneading has finished, knock it back , knead it and shape it and bake it. I am disabled so trying to get to the store and queue for everything is no good to me I enjoy watching your videos and when I run out of yeast will definitely be using this.

Thought I'd weigh in on ingredients if your starter is not developing well. As Mary points out, chlorine in the water may be a culprit, but it may also be present in flour. If you are having problems, you may want to try using an unbleached - or preferably even an organic unbleached - flour of whatever type you are using. This allows the natural yeasts present on the flour itself a chance to be more prolific. Good luck and have fun experimenting.

Mary's Nest I like to cook all kinds of food: American, European, Chinese and all simple, but flavorful, but I am not a chef, just a bumbler who loves food. My skills could be better but for me the preparation is much fun and so, if it takes me longer to slice or dice, it just prolongs my fun. The bread baking is a continuous exploration of different flour, yeast, amongst, proving time, baking time and it always gives me joy and each loaf is a surprise. Thus I don’t have a recipe or rule to give to friends who enjoy my bread. I would make a lousy chef because I continuously seek to change recipes just for fun.

Mary, I've done it. I've been mentally ready almost 3 years to make a starter, watched a million videos & blogs on starters. Also last year, taught one of my mother in laws recipe at the Manchester Arts Gallery. Every day, people from different parts of the world were teaching different things, there was a girl who showed how to make a starter. I was the only one amongst the 30 people there that knew what a starter was and had loads of questions for her, I got her email address just in case I had any questions, but because of you, I've now watched 11 minutes of your video, I bought this British wheat flour, few months ago, I'm surprised how little shelf life they have. I mixed u the half cup water/flour, but checked expiry, Nov 2019. I'm sure it will be ok. Its the smallest bag. I'm planning to use it up these days. I'll deffo have my started FINALLY, thanks to you. Day 2: I haven't touched it or opened it. I will feed it tomorrow morning. I cant wait till its finished & I bake my first loaf without yeast. Day 3: At 7:30 am. 2nd day I removed it from tye kitchen counter because it was close to the window & high chance the sunlight would hit it. Also hubby was cooking yesterday evening & I didn't want him to kick it about wondering what it is. So I hid it under the counter. I was very surprised this morning on day 3 for the 1st feeding. 2 questions please Mary. It had slight water floating on top. Just like you'll see on yoghurts. Is that ok? Second qs. As you know I used a brand new bag (British wheat flour) I bought a few months ago. It expired November 2019. But the surprising part was, lots of bubbles as if its active. Without any feeding? Is it ok? I'm going to feed it again 7 30pm. Anyone guess the name I've given it? Mary's nest startie. 💋💋💋❣️❣️❣️ 7.30pm: fed my new baby. Double the bubbles from this morning & it's risen. I've change the vessel. I have put it in my clip top jar. I removed the rubber ring from top so it doesn't suffocate. I cannot believe I waited so long. Looks like its going in the right direction. Day 5: Saw the starter this morning, It smelt that soury vinegry smell. Lots & lots of activity, froth & too many bubbles & rise. Noticed, I'm running out of flour, so waited for hubby to finish all his projects, two naps. Finally we left at 5pm. Went to ASDA, quite frankly I wasn't expecting anything on the flour. The whole long shelf was empty. Went to 2 more stored. Nothing. So came back home & fed it, self raising flour. I will find out in the morning if I've killed it. A perfectly healthy starter. Furthermore, I didn't have the heart to throw away the half cup. It just looked too good. I've just put some flour honey, milk, salt eggs, butter and 2 tblsp of powdered milk. I have set it on dough setting in the bread machine Today I used the self raising flour instead of the strong bread flour. Lets see what colours my dough brings tomorrow. If it is a failure, I'm very sure the ducks across the road & my pigeons will be more than happy. I saw the pigeons on the roof of my house today and about 15 of them in my garden waiting for me at 7 am

@@creviceofbliss the first one didn't. I only fed it for 5 days & ran out of flour. Looked everywhere couldn't find any. All shelves were empty. People thought it was the end of the world & started hoarding. My local asda sent an email they were open 6 am for the elderly, disabled. I always struggled to go by myself & since their scooters weren't working I couldn't look in. Sent my other half. All wr needed was milk, bread, eggs & flour. No yeast anywhere either. Their fridge wasn't working either so no milk. What I was really shocked about is that when I got there people (normal people) with carts full of groceries were leaving the store at 6 30. No wonder the shelves were empty. So I came back disappointed & no groceries. He's only off on Sundays. So it was a while till normality started. I started feeding my starter bleached flour & I think I killed it. I made another batch. And that one is thriving. I discovered that you can't just immediately make a loaf of bread from a few days old starter. Keep feeding it for a few weeks & then you're good to go. I have learnt so much from Mary. Bless her, she's so full of knowledge about everything. But I have been baking away. Another thing I hated was the doughy taste of the strong bread flour. Now I'm baking every other day the most delicious breads. I've discovered one recipe. You sift the strong bread flour like you do for cakes, I add a medium size boiled baby potato. Instead of sugar I add powdered sugar. I love seeds, so my breads are loaded with seeds. Been experimenting fir over two years now & finally got it. Mostly people request my breads. It takes me a day & a half to make a perfect bread with 2 rises.

Mary, I can't thank you enough for this video! I'm on my second attempt of making a starter, and it is failing. Now I know why! My water has too much chlorine in it and my oven light storage is too hot for it. I started both with dark rye flour, but I'm so happy to make my third attempt with organic unbleached all-purpose flour and purified bottled water. I love the way you measure the water and the flour, too. Thank you. I'm hoping that my third attempt is a charm!!!

Hi Mary, just discovered your videos while searching for Sourdough Starter. I've been baking and cooking since I can remember (Mom taught me at a very young age). So I've made bread, pastries, the Herman Starter from years ago, etc. I'm attempting the Foolproof Sourdough Starter with Rye flour. After feeding it as directed for 4 days, and keeping it loosely covered at about 77 degrees on countertop, it's still not bubbling, growing or giving off an aroma of yeast. It just smells like rye flour. I'm going to feed it for 1 more day and see what happens. I don't think I'm doing anything wrong. -- So today (April 13) I'm starting an all-purpose flour sourdough starter after watching your video and taking notes. That will take a bit longer, but really looking forward to making some "sour" sourdough bread. Thanks for your detailed and informative videos. I love love love your chanel Mary, thank you for sharing your experience with us. You have helped me so much. I always cooked from scratch because I was raised in a traditional Polish home, I also always made sour kraut and pickles in brine, however, I only made it occasionally, but now I know how important fermented foods are and I just started to make beet kvas and kefir and really want to learn how to make canned (glass jars) foods, so I never have to buy it from the store again, at least I will know it is truly healthy and healing, and it is organic.
