When people die in suspicious circumstances, he determines causes of death by slicing through their corpses. He also makes customizable, top-of-the-line knives cherished by celebrity chefs.
In this episode of SIDE HUSTLES, meet Dr. Stephen Pustilnik, a forensic pathologist in Houston on a quest to create stronger, sharper knives for cutting up meat - in the kitchen and the morgue. Dr. P’s obsession with precision (as well as extra-hard, alloy steels and 40,000 year-old mammoth teeth) has made him pals with top chefs and left him with a five-year waitlist for his coveted knives, but he has to keep up his critical work at the county morgue.

Sea your CIA profile picture makes me assume your American. Are you somehow not familiar with the usage? It’s used interchangeably with family room. Slightly less often but certainly not at all uncommon. Maybe there are slight regional differences in places favoring one or the other? I’d say it’s like bathroom or restroom, restroom is slightly more formal. Man caves are also dens though unfortunately that stupid fucking word has stuck around longer than I expected.

Two cops standing over the body of a third victim, organs removed with surgical precision, possible evidence of cannibalism. "Hmmm, whoever did this was absurdly skilled, they knew exactly what they were doing when they removed this liver, look how smooth this cut is - no abrasion at all?", "You've met the county pathologist right? Doctor, incredible chef, makes world class knives...", "It can't be that simple can it?", "I think we need to consider him the prime suspect, he checks all the boxes here, and it's a short list." Anyway, it turns out it wasn't this guy at all, it was a Ghost Samurai who wasn't eating the organs, he was stealing them to reconstruct a body for himself. End of the movie the Ghost Samurai finishes assembling his new body, the lead detective - played by Keanu Reeves - has practiced swordsmanship his whole life but he's still not as good as the samurai. But then the pathologist forges him a new sword so sharp that even though the detective is losing the duel, his ultra-sharp sword cuts through the samurai's sword, then through the samurai, bisecting him. Andrew Zimmern and Dr. Pustilnik host a lovely dinner to celebrate.

Not necessarily the knifes he makes aren’t necessities. The time he puts into them and knowing it’s a custom 1 of kind knife is kinda worth the wait. But I understand why people think that’s a little long.

He makes a custom niche luxury item with a lot of demand and it is labor intensive. People who corner a market like that often have long wait-lists. Reminds me of famous highly acclaimed tattoo artists with similarly long wait lists.

It’s more fascinating backwards: A chef at a recognized but middle-class Italian restaurant stumbles upon the fact that his affinity for maintaining excellent kitchen knives works extremely well when applied during illegal, unauthorized autopsies of human cadavers. It would be like an even darker, more macabre Breaking Bad-meets-Dexter amalgamation.

I bet his knives are absolutely incredibly good quality. As another albeit much less formal knifemaker.. i really must say you do excellent work particularly your blade finishing .. And unorthodox handle designs and yes you often find you took up knifemaking because you're unable to obtain a quality enough knife. Others learn it from their parents .. Used power hacksaw blades are a good starting kitchen high carbon steel blade material. It will still hold sharpness okay even if you're not very skilled at tempering. And turns out awesome if you are . and this is excellent journalism btw

He said that because his job is literally cutting bodies to pieces. He probably doesn't have much fun at work, it's also all kept in secrecy and it makes him a bit separated from the remaining hospital staff (pathologists are the ones, who often have the definite evidence on malpractice, so it's hard to befriend someone, whose job is to confirm the end of your career). He probably is just bored out of his mind and the hobby keeps him happy, because it lets him interact with customers, who genuinly appretiate and love his work - not something he gets out of his job.
