Ali Slagle is in the studio kitchen showing us the pasta dish to make when you have perfectly ripe tomatoes that you want to enjoy without much work: lazy, easy summer cooking at its best. This Tomato-Butter Pasta is inspired by pan con tomate, in which grated tomato and its juices are spooned onto garlic toasts. Red-pepper flakes, garlic, basil and Parmesan bring out the tomato flavor.

@@noktilux4052 Yes! I often return to her recipes for Turmeric-Black Pepper Chicken With Asparagus, Sheet-Pan Italian Sub Dinner, and Thai-Inspired Coconut Curry Soup With Vegetables. I recommend all of them. :)

Fantastico! I have tried both NYTs versions- this one uses butter the other olive oil. Butter is a nod to Northern Italy- olive oil a nod to Southern. Yes, salt well- an unsalted tomato in any dish is like an unpolished diamond. I used fresh ripe plum tomato because that is what I had on hand. My Italian husband and cousin approved! Mama mia good! ❤🕊️❤🕊️❤🕊️❤

Be careful. very often, looks have little to do with taste. A lot of French cuisine is obsessed with looks. Indian cuisine doesn't give a F.

As I sit here with a tray of heirloom tomatoes and some freshly picked basil I know what I’m making right now. I’ve already made gazpacho and am roasting some more tomatoes in the oven.

I'm from polish descent, my fave mom's recipe is whole tomatoes with butter and parmesan. We can our whole tomatoes in the summer

Use that tomato skin as a wrap with some olive oil, salt and pepper, fresh mozzarella and basil. Cooks treat.

That's about £30 worth of tomatoes in the UK but it looks worth it.

Wow is it really that expensive? I looked in Los Angeles and 2 lbs of good quality heirloom tomatoes would go for $3/lb to $6/lb depending on where you get them, so somewhere from $8-12. Which is pretty expensive for 2-3 tomatoes, but $30 is just insane.

@@ipsecluthos9388 if we want big tomatoes like those it is very expensive and honestly I think I was being optimistic 😀 saying £30 . Our normal tomatoes (fairly tasteless) are much cheaper and much smaller.

Wow! That’s some expensive tomatoes! Are canned San Marzano tomatoes expensive? Growing your own is not an option?

@@kimmyklo7848 yeah growing is definitely an option. Canned Marzano normally not too pricey here. It’s really the size of the ones in this video that would be pretty costly.

best of all ways to eat a perfect summer tomato is directly off the wood cutting board when it's been sitting there bleeding out for an hour or so from the salt (and pepper).

I would use extra Virgin olive oil instead of butter, to give more spice notes and to be more mediterranian

Butter is Northern Italy, Olive oil is Southern Italy. Both great - but I am a bit partial to butter!

@@bmccarthy3333 yep... indeed I am from the south of Italy. but this kind of pasta I prefer the sharpness of the olive oil taste, rater than the round and sweet of the butter (I a risotto with mushrooms I do the opposite)

@@helenasilva9586 There are very few places and people who have access this magical ingredient. Those who do are either very wealthy or have no idea about NYT cooking. That said, I still don't believe this recipe works. The cook here is all about presenting illusions or actually likes really bland food.

This turned out to be thw worst pasta dish ever. After years of making my own tomato sauce for years for my family and friends we tried this on a whim and it turned out to be terrible compared to what we were all used to.

This cook has somehow made a career of doing something she seems ill-equipped for. Her one pot mac, broccoli and cheese is the very worst recipe BY FAR i have ever tried in my 50+ year life.

This seems to be just a very bland butter sauce pasta. Add copious amounts of butter and anything will taste decent. Not sure why this is called a ‘recipe development.’ We expect a bit more when we subscribe to NYT cooking website.

Oh Gosh, why grate the tomato? It’s all water and without reducing the sauce I don’t see how that can be flavorful. Just cut small raw pachino’s an toss the pasta with oil of oil, parm, oregano or thyme into a hot pan with some pasta water....on the heat. You’ll see the difference

@@sarahlane9121 I’m Italian. From Bologna, I eat pasta every day, I can express my opinion because I think I know how to cook pasta and how to make it taste the best. I don’t teach French people how to do croissants, for example. No one -Italian would ever grate a tomato and use it like a sauce the way it is , but if you think it taste good it’s your choice...if I have to use raw tomato I’d use THE WHOLE of it cut into pieces, bacause it taste the best 😊 have a great day😉
