"Non-brewed condiment" is what they call it: it's chemically very similar to proper vinegar, a mixture of ethanoic acid, colourings and flavourings, but it's put together by just combining simple chemicals rather than brewing. Hardly anyone knows, and those that do know don't generally care; so here's my question. Does it matter?

why would anyone care? All Malt vinegar is is the same chemicals but excreted by yeast and bacteria. I don't automatically find that superior.

@@occamraiser I think generally the case with natural vs synthetic foods is that the natural has other molecules other than say the vanillin in vanilla which gives it a deeper flavour than the synthetic which is just one molecule.

The funny thing is that retail the customers have been demanding higher "quality" vinegar at a higher price. Wine vinegar, cider vinegar, balsamic vinegar. If the fish and chip shop was honest and offered the real stuff I think many people would consider the shop as "premium" and would be prepared to pay more for the product. We have had such things where the shops have sold baked fish rather than fried. And they do fine commercially.

You'll find that the mentioned vinegar about are all gluten free and replacements for Malt vinegars. Malt vinegar is cheap and nasty, and also poisonous to a lot of people.

"and would be prepared to pay more for the product." Or maybe not. I once heard a story about a sausage manufacturer that decided to increase the percentage of meat in its sausages, and many customers then complained that they did not taste anymore like they used to.

@@RobotronSage the preferred IUPAC name may be acetic acid, most probably because of convention, but the systematic name IS ethanoic acid. It's not the wrong you're just not used to it. The systematic name follows the agreed upon nomenclature rules and hopefully you would at the very least be able to draw a model of the molecule, if you were a chemistry student (usually when you might actually be asked to do this) or professional and somehow never encountered the acid made when vinegar is brewed.

A couple years back I swore I had some kind of reaction to the batter mix the chip shop was using, this makes sense of that situation they just didn't water down their "vinegar" enough and I got burnt.

The bottles for that stuff actually have the "melting hand" symbol on them to warn about it's highly corrosive nature unless watered down considerably.

Similarly, I once had a tough morning trying to convince my dad that his bottle of a popular pancake syrup was not actually maple syrup and did not even claim to be so anywhere on the package.

Real maple syrup has a different flavor and consistency than pancake syrup, so much so that many people actually dislike the real stuff!

@@bond6132 Yep. The consistency of the real deal after I brought back some from a visit to Canada was runnier than the slow and sticky stuff I put on my pancakes on the rare occasions I have pancakes. Tastier, but not the cheap stuff I've had since I was a kid.

@@revolver265 Now that I think about it, it is interesting that maple syrup is something only Canadians consume on the reg. I am Canadian and I use maple syrup everyday, so the pancake syrup in American breakfast joints tastes very odd, I would compare it to sugared medicine haha.

I remember years ago, here in the states, Arthur Treacher's Fish and Chips chain actually used real Malt Vinegar. Although I can't say if vinegar in little plastic packets is still authentic but US food and labeling laws require it to be what the label says it is. That was the only place I ever remember using real Malt Vinegar.

The little packets in the US are labeled malt vinegar and they certainly are. Laws on both the federal and state level outlaw imitation vinegar here, except in a few rare cases where it can be a minor ingredient in another food product.

Yes it matters, like the difference between real ale and keg. The Sarson’s vinegar brewery used to be next to the approach tracks to London Bridge station. Building is now industrial chic apartments.

I remember the factory when I worked by there in Whites Grounds off Bermondsey Street in the 80s for a printers. The factory has also been demolished and replaced with overpriced flats

This video almost makes me cry. I remember when this came out, me and my friends were watching it at school, and watching it we all decided to go and get fish and chips afterwards. The very same night it was announced that the school was closing. We all ended up falling out of touch, and the last memory I have of that old friendship group, was eating fish and chips because a Tom Scott video makes us hungry. How I wish for those days back

My girlfriend's mum did exactly the same, and tracked down a shop selling non-brewed condiment. On a recent visit to Dumfries I found a chip shop that had bottles of it for sale too.

I've often thought the vile salad cream we got with 'salad' at school in the 70s was made from mineral oil and industrial acetic acid, emulsified with detergent. It seemed rather far-fetched, but now I'm not so sure!

@@ericthemauve as someone who enjoys Mayonnaise with their fries..why do you think it's disgusting? It's a fatty, slightly acidic/salty condiment that is really good for dipping things in (in my personal opinion) But you also have to get a mayo you like cause some are too acidic, some can be too sweet or too salty

poudink is correct. You can get vinegar in almost every fast food place and nearly every restaurant. You'd be hard pressed to find a place that has french fries and not vinegar in Canada. I didn't know this wasn't universal.

In Canada it's extremely common to put gravy on fries. I was in Florida once and at an A&W in a mall I ordered a side of fries, and a side of gravy. That was the entire order. The lady behind the counter looked at me and asked me in all seriousness what the gravy was for.

Fish and chips when I was a boy were absolutely delicious with salt and vinegar. These days it tastes like they’ve put some kind of water on them. I ended up carrying a bottle of Sarson’s in my car boot for such occasions hoping that it wouldn’t break.

As a person who's parents owned a fish n chip shop (in Australia) I'd like to say that I think a BIGGER issue is false advertising of certain species of fish. Here in Australia it was legal to sell Hake that was advertised as "Snappa". Anyone who knows fish will agree that Hake is very cheap and less quality than "Snapper". BUT as long as it's not spelled correctly, it's not considered false advertising.

"It's not like they would see any of the money from the fines" -- as an American, where we have Asset Forfeiture (where you can have your car, home, money, etc taken by the government if they *accuse* you of a crime those things are somehow attached to, and you have to prove they aren't to get them back) this was a surprise to me. It's certainly a better way to do things.

"Does it matter?" If it's being sold as Vinegar (i.e. brewed vinegar) and sold at a premium, Yes. If it's being sold as just 'do you want vinegar on your chips?', supplied free or at very a small cost, no - not really.

Eh, whether it matters is defined. Maybe someone doesn't like the caramel acid version and only likes malt, then they might not have vinegar of their own. Personally, I'd rather pay 20p extra for a better choice (like both types being offered)

It just hit me. Just because cleaning vinegar is only 6%, compared to regular vinegar being 5%, you still shouldn't drink it straight. Going from 5 to 6 might not sound like much, but it's actually an additional 20% in strength. They do make up to a 30% vinegar, but it's used as a weed killer mainly. And there's a 75% that's industrial only, used for cleaning heavy grease and the like.

As a Russian - maybe I don't know much (and it's true, never really had fish & chips), but over here there is no malt vinegar, only apple & grape ones. So now I'm kinda interested how is the process of making vinegar different for malt, apples and grapes so that the finished product isn't ale/beer, cider or wine.

A few years ago, I noticed the vinegar in fish and chip shops changed. It tasted more flat. So much so that I stopped using the in store vinegar, so maybe it matters I dunno.

Yes it matters, its fine to have cheap vinegar substitute as long as its labeled. I actually distilled white vinegar for most everything, the cheapest stuff, but when I want good vinegar, I want the good stuff.

I often wondered why I couldn't get the same taste on home made chips and then I read an article a while ago....Non brewed condiment gives the same flavour as the fish and chip shops 'vinegar'.... It doesn't give the burning sensation in our throats either - unlike brewed vinegar. Brewed vinegar also seems to give us hiccups too.. I love the non brewed condiment, it's the only one that I buy now, we all love it and prefer it to regular vinegar x

This synthetic mix contains nothing regular vinegar doesn't contain. So it would only be a risk to people who are sensitive to the other things that are in standard vinegar, and I expect those people simply wouldn't ask for vinegar on their food.

I don't know about today, but when I ran my own chippy the cost differential between brewed and non brewed wasn't worth the effort even when buying several *gallons* every week. In fact I used to buy half pickling vinegar and half ordinary brewed vinegar and mix them for extra flavour.

I can tell you that it does without a shadow of doubt matter. Having moved to another country that doesn't have Fish & Chip shops plastered everywhere, I have struggled to find anything that replicated salt and "vinegar", and often get strange looks when asking for vinegar in general.

In Germany you don't really make any difference between vinegar ("Essig") and acetic acid ("Essigsäure"). But Germans usually put ketchup or mayonaise on their chips.

I'm pedantic enough that it does matter to me. If I ask for vinegar, and if they're saying "vinegar" I expect it to be vinegar. Not that I *ask* for vinegar, I don't like the stuff. But it's suddenly making me worry about the "Homemade Vinegar" my local Italian chipper sells in bottles. Are Irish chippers full of this stuff, too?

It's highly likely that they are just making it up from concentrate. People really like Chipper vinegar... actual Vinegar you buy in shops doesn't taste the same so they've got a little market there. It's an easy profit for them.

"Ethanoic acid" is the primary component of vinegar. It's what you get when you buy distilled vinegar for cleaning and such. I see no issue with this if we have all sorts of false fruit flavorings that are nowhere close to nature.

The issue is sure this is one small example, but the general trend is that everything is being made from easier, cheaper products just like in this case where instead of going through the process of paying workers to take the time to brew vinegar, just have a machine combine some chemicals and call it vinegar. Regardless of the effects of the chemicals on you or the general population. This IS very similar to 'margarine vs butter' or 'diet vs regular soda' or crops that have been owned by families for centuries all being bought out and all being converted to corporate genetically modified crops. The list goes on, but people still throw money at 'finding a cure for cancer'... the answers are right in front of us! Radiation, junk food, genetically modified and highly processed foods, etc. You wanna tell me that modifying the DNA of a plant that we consume couldn't potentially modify my DNA? That is what cancer is. It is mutated or damaged DNA that causes cells of a certain type to grow rapidly and out of control. Give me a break with your skepticism and immediate defense for the globalist system, you know exactly what we are talking about. I call people like you MC's

Being German I knew that the British put vinegar on their chips but i've never tried that. Actually, up until this video i've never even seen anyone do it - it's somehow odd and fascinating at the same time to me. :D When I think about it: It's even weirder that we have crisps with salt and vinegar flavour in every supermarket but on chips it's just not a thing here. :D

that was probably something that came from England in the 2000s. Here in denmark, salt and vinegar crisps wasnt a thing until about then, and it came from England.

I don't like normal vinegar but like that non brewed condiment. . It's milder. Not easy to get though, and expensive. I get mine online. Apparently they used to sell it in fish and chip shops but not anymore.

The difference is far less than that. It's more like the difference between different beers, or different places that bottle water. The difference is nothing but the subtle flavors - the primary constituent is quite literally the same.

​@@tsm688 humans aren't poorly calibrated pass-fail chemical analyzers though, we *pick up on* those subtle flavor differences and that affects the experience of what we're eating and can easily throw a wrench into a normally fairly consistent flavor profile by introducing a human element of dilution. its cheaper, and helps with dietary restrictions; if *anyone* thinks that the reason its so ubiquitous is the care and wellbeing of the general public, they're mistaken. non-brewed condiment is cheaper. if you *can* tell the difference, you *will* tell the difference-and apparently if you can't tell the difference you'll gaslight anyone who can

I had no clue places had something different than actual malt vinegar. I have never been to a genuine fish and chips place before, but in the US every place that has malt vinegar has the Heinz malt vinegar and its the best malt vinegar I have had. Ive tasted a few other off brand ones and nothing compares to Heinz

I know this video is 5 years old, but as it's been recommended to me now, I feel like I can still comment. This is exactly why I order my chips with salt only and put a nice malt vinegar on them at home. Also, this keeps them more crispy as they don't get soggy on the way home.

This tastes way better on chips and I buy it from the chippy every now and then. Malt vinegar is too strong. Chippy vinegar makes it. If I go somewhere and they have normal vinegar they’re not a real chippy
