Can’t say I’m a huge fan of the yo-handles, but it is a pretty stunning knife. I’m sure it will find a new home sooner than later. Glad you shared your honest opinion and critique. Thanks for posting this!

I Gotta Say, western handle on sujihiki seems so wrong. Like 25" inch wheels on Mustang 66

I know what you mean. All about personal preference as I’d normally agree. But do think the rock handle works here.

Interesting 🤔 Personally, I’m not a fan of the bright colored handles. I like the traditional handles and I love a good wood finish!

Right? All is super personal. I still think I want a Turquoise rock handle, but this knife just isn't the right combination of that and other qualities I was going after.

Interesting. I have the fujin sujihiki sg2 with WA handle (turquoise too) and I like it quite a bit, maybe it's just ultimately the geometry that threw you off

The geometry 100% threw me off. From the little swoop in the spine from the handle to the 60% k tip. The finish too threw me off because when you research this knife online, I find a lot of time it almost looks matte. So didn’t expect it to be so shiny. So you’re totally right. Then the tip was crooked and I jsut never recovered. But I found a good home for it and that makes me super happy.

Ideally I'd like a sakimaru, thinking Nigara Anmon 270-300mm. Something with less flair than this Kurosaki!

The gyuto from this line, was also the first knife that got me interested in japanese knives. I didn't buy it, cause it's so expensive and now you can not find it anymore

I have a shizuku with similar handle style and have very similar thoughts about the blade and handle. It's great performer and strikingly thin knife. But somehow I end up using it the least.

I have had this happen as well. Nothing nearly as nice as your sujihiki. I liked the look of the Messermeister Kawashima line, it's SG2 which I like, kengata tip. I waited a while and finally decided to order one. Waited a couple months for it to restock, then tracked it on its journey to my door. When I got it.... it's OK. Looks nice, cuts good, but I don't feel the connection I was hoping for. So while it was not the same level of blade, I do feel your disappointment.

Same, I bought the 6" utility version and it at first came across as a "fancy sg2 display knife" with a knife contour walnut handle to me and that's where it's at for about 6 months and I finally started using it on small detail work I know much more happier with it. I think the sg2 thin blades catching people off guard from expectations.

@@roospike I have had a very similar experience. As I have used the knife more, I have come to enjoy it more. And personally, I do think the Kawashima line is a good looking line of knives.

I just purchased yu korisaki sg2 240mm gyuto. Wenge and turqoise oktagon handle. I hope its good 🔪🙈

Yeah Johnny I wouldn’t worry too much. I just thought my personal experience was worth sharing because you don’t see a lot of people talk about certain things they potentially disliked about Japanese kitchen knives right? We put them on a pedestal always and here it wasn’t the craftsmanship that failed. I just didn’t vibe with the blade. Wasn’t expecting a super flexible blade and wasn’t a fan of the finish. For sharpness it was insanely sharp. Let me know what you think of yours when you receive it.

I've had this exact knife since the beginning of October and I absolutely love it. It sharpens super easy considering it's hrc. I have always used 210mm so it took a little while for me to get used to the extra length. Blade geometry is great and it's nice and thin behind the edge so slicing through onions feels like there's nothing there 😁. Mine was super sharp out of the box but crazy sharp with a couple of decent(ish) stones. I hope you like it straight away but give it some time.

You should have sent it back to whoever you bought it from to straighten it. That's on them.

Yeah I wasn’t sure if it came from smith this way or shop. Either way should have been done at the shop given it is unlikely to have happened during transport.

Absolutely. I straightened it the very first day. Funny enough it was super easy to bend back because of the san Mai construction. Though it was super nerve racking.

I totally agree - I do not like knifes with too much flex. Because you can not direct your cut. I have a You Kurasaki Gyuto(Raijin 210) and Bunka (Shizuku 165) and both are very stiff and perform exceptional. So it's a pitty that you encounter such problems, with his Sujihiki. Laser is fine, but it should be rigid enough to cut the way you want it to cut! For some applications I am a big fan of work horse knives!

Exaaaaactly. For some knife styles flex can be nice. But not here… it didn’t allow me to use it as intended. In a much happier home now. Person who bought it also had a Shizuku gyuto with turquoise handle so the set is complete.

Though true none of it prepares you as strongly as when you actually hold it. Down side to sometimes ordering online and not having the chance to hold it.

If it's bent off centre then return it, probably a major reason for not connecting with the knife

It was definitely a major reason. I fixed it but continued to not connect with the knife for months. It’s now in the hands of a new owner as of last month.

Frankie, have you looked into the Nigara acrylic handle R2/SG2 sakimaru sujihiki’s? They are more robust and the shape is more unique.

I have seen a few from Cooks Edge. Not super into the handles unless it’s a colour I like. I’m thinking more Nigara Anmon sakimaru with wa handle as one of my choices.

I do prefer stainless but after owning the knife I thought was my dream knife I’ve made a few changes to what I’m after. So long as stainless clad one small wipe on a tea towel and I’d still feel comfortable putting the knife down.

I hear you. Same here on slicers. Easier to have doubles and triples and of the knives we use often. Though if I was a pit master I’d probably have more slicers then gyutos so all depends on what we do when it comes to food.

Thank you for your honest opinion :) My first knife that I was disapointed was Fujiwara Nashiji Petty. I was being cheap and was not intending to pay the Maboroshi or denka price tag, and since this was supposed to be a gift, I went for the 150 mm petty. When I got it, I was unpleasantly surprised with how fat behind the edge it was and how strongly it was wedging when cutting simple ingredients like apple or onion....

If I can't be honest with myself, and the community, there is no point. I know some might think it is an attack on the brand of the knife, but hope I have said enough times it's personal and has nothing to do with performance or craftsmanship. To someone else, this might feel in hand like the best knife ever, just not for me. I'm sorry to hear you had a similar experience. I do believe you ended up keeping the knife correct?

@@DJSergeotto which is good to know. In your case the impression was negative, but you made it better. In my case, even after straightening the tip, the mojo the energy was all off. The tip along with first impressions just created a bad experience for me I could not get over.

There’s always a love/hate relationship with Fujiwaras. The grind and finish always need some TLC and sometimes the blade profiles are just sucky. But now that I’ve had multiple I actually enjoy the process of making the knife my own. I bought a 130mm Nashiji petty as well, and after thinning the bevels to a zero grind with a micro bevel and giving it a proper kasumi finish on a Nakayama it’s a star performer. Stupid thin behind the edge.

I've picked up most of his range of knives. The only one that felt good was a 410mm sujihiki.

Was that the only one that felt right because you liked the weight of the length or what was it about that one knife that felt right compared to other Kurosakis you handled?

@@KitchenKnifeGuy Everything I've felt has just felt really light and flimsy. Of course 450mm is going to feel heavier. But it was exponentially sturdier in comparison beyond proportion.

I bought a Shiro Shinko Seilan, while I could see why many people had enjoyed the knife and recommended it. When I picked it up, it just didn't feel right. So I can sympathize.

I had a similar experience with the Takeda gyuto, for me I didn't expected to be that thinnnn, its so thin that I felt fear even cutting potatoes plus the knife sticks sometime the fear of accidentaly bending is no joke.. plus the laminate coating of stainless steel doesn't feel any where like Teruyasu Fujiwars's or Shiro Kamu's semi stainless. and sometimes I will just flick my finger to the blade to feel then sound or how dense/ solid the knife feels, it just doesn't feel like any other Aogami super. But that's just of my very honest opinion. Btw is there a big difference between Marboroshi and Denka performance? Been eyeing on denka for quite sometimes, currently a Marborshi user. Lol, if you're wanting to avoid flash, Kurosaki might not be your guy! That's why his blades don't interest me much apart from the basic respect l have for him as an artist and a smith.

@@davidtatro7457 couldn't agree more. Never owned a Kurosaki until this one, so was hard to tell how flashy he could impart himself in a knife, but I prefer the 'flash' of my River Jump to the uber polished super deep tsuchime finish of a Kurosaki.

I’ve got a sg2 Saji with a very similar handle shape and fit and for me, could never ever get on with how it feels. The 90 degree angles where the blade meets the handle make it feel unnatural and awkward. Greats blades, dysfunctional handle shape.

I think I saw one available at nigara Anmon sakimaru at syoukon hamon but I saw yoshihiro yauji sakimaru it looks awesome also. I had buy one mazaki knife from this shop nice service and supper fast shipping

Sharp Knife Shop has the knife I am looking for too. But as you'll see in an upcoming video, I ended up having to pull the plug on a special knife, and now need to watch my $$$ for a while. Good to know you had a good experience at Syoukon as I've never dealt with them.

Hello - i am considering to pull the trigger for carbon steel gyoto 240-260 mm sakai length, can you list top five gyotos in carbon steel or R2 that you think are the best, i am considering hitohira togashi, tanaka or another one from nalagawa. Thank you!

@@shpendzeka457 3 of them are the best in sakai but in my opinion I would go for tanaka and it is better if you got it with stainless steel clad because it is easier to take care of but you would never go wrong with 3 of those blacksmith

You've officially been kicked in thenutz.....twice I feel like his western style full turquoise bird's beak handled knives were more of a collectors type of gig. They seem a bit unwieldy and awkward looking. but very beautiful and made from an amazing blacksmith and in my opinion if you got the cash get these knives and hide them someplace safe and forget about them because dddaaammmmm son!!!!! I have just ordered a 270 gyuto of his and Friday am ordering a 270 sujihikiki (traditional hAndled) and I cannot wait to hurt myself at work with them😂 it will be an honor 😆

Yes. His big knives are the first to go when they hit the web. So I focused on those first. Trying to get a 300 mm is hard I feel lucky to get the 270...can't wait to use them, my last set of knives burnt down in a friend's house fire😒

The wa handles with the turquoise bolster are super cool. I'm not a fan of Yo handles, but do love my Saji Rainbow Damascus Yo handle for its build and heft. My first choice would have been my steel and handle specs in a Saji but when I saw the Yu Kurosaki suji, thought I'd take a risk. This knife is now in someone else's hands as of tomorrow so back to no suji for me. Just couldn't warm up to it.

@@protopigeon Exactly! Lots critique me because Yu Kurosaki is a world famous blacksmith. I never said his knife wasn't an excellent performer, but it did not suit me that's for sure. And I won't go as far as to say they all wouldn't suit me. Just this one, handle shape, blingy shine on the blade etc.

Tbf I would of felt the same mate. I’ve only ever bought knives from the old blacksmiths and never had these, “issues”

Hey Jed. Really appreciate you watching the video and sharing your feedback with a similar situation you had with a knife from a different smith. See, people at first when I put this video out couldn’t see past the smith. Thinking I was attacking Kurosaki-san. That isn’t what this channel is about. I share my experiences so that others can learn from them. My experience also doesn’t mean you’ll have the same one. But sharing means making people aware. I’m sure both our knives are lovely to look at, but clearly it didn’t jive with us.

I know exactly what you mean, I bought an Ironwood handled Aogami Super Takeshi Saji a while back and the handle profiles are almost identical, the handle just felt all wrong and the pinch grip in front of the bolster made the choil bite into the finger. I ended up giving it away to my cousin who was just starting in the food industry. Yu Kurosaki makes some of the best stainless knives out there, and I absolutely love the Raijin and Juhyo series, just not a fan of this particular handle and blade shape. The turquoise handle is just so sexy.

I have not. Love the look but frankly afraid to try a Kurosaki again because of my experience. Now I know it’ll be different because of the weight alone. But when one has a bad experience like I did it’s hard to want to go for the same maker again.

@@KitchenKnifeGuy i have the same with you i got the japanese handle made by kurosaki san its to light for me and it feels off but when i got the ironwood series it feel like an extentsion of my head hope one day you try in your local shop and you might possibly love it !

Franco, I think you have image issues. My question is why would a person who is only 5'4" want an 11" long knife in the first place?. I'm 6'2" with big hands. My favorite knife is a Shibata Kotetsu 8" Bunka. It's razor blade sharp, thin, 1.9mm, and 51mm high at the heal so I have no knuckle hinging issues. You should about down sizing to some thing that is more realistic.

My height has nothing to do with the knife I want. It's about what knife best suits the purpose I intend to use a knife for. You should know this. Size has nothing to do with what a person uses. I use from an 87mm paring knife to a 280mm bread knife. All depends on the intent. My favourite knife is a 210 Denka gyuto. My height is irrelevant.

I really want this knife, but I've been looking at the 270mm R2/SG2 version. Just looking for a sujihiki to thinly slice large proteins and not necessarily looking for something to cut around bones.

Oh that’s fair. The ‘bones’ I speak of was really for cutting around prosciutto specifically and was more to mention that the blade has flex more than how I use it. This knife is incredibly sharp and could do just that if you wanted a SRS15 steel knife. One of the best powdered stainless steels out there. I bought 5 Miyabi knives. My first was a Miyabi Birchwood Sujihiki with SG2 steel and 100 layers of Damascus.This was my first high end Japanese knife and it was scary sharp and it fit very well in my hand. I wanted to buy my parents a knife and I wanted it to be a Miyabi. I decided on the 6 inch Miyabi Artisan Santoku (they wanted a knife with less than 8 inches blade) Even though the Artisan line also had SG2 steel (it had 2 layers of stainless with Tsuchime finish. Beautiful knife with beautiful handle but I was surprised it was not nearly as sharp. And when cutting with it - I feel a bit unnatural. There can always be surprises when ordering online. That is a tradeoff for having online discounts.

Agreed that is indeed the reality of shipping online. Even when familiar with a brand, choosing another line under that brand doest guarantee you’ll like it.

@@KitchenKnifeGuy What your saying about the different lines from the same brand should also be a consideration to shoppers. I bough another knife from the Miyabi Artisan Line (but this time it was a Rocking Santoku) And even though it has 3 layers of steel (with the same super sharp SG2 in the middle) it much thicker than my Miyabi Birchwood SG2 with 100 layers of Damascus! In my case it is a plus because I can use it for cutting watermelons and pumpkins and can twist the knife a bit but if someone expected a laser he will be disappointed. So buying based on pictures and specs can also lead to much different end results. The other 4 knives I have are pretty straight but this one is noticeably off the straight axis. Even though Miyabi are factory knives they still have a lot of hand work and are honed by hand. (I imagine a worker was either tired of pissed off at something) But this “defect” can be a bonus. I get a story to tell lol

Haha for a story it’s always worth it. I thought about making a video reminding people of the realities of shipping for knives online. But there isn’t much I can tell other than the same warnings we’ve been speaking about. I do appreciate your story because it proves it happens not rarely but is a reality we need to be aware of.

@@KitchenKnifeGuy I live in Bulgaria and even though I have the ability to afford such knives there are not any shops for Japanese knives specifically for me to hold them in my hand before buying. I appreciate people like you that do reviews and educate! The funny thing is that a friend of mine from the USA was coming to Bulgaria and he brought me a few more knives (Imagine baggage handling in the airport and how employees throw suitcases around) but the rest of the knives were great. Sometimes you just get a defective unit. But I prefer a defective knife to a defective car lol

I haven't really had a new knife disappoint me in such a fashion yet, apart from a Miyabi Artisan petty l picked up at a knife show because they were selling it very cheaply. It's a beautiful little knife and l like the handle, shape, and feel, and the steel takes a great edge. It's just too thick and shiny to be a good cutter and wedges in almost everything. So l pretty much only use it on very soft ingredients. Fwiw, l think the issues with this knife that you outlined here are totally justified and l don't blame you a bit for selling it.

Thanks for sharing your story. Appreciate it. In my case and like Lubo s comment above, no ‘fixing’ could remedy this. I fixed the tip and it feels amazing in hand. Looks great in pictures. Flew through protein but like John said in the FB group, my heart said nah.

Buyer's remorse, the much anticipated top quality let down was the Kramer Damascus chef's knife. 😕 But oddly enough one of the top (top 15) better knives purchased was the Kramer Meiji I don't understand the fame of these knives per the quality are completely reversed on feedback of the both. I've seen my share of disappointing under $50 knifes but that's to be expected when you're comparing $50 to $700. Knives.

Funny you mention the Meiji. When I moved to Edmonton I was really tempted when I scored my first wildlife contract to get the Meiji chef. I loved the handle and exaggerated blade shape. Ultimately I was afraid to be disappointed given I felt it might just be an overhyped knife since Kramer. I went with a Saji deba instead from my latest video actually. So thanks for sharing. All about perspective and personal choice.

I would NEVER buy a shaped handle like that. If it doesn't fit you then it's a waste as control comes from comfort and balance. With a Japanese knife I prefer a Shitan handle. Only knife I own were I don't care for the Shitan handle is a cheaper petty. That knife I still like as you don't grip the handle as much on a petty. Yu Kurosaki "Fujin" Aogami Super with Shitan handle and you will be pleased. Now I have a couple "Gekko" HAP 40 which is a love hate relationship. Love using but HATE sharpening. The fit and finish and steel on his knives is above most others within it's price range. I compared my Kurosaki with a similar style Yoshihiro and it looked and felt like the Yoshihiro was made by a child.

You’re absolutely right. I didn’t sell because of the handle however but you raise an absolutely great point about shaped handles and their limitation if they don’t fit the users hand. Particularly on a knife shape when you actually grip the handle and not pinch grip. I have yet to try a HAP40 so very much appreciate hearing what you think about yours.

We like to keep the japanese to these godlike standards, but to me it looks like you just got a knife that either got damaged somehow or got passed by quality control when it shouldn't have. My first japanese knife was a Sakai takayuki that was horribly sharpened out of the factory.

Agreed. I think it wasn’t inspected by the merchant because if it was damaged in transport there would be more obvious signs on the box and it wouldn’t be just the tip that was damaged.

Not on the next 2 knives i'm waiting for anyway :P Edit: Going to be honest, i've watch so much video praising Kurosaki-san knives that I felt forced to love his work... but I'm not. I'm not fond of any of his blade pattern (Fujin, Senko, Raijin...).

I meant to be fair, it took over 25 knives before it happened, BUT still stings. I gave it 5 months but I can't seem to bond with it like I want. Not enough that it looks sexy in pictures, but it DOES look sexy in pictures haha. Sounds like you already bought your next two knives, hope I get to see which they are :)

Very talkative. 2.5 minutes in and you haven't said a word relevant to the video yet. I'm glad you liked the turquoise handle from 10 years ago. Very relevant. IMHO all that Takfu stuff is hugely over rated and a lot of it is quite over priced. Most of my first Japanese so called "artisan" knives came from there, cuz I didn't know better and all the hype they get. Honestly, other than the steel types they offer, most of the stuff I've seen come out of there are inferior in quality and performance to mass produced factory made knives of the same price. I'm sure that'll offend someone. Anyhow, yeah the handle on most Japanese knives are pretty god awful. I used to think they were so cool and exotic, oh I only want those kind of handles. Yeah, no thanks. Give me a proper handle every time. They're usually trash. The traditional block of wood Japanese handles can be done decently well but usually not.

With all due respect, Franco, it's not unreasonable to react to your video by saying "First World problem, bro". Think yourself lucky to be able to afford to buy Kurosaki (or indeed any other high-end Japanese knife brands), and if not happy with it, sell it for charity or donate it to some young chef just starting their career. Certainly, your issue re: it not being straight is justified, but you should have disputed this with your supplier after delivery and obtained either a refund or exchange. Also, it really is best to only purchase knives when it's possible to see and hold them. I realise that may not always be be feasible, but I've been saved some potential mistakes that way. Otherwise, caveat emptor, man. Best of luck with future purchases!

I can't and will not dispute a single point you've made, because they are all valid and I accept them. That's exactly the point of my video; I made a purchase, it went wrong even though I dreamed about this knife for years because I never had the chance to hold it until I had invested my money in it. Problem was rectifiable. Being san-mai, I straightened out the blade. Found someone who actually wanted it. With the knives I am after, I seldom ever have a chance to see them in person and that's part of the risk. I am fine with that given it literally has only happened once with over 50 knives (First World Problem as you pointed out). I didn't throw shade Yu Kurosaki's way either. But if on the internet you only find content that is lovey dovey, no issues with this or that, no one learns anything. The fact that you watched the video and pointed out everything that is correct about your analysis, is what I hope others have concluded as well. So thank you for your meaningful comments.

Methinks I'd be right in classing you a perfectionist - an admirable quality - so I can well appreciate that your disappointment when a 'dream' knife purchase falls short - esp. as your dream was four years in making! (It may amuse you that, in contrast, I bought a Kurosaki knife in 30 seconds flat , a "love at first sight" experience. It was my second JPZ knife purchase, with zero knowledge of who Kurosaki-san was!). My collection is very small compared to yours, and I happily acknowledge that honest feedback like yours is indeed valuable in helping us JPZ knife-addicts avoid mistakes or disappointments. Thanks man. Super appreciate that and your honesty. That is a lovely contrasting story indeed. Happy you’re happy with your Yu Kurosaki purchase. As for me, I don’t always fair well with my responses but I do my best. It’s hard, as text on screen is open to interpretation and sometimes it just feels like everyone is trying to throw shade your way. I put myself out there. I take time away from my family to work hours on end to put out free content for the community. Sometimes it feels good sometimes people are asshats for no reason. So I’ve had to build a built of a social media carapace. Not everyone deserves based on their comments to be responded to with respect. I’m Italian; respect is a huge value of ours. It goes both ways. I read your message twice and it didn’t seem to come from malice so I pondered the best response that was both a thank you for commenting and replying to specific pieces you mentioned so you felt heard. Am anything but an expert on American Italian accents, but yours sounds somewhat different to the New York Italian accents I'm familiar with either through movies or some personal contacts. In any event, were you living in New York, you'd probably not need to buy Japanese knives online, as I daresay there are a number of stores you could visit in person. I'm from Australia, and the shop from where I purchase most of my JPZ knives actually has a branch in NYC! Keep up the great work in your videos: I will scroll through some more in near future. The time and effort these things must take tires me just thinking about it haha. Ciao!
