Okay sorry for the all caps BUT FOR REAL THESE VEGAN MASHED POTATOES ARE LIFE CHANGING. The secret is using the right kind of potatoes and not overworking the mixture! This will forever be my go-to vegan mashed potatoes recipe from now on because they are so dang fluffy, simple and delicious. DANG.

Why isn't your logo using the Vietnamese flag? - Actually I use the South Vietnam flag because it represents Viet Kieu (Vietnamese immigrants after the fall of Saigon), my parents were both boat refugees before immigrating to Canada. My logo combines two parts of my identity: Maple leaf because I'm Canadian, and the South Vietnam flag because I'm Vietnamese :)

Looks great (as do you)! I just use vegan butter and almond milk (+ salt/pepper) and mix with an electric hand mixer, and it comes out perfect, delicious, and creamy every time!

Here's a pair of tips that will save you a ton of time: The biggest time saver: Don't peel the potatoes. Cut russets into quarters this way: Cut the potato into three pieces- two end "domes" and the middle cylinder. Cut that middle cylinder in half. Cook those, then press them through a potato ricer, skin-side up. The skins won't go through the ricing plate, and you can just pick them off. Or, pick them off of the potatoes when you finished cooking them. The ricer gives you a super consistent mash that's fluffy, but without crushing all the starch granules into glue. Plus, it's way faster. The second biggest time saver: don't boil the potatoes. Pressure-steam them in an Instant Pot for 10 minutes then quick-release the pressure. You only need about 1-2 cups of water to steam them. Such a small volume of water boils very quickly. In 10 minutes of pressure steaming, the potatoes will be soft enough to press through the ricer. With this method, salting the water doesn't do any good, so instead, you salt the stuff you're adding to the potatoes-the butter and the pseudo-sour cream, then fold that into the potatoes.

Russet potatoes are soooooo good 🤤 I don't know where I learned this (or even if it's true 😂) but somewhere I picked up that hot milk works better than cold milk, something to do with how the temperature effects the starches 🤷🏻‍♀️ but hot mylk and melted vegan butter works well for me. This looks divine tho. I'm imagining it baked into the skins 🤤 🤤 🤤 #carblife

So I inherited a potato ricer when I moved into my mother's house after she passed away in 2007. I never touched it until last year because I thought "how much difference can it mske?" Oh lordy, I missed 11 years of the most luscious mashed potatoes EVER!!!!

I think if you just look for a potato that is dry and mealy (so basically not waxy) then you should be fine 😊

The potatoes look gluey or stodgy bc you cut the potatoes before cooking. Personally, i would avoid peeling until after boiling. To avoid watery mash, dry the mash before you add extra ingredients in the pot and NEVER salt at the end. It also looks a bit lumpy, but i guess that's also down to preferences. Hope that helps
