Organic, extra virgin olive oil is best used without cooking it. Smoke point is a low 300 degrees at which point it starts to turn into a trans-fat equivalent.

I wouldn’t say it’s so much corrupt as that most physicians just follow the latest evidence based recommendations, or recommended recommendations from institutions like AHA, without questioning the bigger picture and the dominant paradigms behind those recommendations eg saturated fat and high ldl are bad. Also they focus on giving medications to treat metabolic syndrome and diabetes type 2, without realizing that these conditions are caused by bad diet choices. We are not corrupt in that we don’t get paid to prescribe medications or give vaccines, though some physicians may recommend procedures from which they personally gain income, which is corruption.

Food, medical and government ....they lie all day, every day. They are just harvesting us like cattle. Get us sick with cheap toxic foods, then get us on all kinds of drugs to "fix" all the resultant health issues, then the drugs create more different health issues so more different drugs needed... I get it now, thanks to the Great Plandemic.

@davidmorrill - you retired guys and gals need to form a coalition of former health practitioners and start talking about this. Hold conventions, do REAL scientific studies. For starters, go back into the archives and reread those virology studies from the 1940s. You should start with "the private science of Louis Pasteur" by Princeton University professor Gerald Geison, who was gifted all of Pasteur's notes by Pasteur's family. Doc, you will be embarrassed at your profession when you actually see what virologists _don't_ do anymore, and they don't say it anymore because the money realized that the science wasn't there, so they encouraged the virologists to stop doing 'blinds.' The tragedy of all this is that people like myself who are in completely unrelated fields to human health and biology can go back and read those papers and see what the virologists of the 1940s were and weren't saying. The trouble in all of it is, when someone like myself learns how much fraud is in medicine that flies under the banner of science only because it's in a f_¢kin lab and people there have PhDs... we just simply quit going to the doctor. We don't go in there and try to talk reason into them. Ain't our job.

Thank you, thank you God bless for ur info . I don't have to think that it's just a degree of oppositional defiant or the like . It had become easy to tell that my care was off . 28:14

I had chronic IBS (irritable bowel syndrome (constant diarrhea and constant constipation, bloating, gas --- constant discomfort). i stopped seed oils. After about a month I started feeling better and better. Now, a year later, i HAVE NO SYMPTOMS!!! Thank you Jesse and Dr. Shanahan. Keep getting the message out!!!

Bear in mind that when you stop eating items which include seed oils you cut out a very high proportion of ultra processed foods by default and so your improvement might not be down to just the removal of seed oils but the removal of all the other harmful ingredients contained in UPFs. Glad to hear about your improvement.

I stopped using seed oils about a year ago, and now I only use EVOO as a dressing. For cooking, I use lard, tallow, and ghee. My doctor is stunned that so many of my chronic illnesses have disappeared.

Actually, I was going to comment that on this video, he didn’t do great at all with question’s. Didn’t dig deeper on her answers, just jumped right into a whole different area. He was so robotic in this one it was almost annoying.

By contrast, look at Tom Bilyeu's interviews where he frequently interrupts the expert guest's explanations by expressing his own views on the subject and then quickly changing the subject before the guest finishes to make his point on that topic.

I watch a lot of health-related videos, and in my opinion Jesse is right at the top when it comes to interviewers. He lets his guests talk, but he also chimes in to get them to clarify when necessary, and he's very good at summarizing the points a guest has made. It's also clear that he spends a lot of time preparing for each interview, which allows him to ask well focused and important questions.

Dr. Cate wrote a great book several years ago: ‘deep nutrition, while your genes need traditional food’. That’s why I was surprised she suggested certain carby vegetables, but it seems, based on the new information, it makes sense - temporarily at least. She was all meat-based, but thankfully she’s able to go with what makes sense considering what she has discovered in the meantime. Though this should only be a temporary solution; nut butters, beans, corn etc. have problems of their own.

From expert doctor (Harvard…) “Like olive oil it is high in monounsaturated fat (63%). Canola oil also contains a significant level of polyunsaturated omega-3 (ω-3) fat (9-11%), In addition, canola oil contains significant amounts of phytosterols (about 0.9% by weight) that reduce the absorption of cholesterol into the body.” “ Some of the claims: Most canola is chemically extracted using a solvent called hexane, and heat is often applied which can affect the stability of the oil’s molecules, turn it rancid, destroy the omega-3s in it, and can even create trans fats. “Cold-pressed” canola oil exists but is very expensive and hard to find.” Canola one of top four vegetable oils consumed in the US (soybean, canola, palm, corn oil) -referred to as RBD… refined, bleached, deodorized oils - bcz this describes the process by which they are manufactured. 🤭

I found a long time ago, the difference between animal fats and seed oils for one thing is; just cleaning your stove and kitchen area. You can wipe animal fats off with a paper towel. Seed oils tend to turn something like plastic and are incredibly hard to remove from anything. Can you imagine what they do to your digestive system and lungs? While cooking and breathing that stuff in without even eating it.

Be reassured that your digestive juices are very powerful and can digest seed oils without any problems. The body is very smart🥰 By the way, I use butter for frying but mostly steam my food. Or microwave it.

Microwave is probably the worst way to heat food. It literally destroys the nutrients so you might as well eat paper. There's a reason they say "nuke" your food. Research is a good thing.

Watch the videos on how canola, etc are manufacture. These seed oils are turned into trans-fatsup tpo 20%. Oils are not broken down by stomach acids. Lipase enzymes from the pancreas break down fats into smaller units for absorption. Trans fats are still absorbed though in smaller pieces. There is a lot of research on what Trans fats do which is toxic.

​@@toni4729Bro, that is not how the chemistry in your body works. What you experience when vegetable oils harden on your stove is oxidative polymerisation. Your stomach acid does not digest oils but proteins ( the enzyme doing that is called pepsin). Fat digestion is mostly done by pancreas-lipase in the Duodenum. It cuts off the fatty acids from glycerol. These are then transported through the body via bloodstream by special transporters called "lipoproteins". And I'm sure you've heard about them, that's the LDL and HDL parameter your doctor talks about when analysing a blood-panel test. Doesn't mean they're harmless, but oxidative polymerisation is a different reaction type. There is peroxisomal fatty acid peroxidation happening in your body, but that's a different story.

Be super careful with Olive Oil ... because of the way it is collected from many small sources, then many smaller distributors to larger distributors and eventually packaged into custom retailer labels, many are diluted with seed oils for profit.

Not many. And it shouldnt be heated. That causes it to oxidize. Just use ghee lard or tallow to cook. Higger smoke points and very healthy.

I remember in the 1970's there were loads of TV ads with chefs and celebrities promoting 'low cholesterol' spray oils and margarines made from 'vegetable oil'. The claim was it was healthier and prevented heart disease.

I kept a small holding in the 70/80s and shopped at a very good local health food shop, coupled with old fashioned common sense, I eat what I consider a healthy dyett (medieval English spelling) I am still alive and kicking at 78 years old, so I must of got something right ?! I have one vice (if you want to call it that) I smoke a tobacco pipe and have done for 60 years now, (never cigarettes!!!) and get a lot of contentment from doing so!

So true. In 2018, I purchased a deep fryer, thus increasing seed oil consumption and six months later, I ended up in the ER with a DVT( deep vain thrombosis) that developed into a PE (pulmonary embolism) Almost killed me. Now I'm 80% carnivore and zero seed oils, and I lost 45 lbs. feel super good. Chuck seed oils in the weeds, it's garbage.

OMG! My dad had a fry daddy and afterwards had deep vein thrombosis, diabetes, went blind, neropothy and lost his leg and foot before he died within a year or two. I never made the connection. Thank you!

Use lard, and keep eating deep fried foods. I just eat what my ancestors did, based on my grandparents and great grandparents. Everyone in my family's past lived into their 90's, other than those who smoked (or died in WW1 & WW2 & accidents). So I will eat what they ate, and keep my fingers crossed. I'm 67 and healthy so far.

@@babsphillips8583 How old are you? If you see me a person who eats 60% carbs and how fit and healthy I am at 61 you might revise that attitude. Don't know where you live. But the U.S is a mess when it comes to the availability of fresh properly grown and harvested produce. They basically want Americans sick and dependant on those little orange pill containers to get through the day. For PROFIT. Big farmers as they call it. In Europe its a little better. The problem with carnivore is no fibre. And weather you want to accept it or not. Not everyone's colon and bowel deals with especially red meat very well. And without fibre toxins can build up from putrified meat remains over time. And trigger cancers. The uric acid in meat too can cause a breakdown of connective tissues and and cause gout, premature arthritis and osteoporosis. And then the issues with the heart are well known so I wont go into that. To put it simply. A little of all the whole food groups is good. Too much of anyone. Not so good. But people will deny this unless something bad happens to them..Its always gonna be the way. Remember Mr Atkins. What did he die of?

@@babsphillips8583 I can't agree with that. I eat 60% carbs and im 61 and in better shape that men half my age. And I eat meat twice a week. And fish once. Other than that im plant based. The name of the game Is WHOLE FOODS. Leave out the processed and deep fried foods. And you will be fine.

I an 76 and about a year and a half, I fell down our basement steps breaking 8 bones and ended up on the ICU for a week eating very little losing 37 pounds and now weigh 178 vs 209 before the acident losing most of my body 's belly fat. I have always had very high total cholesterol however my arteries are completely clear with absolutely NO plaqe.

I know quite a few people who refuse to use meat fats. Seed oils are used daily in margarine, salad dressings, cooking oils, etc. They also do not eat daily junk food. Their junk food consists of grains & so called healthy carbs. Whole grain bagels, bread, pasta, English muffins, cereals, rice & other high carb veggies such as potatoes & corn. Their sugar fix is from "wholesome grains & healthy carbs" These are the same people who are usually slim & active, yet are on statins & constantly fighting their cholesterol, chronic pain or heart health with their precious pharma doctor. I remember when these seed oils & sugar laden fat free products were pushed in the 1980s. Fast food no longer used tallow, baked goods no longer used lard. We can't even enjoy wonderful Mexican restaurants around us due to seed oils being everywhere. I was taught to read food labels from a young age. Seed oils were pushed as a blessing, when they were a curse.

Why not ask your acquaintances to investigate non-industrially processed foods and switch to millet & buckwheat ... ? I made the world's best cous-cous from millet 3 days ago and love buckwheat savory or sweet. I think we can all agree that the main thing we should eat should actually be vegetables and everything else just accompanies that ... 🍆

You have to buy single origin, cold pressed extra virgin olive oil, certified organic. Quite a few producers in California meet these parameters. Do the research. So much healthier than beef tallow and lard.

​@@marilynnishimura6999correct UNTIL you said healthier. It is still mono-unsaturated. Saturated is less prone to oxidation than poly OR mono. Hence olive oil needs to be stored in green bottle in cool conditions. Oxxidised by sunlight.

I've been telling people if I only cut one thing between sugar, carbs, and vegetable oil it would be vegetable oil. The reason being is that I've been eating very healthy and made a poor choice of food that was fried in vegetable oil. That caused my joints to hurt, my exema to flare, and I was bloated for two days.

I swapped veg oil for butter, dripping and olive oil for cooking many years ago. Finally given away all my unopened jars of 'real' mayonnaise, full of the stuff. I used to love it in sandwiches but a dash of good French mustard is even better.

I’m 70 and have been a vegetarian, since I was 16. No fish, meat or eggs, but I do eat cheese. I only use organic olive oil but never heating it. For cooking I use organic avocado oil. Seldom do I get sick and I’ve never been over weight. Your blood type has a lot to do with what kind of diet you should be on. I say that because my wife was once a vegetarian and she was constantly sick and became grossly overweight even though she didn’t over eat and was never into sugar. She tried everything and nothing worked, then she came upon this book on blood type and diet. She now eats small quantities of meat or fish and her issues were corrected.

This is such an important point, people do have idiosyncratic reactions to various foods making most generalizations difficult. You see people swearing by diets including and excluding different foods to get good results. I guess they are closing in on a few universal truths but we will still need to experiment with which foods work for us.

I signed up for a health and fitness coach. I was gobsmacked when I got my new program, eat six meals a day, as much grains as possible and extremely low fat at 40g. I got so sick my body caught fire after two days of this and I’m still recovering a week later. I’ve had to have cold showers to help calm my body down. I could not believe it! I asked if he does with women 40yo and older and he said yes! But there is just no way this has worked in a healthy way for them! I’m still trying to cancel the program but he won’t respond!

Thank you for helping me understand what is going on with me. I am trying to explain to my DOCTOR that I believe I am insulin resistant. I have been exhausted, a lot of pain in my left hip. Brain Fog etc. I am 73 years old. I told my Dr to check my heart. I have been cutting down on seed oils for about 9 months. My doctor said I had a fatty liver. On my own I did intermittent fasting for 6 months, had my blood tested, and my Dr said I didn’t have fatty liver. I was feeling great, then I was very stressed out, and went back to bad eating. I have been very exhausted. I am having my heart checked. I am trying to have my doctor check for insulin resistance.

I stopped all seed oils 8 yrs ago as well as sugar, all bread//flour,most grains. Use EVOO, EV coconut oi, and my fave- a good avocado oil, butter, ghee. Dropped my 50 excess lbs. without trying. Stopped eat out for 10-12 mos. Greatly improved my energy/health. Cravings quickly dissipated in first few days. I had to get packaged foods out of house! Out of sight! Out of reach! Dropped meds except for thyroid med. Now, closing in on 90 yrs. During this time, allowed myself to eat out but, in moderation. No breads! No junk food ever! Now eating a combo of mainly raw salads w nutritional yeast, hemp seeds, garlic/onions nuts, and seeds, eggs, red meat, 2-3 days a week, chicken, beans, Eating whole foods as organic as possible. Try for 1 month …..results are staggering. The first year I ate HUGE (variety) amounts of cruciferous veggies. Only dressing for salad was 2/3 to 1Cup Whole milk cottage cheese. Sometimes adding EVOO. Always added 2-3 fried/scrambled or boiled eggs + 1/2 C sauerkraut! (Sound ghastly I know.) top w 3 tbls Hemp seed, 1 tbls gelled Chia and grd flax. This has suited me for yrs. Main takeaway here ….STOP THE SEED OIL, SUGARS! And for awhile…..Stop the breads! You can do this! Love this Dr! I know the road I took to improve health worked for me…..which, from what i’m understanding here, is basically what i’m hearing from this well spoken doctor. Thanks Jessie! When you start reading labels, you find out the these oils are in all store bought baked goods, breads, tortillas, as well as the vast majority of sauces and condiments, pretty much all sweets, most potato chips, the list goes on. I have to be careful about pasta sauces even.

I am glad you are losing weight. I lost 22 pounds in half a year counting calories. But I got to my ideal weight. Now I am slowly gaining again. I thought it was sugar. But after this I think it's more like cookies and other processed food that has oils in it. I will cut them. I eat less of unhealthy food than before losing weight. But I still eat it.

If it's a "keto diet" with high levels of PUFAs, it's not a keto diet. Positive or negative effects of dietary adjustments take time to show results. While we're on the topic, a major point that was skipped over is that adverse health effects of overheated oils start long before they start smoking, This applies to olive oil as well as canola oil. All of these commercial cooking oils are processed for profit. We end up with trans fats, which the human body has no way of protecting itself from the cumulative resulting oxidative damage. Not that frying food is bad, just keep the temperature down --- saute to avoid premature aging.

Two more points. 1:12:18 I would not recommend high oxalate foods like nuts beans and seeds. Where we agree is that dieting to lose weight can sabotage your health. If you plateau, don't fight it. Just stick to a healthy, high fat, high protein diet. And give your body time to clear the toxic fat. Most people will not need any carbohydrates. If you do it will be apparent. And temporary.

Good point about needing carbs is only temporary while detoxing. Scientifically, it's not clear if we need carbs at all so I think many people are hanging onto carbs because of taste and variety. If a carnivore needs variety there are plenty of meats to cook up for a meal. A slice of chicken &/or turkey breast with seafoods, pork chops, wild meats, raw milk, yogurt (both if tolerable) all create a nice meal if tired of the same meats. Agree about nuts, beans and seeds, they keep one out of ketotsis by elevating our insulin. Not to mention the toxins the body must deal with. The thing is to avoid cravings for carbs. A variety of meats will help.

That is all I have picked up so far but have more to learn I see. It's awful that our systems can be so messed up and take a lot of work to figure out. @tallcedars2310 I've been watching nonstop low-carb, keto, carnivore videos for years. I've never heard that. I don't think your body knows your fat to protein ratio. The demand for either one is independent of the other as far as I can see. I would assume our need for protein is more constant than our need for fat. We will always need a certain amount of fat for the vitamins. But aside from that, it will depend on energy needs, which can vary quite a bit. Our body is always replacing itself, and there are bodily functions that require protein. But I would assume we may need a little more protein if we are exercising a lot. I believe that when our body is working properly, it knows what it wants.

I have used real butter and bacon grease for most cooking. So many recipes call for oils, and the "healthy" oils are prohibitively expensive. I am 67. I work hard, but I don't "exercise". I eat small amounts often throughout the day. I make and grow most of my food. I am healthier than many of my younger friends, and most of my peers have died.

I’m 70 diabetic female. Swim three times a week. I look ten yrs younger feel pretty good most of the time have enough energy. I’m twenty pounds overweight. I climb fifty steps daily slowly. I’m not twenty anymore but I’m ok.

In England there handing out a new diet from NHS, they told me to down load the app freshwell it’s free and was design by two doctors here. It has butter and lard ghee etc high fat very low carb no sugar take a look.

And the US Farm Bill issued by Congress every 5 years needs to reflect these changes. The FDA approvals are the symptoms of defective farm bills and lobbying. You should be asking why Congress made the common land unit layer (shows all ag participating in USDA programs) illegal to release publicly back with the 2007 Farm Bill. This is why I am making my own mayonnaise right now, nothing but crap oil and a laundry list of ingredients in most commercial brands. Going out to eat or convenience foods are both not good, the vegetable oils are cheap and prepared food or restaurant food are both most often going to be using the cheap stuff so they can make a profit.

Maybe we loose some of the polyphenols and antioxidants even if we don't create transfats. So probably cooking with it sparingly and adding cold to the meal or cooking with ghee etc.

To be fair most people producing and using them that are not big companies don't know it's harmful. We've been brainwashed to believe it's the healthiest fat possible. Still agree that it should be banned.

Organic “safe” oils should be safe, and even healthy depending on what seed oil and how much is consumed. I certainly would NEVER recommend Canola oil at all!

I have suffered from hypoglycemia my whole life....until i gave up all simple carbs grains seed oil and sugar. But the half life of pufas makes it a slow process to lose fat.

But there is one good thing. Toxins are stored in fat, so when you lose fat it releases a big toxic load as well. If it goes too fast, you get loose skin plus toxin release (eg DDT and dieldrin, causing skin to peel off - I've seen that happen. Not to me, but in someone with raw red skin needing to be coated in cream and wearing gloves. Horrific. ) So I try to remember that when my body goes a bit slowly for my liking. 🙏

When I went low carb and removed seed oils I lost weight the first year. Then not a pound the second year. But dropped two sizes. Then the weight started coming off again.

Why is protein being pulled from our muscles if we are continually eating it? Most people on keto or carnivore get way more protein than their body requires. Why would the process of gluconeogenesis not be utilizing dietary protein. It seems odd that the body would consume its own muscle mass when it is swimming in dietary protein.

3 meals a day is too much food even if youre eating clean. For thousands of years people have been eating 1 or 2 meals a day and did not suffer the way Westerners do today.

I believe you are correct ! When I stopped working, I only ate when I was hungry! Once or twice a day No take out , home cooked meals and not a lot ! Lost 3-5 lbs a month So far kept it off! No real frying, just stir fry chicken and broccoli carrots onions and Cabbage!

I can agree with you in general, but it is more fair to be a bit more specific with the addtion of the fact that our foods are being over-processed & with the additions of corn syrup & hydrogenated vegetable oils our metabolism is totally & completely messed up!

It depends what you're doing and what you're eating. If you're thinking of intermittent fasting, it depends on your goals. It is good to always keep the body confused. I would eat 5 to 7 meals until I reached early 60s, but I was very active. Regarding to our ancestors perhaps eating once or twice a day, the quality of food was so much better at that time, too.

I switched to carnivore a few weeks ago, just meat/fish/poultry, eggs and dairy. I can no longer manage three meals a day. If I have breakfast I won’t want lunch, I will eat a small dinner and then I won’t need breakfast the next day. I’m skipping every other meal now because I’m still full. No snack cravings anymore. No sugar cravings, no carb headaches, no gas or digestive complaints anymore.

Just fantastic. Will watch again, and likely again. So much truth here. She's the (wo) man! I will say I was unaware of the Kevin Hall study. However, I have and am currently building muscle on a truly ketogenic diet (very high fat, no industrial PUFAs) so I'd like to know the exact details of the study. I workout fasted, eat twice a day, very high fat, 130-150g of protein, cycle in carbs every few days, but always maintain under 50 carbs. I am very lean and seem to only put on muscle, no fat. Anyway this is all so fascinating 🔥

I don’t think that will happen, as these oils are cheap. As a treat, I sometimes buy fish and chips from a gluten free fish shop, I often feel sick after eating them. Its not that I’ve been glutened I trust the batter, it’s the oil they’re cooked in.

One of the keto people said if you take vitamin E when you eat seed oils it helps. I can't vouch for that but sometimes we DO need to go to, say, a pub lunch - and if I can see the kitchen I often see a squeeze bottle of oil that they squirt on steak before grilling. But I don't want to make a giant fuss and be a pain in the A. So I ask for cooking in butter if possible, and take a vitamin E capsule in case it does actually help, and remind myself that it's just one occasion, chill out about it. 😏

I now have so much more energy on carnivore! (Coming up to 4 years) Halfway through the video i was disapointed to see her say keep carbs for energy. SIGH. "Why take the risk" and " we need 3 meals a day". Any minute shell say we need fiber. Oh well. She knows her oils, but seems to have some cutout points. Take the good explanations about oil and ignore the pro-carb thing. IMHO. Carnivore builds muscle, melts fat. It really doesnt cause you to burn your muscle. And it abolishes generalized inflammation. Again, just my N=1. I think she's out-clevered herself and is over-thinking. The omega 3 "explanation" seemed a bit of waffle. The clarity she showed about PUFAs fell away. Like she's still trying to think it out. Suddenly, after leaving omega3, she magically got her certainty back. Then got confused again when rehearing it again in "teacher" mode on the whiteboard. So for me, double red flag - she is not across omega 3, but is rationalizing.

But the context was on pufa overload, when your body is having trouble converting fat to energy. I have been in that state, complete with reactive hypoglycemia. As I get better, I have fewer sugar cravings. She wasn't saying carbs for energy for EVERYONE ALL THE TIME

I noticed everything you stated and I agree. There are holes in her explanations outside of her scope of seed oil knowledge. I learned some new things from her in this vid, but the idea that, in the context of ketosis, we burn/waste muscle if we're dealing with metabolic disorder is dubious in any dietary context (with adequate meat).

I stopped buying and using vegetable oil 10 years ago. Why would you need it? What is it used for? I changed my palate and don't fry anything. If it can't be steamed, grilled, boiled or air-fried, I DON'T EAT IT. I ate a donut once in my life and almost threw up. I take a spoon of sugar in tea or coffee, but you can chase me with cakes and confectionary.

Very interesting interview. She speaks about the brain, pancreas and insulin resistance and how the brain controls fasting blood glucose number depending on which metabolic state one's body is in. Majority of other scientists call this dawn phenomenon and the body preparing us for the day. Also, how insulin resistance starts in the liver, (I sure Ben Bikman would disagree with her). Anyhow, I think some of her hypothesis sound realistic and should be investigated by the scientific community. I noticed many of the current KZfaq scientists/doctors/influencers catch a bone and run with it (basically they all use the same scientific papers and report the same science) without investigating other possibilities. She connected a lot of dots for me between PUFA and Diabetes. I wish some podcaster would do a panel discussion where theories are discussed and inaccurate theories are possibly debunked. Lastly, but certainly not least, Jesse thanks for the recaps after her information. It really helps.
