Hot Chocolate & Halva Pudding From Benjamina Ebuehi
PREP TIME: 15 minutes
COOK TIME: 25 minutes
SERVES: 10 to 12 servings (for fewer servings, see recipe notes)
INGREDIENTS
Cake
1 cup (125 grams) all-purpose flour
2/3 cup (150 grams) light brown sugar
1 teaspoon baking powder
1/4 cup (20 grams) cocoa powder
1/2 teaspoon flaky sea salt
1/2 cup (120 milliliters) milk
1 large egg
1/3 cup (80 grams) unsalted butter, melted
1 teaspoon vanilla extract
1/2 cup (150 grams) roughly chopped plain or vanilla halva
1/2 cup (75 grams) dark chocolate chips, or roughly chopped chocolate
Tahini, for swirling (optional)
Sauce
1/4 cup (20 grams) cocoa powder
2/3 cup (150 grams) light brown sugar
1 cup (250 milliliters) boiling water
1 teaspoon espresso powder (we recommend Medaglia d’Oro brand)
Vanilla ice cream, for serving (optional)

There's an Australian (and maybe British?) dessert called a self-saucing chocolate pudding that uses the same pouring technique. It's our "quick weeknight dessert" recipe since it's so easy to make and hard to mess up.

Love this!!! In Quebec, we have a similar traditional recipe where we use a white cake and brown sugar syrup and call it « unemployed person’s pudding « ( pudding chômeur).😀

I've been using a recipe like this for years - my mother called it hot fudge cake and my brothers and I really looked forward to days when Mom decided to have dessert after dinner. I've made it for my own kids and they love it too. Pretty much identical to this except for the halvah and tahini, so I'm eager to try this version!

My Mom made this cake a lot in the 70's. I like this updated version. Yay I have an excuse to go to the neighborhood Middle Eastern Grocery and get some Halva! I might have sweetened the tahini slightly so it wasn't completely different in terms of sweetness from the cake ingredients and the Halva. Otherwise going to make it as shown.

Awesome! I actually picked up Bejamina's book a few weeks ago. So many interesting flavor combinations! Definitely will be going back to this book over and over again.

I suspect the slight piquance of strawberries would well compliment the sesame. I think a bit of fresh ginger juice into the sauce might prove a welcome addition, as well, as it cooks down mild for just a gentle flavor enhancement that I think would round out the sesame with some nice additional body.

I've been making a fudge pudding cake recipe from my mother's Betty Crocker cookbook from the 50's that uses the same process. This combo sounds like a great update.

I was thinking of the same as I watched but I found mine in my grandmother’s 1951 Fanny Farmer, called “Denver Chocolate Pudding.” It must have been a thing in the 50’s. This version looks like a great update. I make my own tahini so I can’t wait to try it out. Yum!!

I absolutely loved this cake! I actually really don't like halva on its own but it played together so well with the other flavours here! I served mine with a coffee whipped cream!

This is the same idea to a Chocoflan in that you put something with a light density over something with a thicker density and then they magically (scientifically) switch places!

This looks delicious! What is a good flavor substitute for the halva/tahini? (for those of us who are allergic to sesame)

Peanut butter maybe. In the former soviet country I'm from they sold peanut butter halva when I was a kid, not sesame one. Several different variations of it too. There was a raisin one and a cocoa one at least. Having tried sesame halva as an adult, I'd still go back to the peanut butter one. Interestingly enough, food52 has a blog post about making peanut butter halva from about a year ago! Russians also make halva with sunflower seeds. So there are definitely options! Although flavour and texture wise the peanutbutter halva is closer than the sunflower seed one.

In Australia we call them Self Saucing Puddings. To me nothing new about this been around for generations. If you are young tho and your mum didn’t cook then probably new to you.

As a young-ish person (born in the 21st rather than 20th century at least) it was definitely in our woman's weekly cookbooks growing up. I don't remember ever making it, but chocolate pudding wasn't a popular go anyway, so that could have been why.
