No cinnamon, no “apple pie spice” BS. THANK YOU SO MUCH! Just pure apple flavor, complemented by a classic vanilla bean-flecked custard, encased within possibly the easiest flaky pastry dough I’ve ever seen, and I loved the technique of using the bench scraper - I use my scraper so often! - to make thin slices of butter: you turn the science of baking into an almost improvisational art! I never liked apple pie American style, with cold ice cream melting on it, although it’s somewhat more interesting with sharp cheddar on top. But this is not too sweet, not cloying, not something that will stick to the roof of my mouth. Brava!

unsure if anyone has said this but thank you for including people literally in different climates across the world. it's harder for people not in the states to follow other recipies bc of temperature control but Mandy's recipies are so versatile - they could be followed anywhere! really appreciate it!

I had some leftover homemade Rough Puff Pastry that I need to use and I just made this! So incredibly delicious. The most perfect recipe for staying cozy inside during snowy days. 🤍

I just made this it was really tasty and stunning to look at. I will make it again, and try harder not to overwork the dough, and add less sugar and lemon juice to apples. Also think some lemon zest would go well in the custard.

Your puff pastry method is known as the English method. I first saw it by Sid the Baker, a heavy set middle aged Englishman with a thick Yorkshire accent. He used 100% butter in terms of baker's percentage. It's nice to see you've made a nice flaky version with half the butter.

Is there a huge difference between using a high-quality vanilla bean paste and the vanilla bean? Looks and sounds super delish biting into it... this is a must make.

Hi Mandy … I just found your channel and love it ,how you exlplain the process is very thorough. Thanks. I just made this pie but it’s not as perfect as yours , the layers aren’t flaky enough . i think my dough was to soft . Definitely i will try again. Can you give the measurement of the flour in gram instead of in cup ? Btw i dont have oven that have lower and upper heat turned on at the same time, does that give an effect in baking process?

This looks amazing and I'd really like to try this! But what if my oven doesn't have top and bottom heat? What temperature should I use when baking it in an convection oven?

A good general rule is to lower the recommended temp by 25 degrees when using a convection oven (so try 400 F here). Ovens vary, though, and it can still cook faster than normal ovens, so keep an eye on it toward the end of the cook time.

In the description there’s a link to her website for the chocolate & matcha version & it has the measurements in weight. Idk why food52 doesn’t have them listed that way on their website

So the version on her website with the chocolate version has the measurements in weight & volume I have no idea why the food52 version doesn’t but I’m just going to follow her actual blog because I hate using volume when baking.

I have no idea why these people(as in Americans in majority) still use plastic wraps for absolutely no reason. If you stir that custard, the skin will dissolve. This is wastefil and inconsiderate. I will definately try the desert though, thanks.

i didnt think that at all, sometimes you can perceive an attitude like that and it isnt how the person is really feeling, someone can be a really nice person but come off as the opposite because of their tone which they might not even be thinking of, i thought she seemed friendly and interested in what she was doing

To me she just sounds unprepared. She would do well to work on her presentation skills. Tons of "ums" and pauses. Sounds like an amazing recipe tho.

I think a lot of her tone comes from speaking English as a second (or third or fourth) language. Intonation changes from language to language.
