You gatta remember that Luffy never mentioned Sabo or Ace. The only reason he's mentioned Ace is because Ace physically showed up. The way Luffy is, he probably would never have mentioned either of them unless they were there or if someone were to ask him directly if he had any family. But since no one asked, he never felt the need to say.

Luffy is not someone who talks about his past and himself to anyone, even Ace was proud and gossiping about his little brother Luffy and that he was raised with bandits and knows Makino, and Sabo when he regained his memory he told Koala and maybe Dragon about his relationship with Luffy and maybe about his childhood, Luffy is the person who Focuses on his present and himself and does not care about his relationships and his past Shanks also has this trait, because his crew were surprised that he talked about the scar on his eye to Ace. They both seem friendly and full of life, but they are mysterious about thier past

Yeah, Luffy doesn't really talk about the past much. Kinda like when we met Ace; Luffy had never really talked about him before; no one really asked either though.

Ace's tattoo said ASCE, with the S crossed out. There was a cover page (chapter 596, during this flashback arc) showing the three of them grown up where the tattoo just said ACE, so it seems likely that the S is to remember his brother.
