After reading the book The Help for the 5th or 6th time I figured it was time to give Minny Jacksons cooking a try. She is said to be the best cook in Jackson, Mississippi and I wanted a chance to try.
The book and the movie are both amazing, but they never mention Minnys Caramel Cake in the movie....I suppose her special pie was that much more interesting. But my stomach was set on trying caramel cake and hopefully this is what Kathryn Stockett had in mind.
*Hey ya'll!! So the amount of cake flour I mentioned in the video is incorrect, it's 2 cups of flour not 1.5 cups!!
Here is the recipe I used:
Buttermilk Cake
1.5 Sticks Butter
1.5 c. Granulated Sugar
4 Eggs
1 T. Vanilla Extract
2 c. Cake Flour
2.5 t. Baking Powder
1/2 t. Salt
1 c. Buttermilk
Caramel Icing
1.5 Sticks Butter
2 c. Granulated Sugar
12 oz. Evaporated Milk
1 t. Vanilla Extract
1 T. All-purpose Flour
Pinch of Salt
-Just follow the steps in my video and enjoy!! :-).

If you dip your cake spreader in water while spreading the icing it will be easier to spread. Smoother outcome and easier to cover holes.

FYI, the creaming step should take at least 4-5 minutes and the mixture will be light and fluffy. (like frosting almost) This step is crucial for a successful outcome.

In the video you say 1 1/2 cups cake flour but in the description box it says 2 cups. Which is it? Thanx for your help And lemme just say you did a terrific job. I hope mine turns out as gorgeous as yours 👍👍😋😋💕💕

@@denisesmith9571 Hi!! I definitely always have butter at room temperature, I don’t always find it necessary to have my eggs and buttermilk at room temperature. As long as your creaming your butter with your other ingredients thoroughly you should be fine! 😊

Oh no! Did you let it cool completely? How was the flavor? Sometimes when I have cakes that do that I let it chill in the refrigerator before icing or trimming it. 🙃

Is a candy thermometer really needed or can you just eye ball it when it gets to that amber color that you're looking for?

Why flour in the caramel icing recipe? Is that a thickening agent?

Gayle Martin Most of the recipes I researched and tested had flour in it. It acts as a thickening agent and I find that it binds it really well too.

I really like the flour addition. I have always used powder sugar to make the mixture thicker, it works well but it is also an additional three cups of sugar…learn something new everyday. LOL

This looks so delish l would love a piece. But being a diabetic that might Not be a good idea .😩😏 And l have never had caramel cake before but it's looks like a great recipe..🎂 Thanks

Heya!! It’s a fairly strait forward cake. It’s just a matter of keeping an eye on it and taking your time. Try not to rush anything and take it step by step. Let me know how it turns out!! ❤️

Thanks for sharing the video! For the frosting, you said 1.5TBS of flour, but in the recipe you have only 1TBS of flour. I see the correction for the cake batter but not for the frosting. Is it 1TBS or 1.5TBS ? Thanks!

I saw this recipe a while back. The frosting looked firmer than a lot of other recipes which seemed to have a thinner, glaze-like consistency. Does the frosting stay soft or does it firm up like caramel candy?

milkandhoney84 Hey!! Yeah, most of the recipes I researched before making this one were more of a glaze that was poured over the cake. But I wanted something that was spreadable and workable. It does firm up, but doesn’t get super stiff like a caramel candy. When at room temperature it’s more like a thick fudge frosting! Nom-nom! 😊

@milkandhoney84 I've noticed the same thing online as well, with the caramel icing being more of a pourable glaze. I prefer thick icing👍👍

the video called for a lot more sugar than the recipe below the frosting. My cake came out great, but the frosting more like Carmel candy than frosting. Why

I made this cake and it tastes good but was very thin. Is 1 1/2 cups of flour correct? Your cake was twice the height of mine. I bake a lot of cakes. I just wonder what happened!

Hey!! So I retested the recipe and you are absolutely right, bump up the cake flour to 2 cups. Funny, I've had this video up for a couple years and you're the first one to mention it!! Thank you!

@@lindahines9380 I have never tried self-rising flour with the particular recipe. If you do try I would just omit the baking powder in the recipe as it already contains a leavening agent…I’m very curious about it now

FoodShowFan It was delicious, pretty sweet though, considering the cake is basically covered in caramel sauce as the frosting. But I’m a frosting man! 😊

I haven’t made this particular recipe with dark brown sugar, however I have made caramels with brown sugar in the past and find that I have to let it cook a little longer because of the added moisture that in brown sugar. If you try it let me know! :-)

Did it really take 7 to 10 minutes to get the icing cooled to a spreadable consistency while beating?

It took just about 7 minutes, but you can certainly use the icing softer if you prefer. I just enjoy a thicker icing that holds it shape while I frost. :-)

@@kevinfutamachi4052 I agree with wanting thicker icing. It took longer than 7 minutes to get it to a thick icing. Once it reached soft ball temperature, I poured it in the mixing bowl and started mixing. It was not cool enough to do anything in 7 minutes. Did you cool yours prior to mixing?

That’s not how they do in Mississippi y’all you poor the Carmel over the cake at a little higher temp than Luke warm it will thicken up on its own

Heya, I definitely feel ya on that! I tried it that way and it was delicious, but I’m a little OCD and needed to be able to control the frosting by spreading it, lol.
