It is composed with a crunchy honey meringue trapping a vanilla frozen parfait and a fresh orange compote, a caramel honey (I called it "Caramiel" ☺️) a mascarpone honey mousse, an orange cremeux, and two adorable chocolate bees!

I love how he was able to bring the candy to a boil in the cup of his hand and freeze it in the other. This is just pure magical amazing and inspiring I am going to sign up for Hogwarts cooking school this summer.

Das ist eine Wespe und keine Biene. Bienen habe braunes Fell mit bisschen Gelb. Wespen sind gelb, schwarz gestreift.

I’m one of those people who love seeing the amount of work and dedication in these fancy and high end places and really applaud the chefs and understand that the reason the prices are high are because of the years or decades of practice they went through to get to this. But I’m also one of those people who see the menu and go “that’s too frikin expensive for a small amount of food” xD

Honestly it's amazing no doubt, but I'd rather have it the ice cream and chocolate and what not just mushed together into a bowl then pay for the presentation ngl Like I just don't get why it's even an option and why anyone would buy it without a special occasion or anything

I hope he enjoyed making it as much as I enjoyed watching. I don’t feel a consumer would savor the dish as much as it is deserved. He inspires me to want to do something like this, perhaps mine would appear lopsided and amateur but I’m sure it would be delicious.
