Asian inspiration for one of my favorite pastry creations #schoolofchocolate, it is composed with a crunchy matcha sweet dough, a light Japanese roll matcha sponge, a matcha cremeux, a yuzu cremeux, a yuzu jelly and a green tea matcha mousse.
The flower is crafted out of 100% white chocolate!

As much as I love your chocolate sculptures, it's these composed desserts that wow me the most. Not only are they visually stunning, the thought you put into the combination of flavours and textures always blows me away. They seem like they would be such a pleasure to eat!

Masha-Allah👏👏💕💕.So much hard work....but the result is glorious..i wish i could eat the beautiful cake with you sir, with a cup of tea in a place with bamboo and rose garden,in evening -when the sun become reddish-yellow, slightly air flow not very cold, not very warm and a ancient lamp on the table....🌺💕💕💕💕

What a wonderful piece. The flower had every bit of painstaking detail required for an amazing finished product. Creating each petal on film. Spraying each one to have that colour gape that a lily pond lily has. Wow Amoury it's amazing. Such details.

I really love chocolate but I loved watching you make this lily pad. When you make things that aren't chocolate you seem to enjoy it that much more. Keep going outside of the box, I enjoy seeing these new adventures!
