Bra, Piedmont, Italy, is the home of a very special sausage: Salsiccia di Bra, which is eaten raw. The reason for that is that it's made with a much leaner meat than what sausages are usually made of. It's made almost entirely of veal, which is very prevalent in this area. I met father and son Davide and Alberto Tibaldi who run one of the only nine butcher shops in Bra making this sausage to see how it’s prepared.
