It's already a fusion. You can make your own pansit fusion and still call it more than pansit 🤷‍♂️ if you want more than just the common filipino food, try bopis, adobong atay and the other tomato-based food

I get so excited when Filipinos become successful in their endeavors outside the Philippines. Filipino food is so underrated compared to Thai, Vietnamese or other Southeast Asian dishes. I just want to correct Spook&Pork on what they said about Adobo. Adobo is a cooking method, not a dish. The same way Biryani and Tandoor are cooking methods. Adobo is defined by the presence of oil/fat, protein, salt, and vinegar. The traditional Adobo, or like the precolonial adobo, is called Adobong Puti (White Adobo), in which Lard, pork chunks, and salt are layered in a pot, and submerged in water and vinegar and cooked. The widespread use of soy sauce only allowed the adobo most people commonly see, to become more prevalent in past 100 years. Just like any cooking method, stripping it down to the essence, and doing your variation is in fact valid enough to call it Adobo.

I’m going to try this place when I visit L.A. again. As a half filipino that grew up in the Philippines, I’m honestly tired of eating the usual filipino dishes. It’s just so common there. However with the way these guys plate and prepare their filipino dishes, I’m very excited to give it another try. Thanks for sharing this story with everyone. Mabuhay!

I absolutely love the tips the Filipino chefs gave, especially their twists to our local dishes like Salpicao. I cook because I love it, and their tips on how to render a pork belly into perfection and mushrooms should've cook in high heat helped me so much! You also inspired me to broaden my horizons on exploring cuisines that I am unfamiliar with!

@@onlywheretoeat You're welcome! Well deserved. I had a very similar concept planned for youtube but never acted on it. I live in Houston Texas. We've got an amazing food scene here. Hope you'll visit! Our best Filipino concept restaurant here is no where near the level of Spoon & Pork but it's called Be More Pacific. We have an Indian Portuguese restaurant called DaGama Canteen that's awesome! Also lot's of Vietnamese Crawfish, even Crawfish Pho! And there's Musaafer. All I can say is Google that one. It's astonishing! And many more. That's just to name a few. Yeah you guys got that Chef's Table vibe. Also love Ugly Delicious. You're tracking on that Caliber. Let me know if I can be of assistance. I just want to correct some things. There is no “official” national dish in the Philippines. But many Filipinos consider Adobo, Sinigang or Lechon as the unofficial national dishes of our country. Also, the “Si” in Tapsilog means “Sinangag” or fried rice in English, not “Silog” as mentioned. I’ll definitely go to this restaurant if I’ll visit LA. The food looks amazing!

no you're wrong. adobo is the national dish because of its basic ingredients that every filipino can cook with whereas lechon and sinigang is not that easy to cook and ingredients are harder also to find so not all filipino can afford to cook lechon or sinigang. Pag sinabi mo kasng national dish, dapat alam tong lutuin ng isang pangkaraniwan na tao sa bansang un. if you ask a filipino to cook lechon, hindi niya alam papaaano gawin pero pag adobo, matic na yan alam nila. but lechon sinigang and karekare are as popular as with adobo.

@@09187059240 As I mentioned, there is no “official” National Dish yet. For you it’s Adobo, but some people considers Sinigang or Lechon as their National Dish. Some experts even argue that both Adobo and Lechon shouldn’t be the Official National Dish because they both originated from Spain unlike Sinigang.

That was an excellent pork belly question. I’ve always had trouble getting that nice crispy edge on my pork bellys, it ends up way too hard most of the time. Great video!

to achieve crispy skin is to cook it slowly. If you want it an easier way to soften the skin by slow cook it thru boiling and let it simmer to low heat add some aromatics, seasoning and spices. After 30 mins to an hr let it rest/dry up. It's ready to be deep fried. The tricky part is the timing. Good thing about this method if u made a big batch, you can store the rest in the fridge then fry it when you want to.

The thing about filipino food is there are many variety and versions depending on the place in Philippines. That's why no Adobo or other foods taste the same. One minor downside is it's a hit or miss

Yes the food here is authentic and creative. It’s pretty good down to the grilled eggplant. It’s a high end version of Filipino food. Luv the pork adobo. I basically order takeout almost everyday from them. 👏🏽👏🏽👏🏽🤟🏽

Filipino dish is underrated because simply most west preferred spicy foods thats why most people goes to Thailand, Singapore, Malaysia, etc. While Filipino foods are more on salty and sweet side on it , if you search for spicy foods theres only few location where can get them but its not totally spicy base on western people taste buds but for Filipino it's spicy already to them.

The thing with Filipino cuisine is that it is highly customizable and if you want to be on the spicy side, you can umph that side and the dish would be even better...AND YOU CAN. That's the thing with Filipino food, you can adjust and if you know the perfect condiment to use, it would not ruin the flavor profile. Westerners have misunderstood this cuisine for decades and that's their loss. Pity.
