These are the cupcakes we made when a TV crew came and did a feature on us back in February. The batter is made jet black with black cocoa powder and there's also a generous amount of chocolate chips to enjoy! We used white chocolate and freeze-dried strawberries for the simple decorations. If given some time, the dried strawberries won't fall off of the cupcakes even without the chocolate. These cupcakes make great gifts.
Recipe
1.Sift together 135g cake flour, 10g black cocoa powder, 5g cocoa powder, and 4g baking powder.
2. Knead 60g room-temperature, unsalted butter until it is creamy.
3. Add 60g sugar in two incremental steps, mixing in between until it becomes white.
4. Mix in one beaten egg in two incremental steps.
5. Add and mix in a pinch of salt.
6. Add the dry ingredients from step 1 as well as 60cc of milk, alternating adding the ingredients. Mix each time you add more ingredients. (Add the dry ingredients in three steps, the milk in two steps) After adding the last bit of dry ingredients, add 60g chocolate chips while the batter is still a bit powdery. Mix.
7. Put the batter into cupcake cups.
8. Bake for 30 minutes in an oven preheated to 180 degrees Celsius.
9. Cool.
10. Decorate with white chocolate and freeze-dried strawberries.
11. Finished.
