What was the name of the Brewery that the guy asked about? Rebecca Newman mentioned that they are measuring acid levels and are really good at it. I would like to get more information.

Charles Bamforth is a great place to start, he was an editor for the the 1st (and only) edition of a text called "Brewing Microbiology." Quite expensive. Also the program at UC Davis taught by Dr. Bamforth provides a reading list that will carry over nicely for an avid home brewer, if you have some background in chemistry and physics. To find this (since I cannot provide a link) try searching "detailed course information UC Davis extension brewing" and it should come up as a pdf with a document that includes a textbook list for you to be able to see an idea of what Bamforth himself teaches.

The two main presenters seem highly contentious, but they were civil. The man, forget his name, seems more contentious. But at least they were both relatively civil. Either way, they both seemed to dislike each other. That was pretty obvious.
