💸PRICE: 3.00 USD for 3.5kg
🇺🇿 SHEEP STOMACH PICKLE: Sheep stomach, carrots, cucumbers, bell peppers, Korean chili & salt.
💸PRICE: $5.00 USD p/kg
🇺🇿 SAMOSAS: Mince mutton, dough & potatoes.
💸PRICE: 3000 soms / $2.50 USD

🇺🇿 STIR-FRIED ORGANS: Cut Dumba and slice kidney, heart and liver. Fry the dumba to render the fat. In the same pot, fry lung, meat heart, heart and kidney. Add salt then the testicles. Season with cumin seeds and cover for 10-15 min, then add water. Garnish with red onions, salad and basil.
🇺🇿 RAW DUMBA SASHIMI: Serve raw dumba with chili salt.
🇺🇿 SHEEP TESTICLES KEBAB: Chop the testicles and season with chili salt. Let it marinate. Place the testicles on the juniper wood skewers. Grill them for 15 minutes.
🇺🇿 LIVER & WALNUT WRAPPED IN CAUL FAT: Spread the caul fat, cut into smaller squares. Cut the liver in half. Add chili salt on the caul fat and on the liver. Wrap the liver in caul fat. Chop the walnuts. Stuff the walnuts between the liver and grill it for 20 minutes.
🇺🇿 QUAIL EGGS WRAPPED IN CAUL FAT: Add salt on the caul fat. Wrap the quail egg with shell with the caul fat. Place wrapped eggs in foil and hgrill it for 15 minutes.
🇺🇿 PUMPKIN DISH: Cut the sheep neck, front legs, ribs into fine pieces. Chop the ribs in half.
Cut the pumpkin open and remove the seeds. Add homemade butter and honey in the pumpkin
Boil the potatoes for 10 minutes. Deep fry the meat for 10 minutes. Place the pumpkin in the middle of the kazan, then add cooked potatoes, water and cover it up. Let it cook for 1.5 hours.
Take the pumpkin out and cook for another 1 hour. Garnish with quail eggs, leeks and parsley.

Don't forget that Behruz is Muslim so he would be very limited to what he can eat in Vietnam. Even veggie dishes are often cooked in some meat fat which most likely isn't Halal.

Im dutch, I know absolutely nothing about Uzbekistan but this has been the most delicious looking food I’ve ever seen in my life. And with food I mean absolutely everything I’ve seen in these episodes even the milk filled lungs looked amazing. I hope to eat some dishes from Uzbekistan one day!

@@Floralsickness The place is even better than what the video is showing. There are a lot of historical sites to explore. Good hotels and you won't have problems dealing with scammers and beggars outside But of course like any other place you might be unlucky and stumble to a bad experience

We also cook the liver wrapped in the netvet here in South Africa. We call it Skilpadjies which would directly translate to small turtles because of the pattern 🐢

I am in love with Uzbekistan! The market you visited was amazing, 'DEHQON MARKAZIY BOZORI' all words are used in Urdu language here in Pakistan, what I understand is that this 'Bazar' is the 'Central' selling place for the 'Growers who lived in villages'! I am also amazed at the variety of flatbread sold in the Bazar. The explanation by Hamza is great, I like the smiling faces all around!!! Thanx!

I understood more words. We use a lot of them where I live - we use kazan to cook, but also we make alcohol in large kazans, djiger is also very commonly used, especially as a joke ahem... "Stop hugging him so hard, you'll make his djiger come out!" Even though my country is pretty far away, it is surprising how I can find a lot of common words.

So many similarities in language and culture with Persian culture, yet so unique in its own right still. I love this channel, food is such a beautiful way to celebrate different places' unique aspects while also embracing commonalities.

@@amiroz1721 I think historically the Uzbek people spent more time under the cosmopolitan Persian empire probably than independent. I think the Uzbek shaybanis were the only dynasty to conquer Persian lands where the Persian-Turkic-Mongol Timurid empire had control of those lands beforehand. But history is amazing like that, we are all more connected across our current national borders than we think.

@@ninacee9140 This is your subjective opinion and it’s good for u ! Don't forget that Turan and Iran have always conquered each other. Today we can see predominantly Turkic-speaking peoples like Azerbaijanis, Hazaras, Turkomans, etc. living in the North of Iran. After all, Iran is a big multicultural family, not just Persians. So do the Uzbeks, a large super-ethnos that includes all three major Turkic groups such as the Oguzes, Karluks and Kipchaks. In a word, the Uzbeks are a union of 92 sedentary and nomadic clans. And we have long ago passed the stage of ethnic perception of nationality and switched to the ideological understanding of belonging. So, all that remains is to enter into conspiracy arguments which are useless. What is important is what unites us! You, as Persians, should be pleased with our shared cultural advantage over all of Asia.
