I was in NOLA last October and I've found that the people there were some of the nicest people around and the food was beyond amazing. For those planning to go, my piece of advice is to explore outside the French Quarter. Go find local dives for just as amazing food without the tourist trap prices.

The savory version you made is very similar to something we make down the bayou called a pistolette. It's basically the fried dough in more of a roll shape, and it's filled like a donut afterwards with crab and cheese or a thick crawfish etouffee filling. So good.

As someone who lived in NoLa, the line is a tourist trap. There is no MD to seat you. You just sit at any empty table (even if its still dirty) and they clean it and serve you. The line are all tourist waiting to be seated until they see a native just walk by and sit.

Since we didn't want to wait in line forever at Cafe du Monde, we started wandering and found Loretta's! I loved the beignets, but wow - the praline candy's won my heart! We bought some to eat on the way home, and some to take home, and - they didn't make it that far! Thanks for the memories - and the recipes! A fresh, hot beignets is the perfect starter for weekend! Used to give culinary bike tours here in New Orleans before the pandemic. Born & raised here. We were free to change up the restaurants however we liked, but Loretta's was my most frequent stop. The food was always amazing, her beignets the apex form of the dish, and the woman herself one of the kindest, warmest, most genuine people it was pleasure to interact with.on a daily basis. I'm glad the family is carrying on the tradition. Miss Loretta will be sorely missed.

I went to Café Du Mond during Mardi Gras many years back. Phenomenal beignets and outstanding chicory coffee. Everything in New Orleans is outstanding. A must trip in ones lifetime. Go during Mardi Gras❗❗❗
